PAN FRIED BLUEBERRY CORN FRITTERS
Much better for you than deep fried fritters. They go well with any fruit--canned with light syrup are good, but I like just fresh fruit as well, especially strawberries.

Steps:
- Heat oven to 250°F degrees.
- Mix together cornmeal, flour, sugar, and baking powder.
- Combine egg whites, milk and margarine, mix well.
- Pour milk mixture into the dry ingredients, stir until just smooth (do not over mix).
- In a large non stick skillet heat the 2 tbsp oil, heat until quite hot but not smoking.
- Drop in a 1/4 cup of batter for each fritter.
- Cook approx 4-6 minutes on each side.
- Keep warm in the oven covered with foil until you have cooked all the fritters.
- Serve with Blueberries or other fruit.

- Sift together flour, baking powder, sugar and salt together.
- Make a well in the center of the dry ingredients and pour in milk.
- Add lightly beaten egg yolks.
- Blend together till batter is smooth (add a little more milk if needed to make the batter smooth).
- Fold in fresh blueberries.
- Fold in stiffly beaten egg whites.
- Chill, covered, for 30 minutes.
- Form into fritters by making balls with two spoons dipped into hot water, and deep-fry (375 F) until golden brown.
- Serve with blueberry syrup.

- Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes.
- Add the remaining 7 Tablespoons of sugar, eggs, butter, vanilla extract, salt, nutmeg, and 1 cup flour. Beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
- Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
- Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. - Place a large plate lined with paper towels near the cooking area - this will hold the fried fritters. Have a large frying pan and vegetable oil ready to go.

- For the fritters: Combine the flour, sugar, baking powder, salt and cinnamon in a large bowl. Whisk to combine.
- In a medium bowl, combine the eggs, milk, vanilla and melted/slightly cooled butter. Whisk to combine. Make a well in the dry ingredients and add the wet ingredients. Stir just until combined. Add the blueberries and fold in. You'll want lots of blueberries, so add until the dough is well spotted with fruit. You almost can't have too many blueberries!
- *Tips: Have a cooling rack ready, set over a baking sheet. For deep frying, use a heavy, deep pot if you don't have a deep fryer. Have a lid handy, just in case. You'll need 2-3 inches of oil. If you have a thermometer, heat oil to 375° F. Without a thermometer, test oil heat by dropping a bit of batter in. It should float, sizzle immediately, and turn golden within a minute or so.
- In a heavy, deep pot, heat oil to 375° F. Drop fritters by the spoonful in to hot oil. Cook until underside is deep golden brown. Flip over and cook the other side. Remove to a cooling rack set on top of a baking sheet. Continue until all fritters are cooked.
