- Whisk together vinaigrette, mustard, Worcestershire sauce and garlic. Pour 1/4 cup into a shallow dish. Add beef and turn to coat. Cover and refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade from dish. Grill steaks and onions, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°) and onions are tender, 4-7 minutes per side. Drizzle reserved marinade over onions. Cut steak into thin slices; serve with onions.

- In a medium skillet melt butter over medium-low heat.
- Add onions and garlic.
- Cook, covered, for 13-15 minutes or until onions are tender.
- Add brown sugar and salt.
- Cook, uncovered, over medium-high heat 4-5 minutes or until onions are golden brown, stirring constantly.
- Meanwhile, cut meat into 4 serving-size pieces.
- Sprinkle pepper on both sides of each meat piece.
- Place on the unheated rack of a boiler pan.
- Broil 3 inches from the heat to desired doneness, turning once.
- (Allow 10-12 minutes for medium rare.) Stir vinegar into onions.
- Spoon onion mixture over steak.
- Sprinkle with parsley.

- Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.

GRILLED BEEF SKIRT STEAK WITH ONION MARINADE

- Make the onion marinade:
- Combine the onion, garlic, 1/4 cup of the oil, and water in a blender; blend until smooth. Put the skirt steak in a large resealable plastic bag or baking dish and pour in the onion mixture, coating both sides. Cover or wrap the meat well so the onion scent does not permeate your refrigerator; chill for at least 4 hours and up to 24 hours.
- To make the skirt steak:
- Prepare a grill to medium-high heat.
- Remove the steak from the marinade and season both sides with the kosher salt and pepper. Transfer the meat to the grill and let cook until one side is well seared, 3 minutes. Flip and cook for 2 minutes more, for rare to medium-rare. At this point, remove the steak from the grill and let rest for 2 minutes to allow the carryover heat to give it a more even doneness. Finally, return the steak to the grill and cook for 1 minute more per side (this guarantees this thin cut of steak will be served hot). (Add another minute of cooking on the second side for medium doneness.) Remove the skirt steak from the grill and let rest 1 to 2 minutes before slicing and serving.
- Cut each steak with the grain into three sections. Turn each piece to slice against the grain at a 45-degree angle. Slice into 1/4-inch pieces on a slight bias against the grain. You should get about 5 slices per cut piece, about 15 slices total. Transfer the meat to a warmed plate. Garnish with the remaining 1 tablespoon oil and smoked sea salt and serve with the chimichurri.

- Heat the oil in a heavy-based pan and cook the onion over a low heat for 15 minutes, until soft.
- Add the sugar and vinegar and simmer until syrupy.
- Season, tip into a dish and set aside.
- Heat a non-stick griddle or frying pan until very hot.
- Add the steaks and cook for 1 ½ minutes on each side. (Longer if you prefer it well done).
- Top the steaks with the onion and serve with spinach, roasted tomatoes and mashed potato on the side.

- In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.
- Generously season both sides of the steak with salt and pepper. Add the remaining 1 tablespoon of the oil to the skillet and fry the steak over medium heat, turning once, until browned, about 6 minutes per side for medium. Transfer the steak to a serving platter and cover to keep warm.

- ~mince onion and garlic and add to bowl.
- ~cut a strip of lemon or lime zest, mince and add to bowl.
- ~add salt, pepper, rosemary, garlic powder and olive oil to bowl, mix all together.
- ~place steaks in Ziploc bag, flat.
- ~rub 1/2 contents of bowl over steaks, flip bag over, and rub other 1/2 over the other side of steaks.
- ~slice lemon or lime center-wise, and place a few rings on top of steaks, only on one side (unless you like slightly more sour steaks).
- ~pour soya sauce over steaks, flip bag and pour some on other side.
- ~add Teriyaki and Worcestershire sauce, and bourbon or whiskey last.
- ~close bag almost all the way, and then squeeze out trapped air - careful to not let marinade out.
- ~place in fridge, flat, for overnight or even 1-3 days for maximum tenderness, and ever so often squish bag and flip it over.

- Stir the canola oil, root beer, Worcestershire sauce, teriyaki sauce, steak sauce, garlic salt, onion salt, black pepper, basil, thyme, and rosemary together in a bowl.
- Pierce the steaks in several places on both sides; arrange in a single layer in a shallow non-reactive dish. Pour the marinade over the steaks, flipping the meat to coat both sides. Allow to marinate in refrigerator 3 to 4 hours, flipping meat once halfway through.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

- Mix together the oil, butter, Dijon, honey savory & Worcestershire sauce; beat until well blended.
- Pour into a shallow dish large enough to hold the 4 onion slices flat in the marinade.
- Run a water soaked bamboo skewer through each onion slice from one side to the other to hold the slice together. Trim off any protruding bits of the skewers.
- Place onion slices it in the marinade and refrigerate until 15 minutes before serving or proceed to cook them now. They may be prepared the day before and kept overnight.
- Flip the slices a few time to evenly coat the slices with the marinade.
- Over medium heat warm a lightly oiled skillet.
- Remove onion slices from the marinade and fry the slices until golden on both sides approx 7 minutes each side.
- Be careful that they do not burn-the honey tends to caramelize quickly. If necessary turn the heat a bit lower.
- Serve & enjoy.
