Steps:
- Bring water and quinoa to boil, add broth for extra flavor, then simmer until water is gone, about 10 minutes.
- Saute garbanzo beans (chickpeas) in EVO and garlic on low in seperate frying pan.
- Once quinoa is cooked, add to frying pan with spinach, curry and salt and pepper, mix all ingredients thoroughly.
- Heat through on low for about 5 minutes, adding walnut pieces in the last few minutes.

Steps:
- Cook the quinoa following pack instructions and leave to cool.
- In a large frying pan or wok, pour in the sesame oil, onion, garlic, ginger, ground coriander and tamari and fry on a medium-high heat for 2 mins until the moisture starts to evaporate, then add 3 tbsp water. Leave to fry for 1 min more, add the pepper and fry for another 2 mins.
- Add 4 tbsp water then after 2 mins, add the green beans and 125ml water.
- After another 2 mins, add the courgette, 125ml water and leave to cook for 3 mins, then take off the heat.
- Make the dressing by putting all the ingredients in a jug and whisking until smooth. Mix the quinoa into the veg, add the dressing and mix together with the sesame seeds. Stir through the coriander to serve.

- Heat oil in a large skillet over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes.
- Pour broth into the pan and bring to a boil. Reduce heat and add curry and chile powders; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper.

- In a 12-inch rimmed saute pan heat the olive oil over medium heat. I use and love this ceramic, non-stick, non-toxic pan. Add the cooked quinoa, garbanzo beans, pepitas, curry powder, salt and pepper and stir to combine well. Allow the ingredients to lightly toast and warm through over medium to low heat for 3-5 minutes.
- Turn the burner off and stir in the green onions, parsley, cilantro, pomegranate seeds, lime juice and maple syrup. Taste and adjust seasonings if needed. If it is dry add a drizzle of olive oil.
- Enjoy immediately or allow to cool to room temperature and store in an airtight container in the refrigerator for up to five days.
