- 1. For the Crust: Grease large bowl. Whisk milk and eggs in 2-cup liquid measuring cup until combined. Using stand mixer fitted with dough hook, mix flour, sugar, yeast, and salt on medium-low speed until combined, about 5 seconds. With mixer running, slowly add milk mixture and knead until dough forms, about 1 minute. 2. With mixer still running, add butter 1 piece at a time until incorporated. Continue kneading until dough clears sides of bowl but still sticks to the bottom, 8 - 12 minutes (dough should be soft and sticky). 3. Transfer dough to greased bowl, cover with plastic wrap and let rise on counter until doubled in size, about 1 hour. Punch down dough and divide into 2 equal balls. Wrap each ball in plastic, transfer to refrigerator, and let rest for at least 1 hour or up to 24 hours. 4. Grease two dark colored 9″ round cake pans. Roll chilled doughs into 2 9″ discs on lightly floured counter. Transfer to prepared pans, pushing dough to edge of pans. Cover pans loosely with plastic and let rise on counter until puffy, about 1 hour. Adjust oven rack to middle position and heat oven to 350 degrees. 5. For the Fruit and Custard: Meanwhile, toss peaches with 2 tbls. sugar in a bowl, then transfer to colander set in sink, let sit for 25 minutes. Whisk remaining 3/4 c. sugar, egg and yolk, and salt in medium bowl until combined. Heat cream in medium saucepan over medium heat until just beginning to simmer. 6. Slowly whisk hot cream into egg mixture. Transfer cream mixture back to saucepan and cook over medium-low heat, stirring constantly, until mixture thickens and coats back of spoon, 3-5 minutes. Strain custard through fine-mesh strainer set over medium bowl. Whisk in butter and vanilla and transfer to refrigerator to cool until dough is ready. (Custard can be made up to 24 hours in advance but does not need to be fully chilled before going into crust.) 7. Leaving 1 inch border all around, press down centers of doughs with bottom of dry measuring cup to deflate and create wells for peaches and custard. Arrange peaches, evenly spaced, in circular pattern in depressed dough bottoms, avoiding border. Pour custard evenly over peaches in each pan, about 1 cup per pan (you may have a few tablespoons extra). Sprinkle with cinnamon. Bake until crusts are golden and centers jiggle slightly when shaken, 35-40 minutes, switching and rotating pans halfway through baking. Let cool completely. Remove kuchens from pans using flexible spatula. Slice and serve.

Toss to coat evenly, and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes. Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder and salt. Blend in butter with fingertips or pastry blender, until mixture resembles coarse meal. Stir in water until just combined. Remove peaches from oven, and drop spoonfuls of topping over them. Mix 3 tablespoons white sugar and 1 tablespoon cinnamon and sprinkle onto cobble. Bake until topping is golden, about 30 minutes. Makes 8-10 servings.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, salt, oil, egg and 2-1/2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Place in a greased bowl, turning once to grease top. Do not knead. Emily Elsen and Melissa Elsen, sisters who run the Four & Twenty Blackbirds bakery in Brooklyn, hail from South Dakota, where their family ran a small restaurant. Kuchen, a German cake topped with fruit that is a staple of the state's Thanksgiving tables, is central to their childhood memories of the holiday. Their recipe, topped with pears, "looks a little different than those traditionally found in local South Dakota church and community cookbooks," Melissa Elsen wrote in an email, "but it tastes like it does in my memory (with the addition of cardamom)." That cardamom, it turns out, is key to the dish's success, with citrus and savory notes that are as pleasant as they are unexpected.

- Make the dough: Warm milk to 110 degrees (or until warm to the touch), sprinkle with yeast, stir and let stand for 5 minutes until dissolved. Add butter and stir until mostly melted.
- Butter or oil a large bowl. In a second large bowl, whisk together sugar, salt and egg yolk. Add flour and stir with a wooden spoon until incorporated. Add warm milk mixture and stir until combined and dough comes together in a smooth, sticky ball, about 2 minutes. Transfer to prepared bowl, cover with plastic wrap and let rise in a warm spot until doubled in size, 2 to 3 hours. (Alternatively, dough can rise in refrigerator overnight.)
- Meanwhile, make the pastry cream: Place a fine-mesh sieve on the rim of a medium bowl. In a heavy-bottomed medium saucepan, blend cream cheese and sugar until smooth. Whisk in flour, egg, milk, salt, cardamom pods and anise seed. Cook over medium heat, whisking occasionally, until mixture starts to thicken, then whisk constantly until it starts to boil. Continue cooking, whisking constantly, for 2 more minutes, then immediately pour mixture into fine-mesh sieve. Use a spatula to push it through sieve and into bowl. Let cool, stirring occasionally, for 5 minutes, then stir in butter and vanilla. Press plastic wrap directly on surface of pastry cream and refrigerate until ready to use.
- Make the streusel: In a small bowl, whisk together flour, sugar, brown sugar, cinnamon and salt. Add butter pieces and toss to coat. Use fingertips to rub butter into dry ingredients until pea-size lumps form. Cover and refrigerate until ready to use.
- Roll out dough: Butter two 9-inch pie plates. Turn dough out onto a lightly floured work surface and with floured hands gently knead it into a log. Divide log in half and flatten into discs. With a lightly floured rolling pin, roll each disc into an 8-inch round. Transfer rounds to pie plates, pressing dough to edges of pan and just slightly up sides. Let rise for about 20 minutes while you prep fruit.
- Set a rack in the middle of the oven and heat to 350 degrees. Peel and core pears, then slice them lengthwise into 1/4-inch-thick slices and place in a medium bowl. Sprinkle with sugar and apple cider vinegar or lemon juice and toss to coat.
- Assemble the kuchens: Spread about 1/4 cup pastry cream on bottom of each kuchen, stopping 1/2 inch from edge of dough, then arrange pear slices in an overlapping circular pattern on top. Divide remaining pastry cream between kuchens and carefully spread it evenly over pears. Sprinkle streusel over both and bake in center of oven until dough is light golden brown, 20 to 25 minutes. (If your oven can't accommodate both kuchens, refrigerate one while the other bakes.) Serve warm or at room temperature. Baked kuchens can be wrapped tightly in plastic wrap, then foil, and frozen up to 1 month. Rewarm before serving.

- In a large mixing bowl, stir together 1 3/4 cup of all-purpose flour and the yeast. In a medium saucepan heat and stir milk, sugar, butter, and salt just until warm (about 110-degrees Fahrenheit). Add milk mixture to dry mixture along with the eggs and egg yolk. Beat with an electric mixer on low for 30 seconds, scraping down the sides. Beat on high for 3 minutes. Using a wooden spoon, stir in as much of the remaining 1/2 cup all-purpose flour and the 1 cup of whole wheat flour as you can.
- Turn the dough out onto a lightly floured counter. Knead in enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 – 5 minutes total). Shape the dough into a ball. Place dough in a lightly greased bowl, turning once to grease the top. Cover; let rise in a warm place till double in size (about 1 hour).
- Gently deflate/punch the dough down. Divide the dough in half. Refrigerate or freeze one half of dough. Place the other dough ball into a greased 9.5-inch glass pie plate and let rest for 10 minutes. Then gently stretch it to fit the plate, molding it up the sides of the plate into a ‘pie crust.’ (It won’t be a beautiful crust, and it may not even go up the sides very well; that’s okay.) Cover and let rise for 30 minutes.
- Meanwhile, for the filling, in a medium saucepan, lightly beat eggs with a fork. Stir in sugar, flour, and nutmeg. Gradually stir in milk. Cook over medium heat for about 4 minutes until the sugar is dissolved and mixture is hot (about 140-degrees F), stir in peaches and cook for about 2 minutes more to warm peaches. Stir in vanilla. Pour milk mixture into the prepared crust (after it’s raised 30 minutes,) it’s fine if some of the filling seeps under the crust. Bake in a 350-degree oven for 20-25 minutes until set. The very center of the kuchen will still be slightly liquid-y; this is okay as the kuchen will continue to firm from residual heat after removed from the oven. Cool completely and serve at room temperature, topped with additional freshly grated nutmeg.
