Steps:

  • Preheat oven to 325 degrees F. Line 13x9-inch baking pan with foil; lightly grease.
  • Heat morsels, sugar, butter and water in medium saucepan over low heat, stirring constantly, until chocolate and butter are melted. Remove from heat. Stir in eggs, one at a time, until blended. Stir in vanilla extract. Add flour and salt; stir well. Pour into prepared baking pan.
  • Bake for 30 to 35 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Holding sides of foil, lift brownie from pan to cutting board. Carefully remove foil and return brownie to board. Cut away 1/4-inch from each side. Cut out 15 cakes with cookie cutter, twisting gently to remove. For easier cutting, cutter can be wiped clean and/or greased lightly between cuttings. Scraps can be saved for another use, such as an ice cream topping, milkshakes or a snack. Serve cakes with Dark Chocolate Ganache.
  • For Dark Chocolate Ganache: Heat cream in 2-cup microwave-safe glass measure or small bowl on high (100%) power for 30 to 40 seconds. Slowly add morsels. Cover with plastic wrap and let stand for 5 minutes. Stir well. Refrigerate any remaining ganache.

  • Place the chopped chocolate into the bowl of a food processor.
  • Heat the heavy cream in a quart-sized, microwavable container and microwave for 3 to 4 minutes on high, or until it just begins to simmer; be careful not to allow cream to boil over. Pour the cream over the chocolate and let stand for 2 minutes. Process by pulsing several times until chocolate mixture is smooth. Use as is for glazing. If you wish to make a lighter frosting, allow it to come to room temperature, approximately 2 hours. Once at room temperature, place in the bowl of a stand mixer and whisk on high for 2 to 3 minutes.

  • Heat the heavy cream and the butter in a 3-quart saucepan over medium high heat. Bring to a boil. Place the semisweet chocolate in a 3-quart stainless steel bowl. Pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth.

Heat the cream, sugar, and chopped mint in a 1 1/2-quart saucepan over medium-high heat, stirring to dissolve the sugar; bring to a boil. Use a whisk to gently stir until the cream and chocolate come together in a smooth and glistening pool. Chocolate Cinnamon-Walnut Brownies With Chocolate Ganache image

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Butter and lightly dust with flour, an 8 x 8-inch baking dish (preferably metal).
  • For brownies: mix the flour, cinnamon and salt in a small bowl.
  • On top of a double boiler with simmering water stir chocolate and butter until melted and smooth.
  • Turn off heat and let the chocolate stand over the water.
  • Using an elecric mixer, beat eggs, vanilla and sugar in a large bowl until mixture thickens (about 5 minutes).
  • Stir in flour mixture in two additions, blending well after each addition.
  • Gradually add in warm chocolate into mixture, beating until just combined.
  • Stir in walnuts.
  • Pour batter into prepared pan, and bake for about 35 minutes (might take more or less time) or until top is set, and a toothpick or cake tester inserted in the middle comes out with moist crumbs on it.
  • Cool completely in pan on a rack.
  • For ganache: Whisk all ingredients in a small saucepan over medium-low heat until melted and smooth.
  • Pour evenly over top of brownies.
  • Chill brownies until ganache is set (about 2 hours).
  • Store covered in the refrigerator.

Chocolate Mascarpone Brownies image

Steps:

  • Preheat oven to 325°F; have ready a buttered 8-inch square glass cake pan.
  • First, prepare the brownies.
  • In a small saucepan, melt the butter and bring it to just below a boil; have the chopped chocolate in a mixing bowl--pour the hot butter over the chocolate and let stand for 30 seconds.
  • Stir until chocolate is completely melted.
  • Sift in the sugar and cocoa powder (I do this through a sieve, not with a sifter).
  • With a wooden spoon, beat in the mascarpone, eggs (30 minutes on the counter brings them to room temperature) and vanilla, mixing until smooth.
  • Gently fold the flour and salt into the batter.
  • Pour batter into prepared pan and spread evenly--this is important since, if the batter isn't spread evenly, it won't bake evenly.
  • Place into preheated oven and bake for 45 to 50 minutes, or until a tester comes out clean (45 minutes did it for me).
  • Place pan on a cooling rack and let brownies cool for 10-15 minutes, while you now make the ganache.
  • Place chopped chocolate in a mixing bowl; in a small saucepan, bring the cream and the butter to just below the boiling point, over medium heat.
  • Pour this hot cream-butter mixture over the chocolate and let stand for 30 seconds, then stir until smooth; ganache is now ready to use and can be spread over the brownies.
  • Should you wish to wait a bit, make sure the ganache is warm when you spread over the brownies, as it does firm up which makes spreading hard to do.
  • Don't cut into the brownies until ganache has firmed up; I find it best to put the brownies into the fridge to speed this along; once the ganache is firm the brownies do not need to be kept in the fridge, though.

  • Preheat oven to 350 degrees. Butter two 8-inch round cake pans; dust with cocoa, tapping out excess. Line bottom of each pan with a round of parchment paper; set aside. In a medium bowl, whisk together flour, cocoa, baking powder, baking soda, and salt; set aside.
