Steps:

  • Preheat oven to 375°. In a large bowl, mix the first 6 ingredients; stir in potatoes, cheese and bacon. Transfer to a greased 13x9-in. baking dish. Bake until golden brown, 50-60 minutes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casserole as directed until top is golden brown and a thermometer inserted in center reads 165°, increasing time to 1-1/4 to 1-1/2 hours.

Thanksgiving Breakfast Casserole image

Steps:

  • Set a large skillet over medium heat and add the sausage. Cook until browned and cooked through, 7 to 9 minutes. Remove the sausage with a slotted spoon and drain on a paper towel lined plate. Without cleaning the skillet, add the apples, onion and sage and cook until the onion has softened, 2 to 3 minutes. Remove the pan from the heat and set aside.
  • Mix together the eggs, milk and half-and-half in a large pitcher or bowl. Season with salt and pepper and set aside.
  • Grease a large casserole dish with some butter. Layer in half the English muffins, half the sausage, half the apple/onion mixture and half the cheese. Repeat with the other half of the same ingredients, ending with the cheese. Slowly pour the egg mixture all over the top. Cover with plastic wrap and refrigerate overnight.
  • Remove the pan from the fridge 20 to 30 minutes before baking. Preheat the oven to 350 degrees F.
  • Replace the plastic wrap on top of the casserole with aluminum foil. Bake for 35 to 40 minutes, then remove the foil and continue to bake until the top is golden brown and slightly crisp, 10 to 15 minutes more.
  • Sprinkle with the chopped parsley. Serve warm and enjoy.

Steps:

  • Preheat the oven to 350 degrees F.
  • Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
  • Melt the butter in a large frying pan.
  • Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
  • Saute until soft, about 5 minutes.
  • In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
  • In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.
  • To assemble, spread the onions and hash browns evenly at the bottom of the greased dish.
  • Place the bread cubes evenly on top of hash browns.
  • With a slotted spoon distribute sausage as the third layer.
  • Pour the milk and egg mixture over these layers.
  • Add Parmesan as the next layer, while then adding the Cheddar.
  • *Cook's Note: Save a few tablespoons of cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted cheddar.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan; add hash brown potatoes and arrange in an even layer.

Mr. Dell's Original Potato Casserole image

Steps:

  • Preheat oven to 375 degrees.
  • Melt 1/4 cup butter or margarine and pour into a 9X13 inch baking dish, then add 5 cups of the shredded hash brown potatoes, no need to thaw.
  • In a separate bowl, mix soup (in a pinch, I've used cream of celery and cream of mushroom and it turned out fine), sour cream, milk, and green onions, then pour 1/2 of this mixture over the hash browns. Spread the mixture around over the hashbrowns evenly using a spatula. Salt and pepper to taste.
  • Sprinkle one cup grated cheese on top.
  • Add the remainder of the hash brown potatoes and pour the remaining soup mixture on top, again, spread out evenly using a spatula. Salt and pepper to taste.
  • Sprinkle remaining cheese on top.
  • Bake for 55 minutes.
  • **If at the end of the 55 minutes baking time the top hasn't browned to your liking, set the oven to broil and it will quickly brown the top of the cheese to a crispy golden brown.
  • When done, let set up for 5-10 minutes before cutting into servings.

Steps:

  • Cut bacon up in small pieces (or break sausage up) cook in pan, drain on paper towel & set aside.
  • Preheat oven to 350 degrees.
  • Grease 9x13 casserole dish.
  • Place a layer of potatoes on the bottom of the dish and sprinkle with salt, pepper, onion powder, & garlic powder. Add rest of the potatoes and repeat sprinkling -- Adjust amounts of seasoning to taste.
  • Place bacon (or sausage)**, and cheese on top of potatoes.
  • In a mixing bowl whisk eggs together, add milk and whisk until incorporated. Pour evenly over top of layers.
  • Bake uncovered for about 1 1/2 hours or more - until liquid is gone.

It can be refrigerated overnight before cooking in the morning. Serve with sour cream, salsa, or guacamole.
