SEARED LAMB CHOPS WITH ANCHOVIES, CAPERS AND SAGE

Seared Lamb Chops With Anchovies, Capers and Sage image

Steps:

  • Rinse the lamb chops and pat them dry. Season them with salt and pepper, and let rest for 15 minutes.
  • Over medium-high heat, warm a skillet large enough to hold all the chops in one layer. Add the oil and when it shimmers, add the anchovies and capers. Cook, stirring, until the anchovies break down, about 3 minutes.
  • Arrange the lamb chops in the skillet and fry, without moving them, until brown, about 3 minutes. Turn them over, and toss the sage leaves and pepper flakes into the pan. Cook until lamb reaches the desired doneness, about 2 minutes for medium-rare.
  • Arrange the chops on serving plates. Add the garlic to the pan and cook for 1 minute, then spoon the sauce over the lamb. Serve with the lemon wedges.

  • In a skillet, brown the lamb chops on both sides in oil; drain. Combine the orange juice, teriyaki sauce, orange zest, curry and garlic; pour over lamb. Steps:

  • Put the curry, mustard, honey, cayenne, 3 tbsp. lemon juice, vinegar, and chopped garlic in a bowl and slowly whisk in 1 cup of canola oil to make an emulsified marinade. Put the lamb in a baking dish or other vessel, pour the marinade over the lamb, and toss well to coat. Cover and refrigerate for at least 24 hours or up to 48 hours. When ready to cook and serve, prepare a grill for grilling. Remove the chops from the marinade, brushing off any marinade solids. Season the chops with salt and pepper and grill them until nicely charred and cooked through, 2 to 3 minutes per side for medium, or a bit longer for more well done. Set the chops aside to rest for 5 minutes while you prepare the mayonnaise sauce. To make aioli, put the mayonnaise, anchovies, capers, garlic, Tabasco, and lemon juice in a bowl and whisk them together. Whisk in some room-temperature water, a few drops at a time to this if desired. (This mayonnaise can be covered and refrigerated for up to 2 days). Serve sauce alongside chop and enjoy!

For Australian Lamb Chops:
1 tbsp. curry powder
3 tbsp. Dijon mustard
2 tbsp. honey
½ tsp. cayenne
4 ½ tbsp. lemon juice
1 tsp. red wine vinegar
2 tbsp. chopped garlic plus 2 small cloves garlic
1 small red onion, minced

Grilled Red Curry Lamb Chops image

Steps:

  • In a large bowl, whisk the curry paste, coconut milk, lime juice and zest. Add the lamb chops to the marinade and toss to coat. Cover and refrigerate for 1 hour. Bring to room temperature for 20 minutes, then remove the lamb from the marinade and pat dry with a paper towel. Generously sprinkle on each side with the kosher salt and pepper.
  • Preheat an outdoor grill or grill pan to medium-high.
  • Grill the lamb chops until slightly charred on one side, 3 to 4 minutes. Flip and cook for 2 to 3 minutes more for medium doneness. Remove to a platter. Sprinkle with flaky sea salt. Garnish with the lime wedges and cilantro leaves. Drizzle with olive oil and serve with the Salad.
  • Toss the arugula, walnuts, orange segments, pomegranate seeds, red onion, sliced fennel and half the fennel fronds together in a large bowl.
  • Whisk together the reserved orange juice and Dijon mustard in a small bowl. Stream in the oil and whisk until combined. Season with salt and pepper.
  • Drizzle the salad with the dressing and season with salt. Garnish with the remaining fennel fronds and serve immediately.

Sautéed Lamb Chops With Ramps, Anchovy, Capers and Olives image

Steps:

  • Season chops on both sides with salt and pepper, sprinkle with rosemary, and set aside for 15 to 20 minutes.
  • Put a large sauté pan or skillet over medium-high heat. Add olive oil and swirl to coat bottom of pan. When oil is hot, add chops in one layer, without crowding. (If necessary, use two pans or work in batches.)
  • Cook chops until nicely browned on first side, about 4 to 5 minutes. (Maintain brisk heat, but adjust if they seem to be browning too quickly.) Flip chops and cook to medium-rare, until red juices rise on surface, 2 to 3 minutes more. Remove chops to a serving platter and keep warm.
  • Return pan to stovetop over medium-high heat. Add a little olive oil if pan looks dry, then add shallot and cook until lightly browned, about 2 to 3 minutes. Add anchovies, mashing them with the back of a spoon, to combine.
  • Add chopped ramps (or garlic, if using), capers, olives and red pepper and stir to incorporate shallot mixture. Raise heat to high and add white wine. Cook rapidly until reduced by half. Add chicken broth and simmer until slightly thickened, about 5 minutes. Stir in lemon juice and zest and turn off heat.
  • Meanwhile, roughly chop reserved green ramp tops, if using, and mix with chopped parsley. Stir parsley mixture into sauce. Spoon sauce generously over lamb chops and serve.

  • Stir together capers, zest, garlic, and 1 tablespoon oil in a small bowl. Pat chops dry and season with salt. Arrange chops on a plate and spread about 2 teaspoons of caper mixture on top of each chop, pressing lightly to help adhere.

Steps:

  • Melt butter in pan, add chops, brown well on both sides (I always well cook the chops at this stage).
  • Arrange browned/cooked chops in a single layer in an oven-proof dish.
  • Add onions to remaining pan drippings, cook 1-2 minutes, remove from pan, and put on top of chops.
  • Place flour, sugar, curry, mustard and ginger in saucepan, mix well.
