Steps:
- In food processor, combine apples, walnuts, cinnamon, orange juice, lemon juice and currants.
- Pulse briefly until desired texture is achieved.
- Serve.

DESSERT CHAROSETS
A modernised traditional Moroccan recipe -from Australian Womens Weekly Moroccan cookbook. I thought these looked interesting and easily made gluten-free by ensuring gluten-free chocolate is used. You can leave out the chocolate all-together if you wish. Recipe uses Australian measures- 1 tablespoon = 4 teaspoons. Time stated does not include overnight refrigeration required

Steps:
- Blend or process the dates, raisins, coarsely chopped nuts and wine/juice until the mixture forms a smooth paste.
- Using wet hands, roll level teaspoons of mixture into balls. Place them on a lined tray. Cover and refrigerate overnight.
- Dip half of the balls into melted chocolate, place on foil lined tray, leave to set at room temperature.
- Roll remaining balls in finely chopped walnuts.
CLASSIC APPLE CHAROSET
This is the way I have prepared my Charosis for the last 30 odd years. Originally in the Fairmount Temple Cookbook. My children liked this after the seder, during the week.

- Combine all ingredients; refrigerate 2 hours in an airtight container.
- *If you refrigerate, too far in advance, it will get watery.

CANDIED WALNUT CHAROSET
Steps:
- Line large baking sheet with parchment paper. In medium bowl, whisk together sugar and 1/2 teaspoon cinnamon.
- In large heavy skillet over moderately high heat, heat oil to 350°F. Fry walnuts until golden brown, about 30 seconds, being careful not to burn. Using skimmer or slotted spoon, transfer walnuts from skillet to bowl containing sugar mixture. Toss walnuts in sugar, then spread on baking sheet. Cool 15 minutes, then chop roughly.
- In large bowl, combine nuts, remaining 1 teaspoon cinnamon, apples, and wine. Store, covered, at room temperature until ready to serve.
