HOP-TO-IT DEVILED EGGS

Make sweet Easter baskets filled with fantastic flavor! These adorable eggs would be a wonderful project for the kids while moms and dads finish up preparations for an Easter feast. -Taste of Home Test Kitchen

Hop-To-It Deviled Eggs image

Steps:

  • Cut eggs in half widthwise. Cut a thin slice from the bottom of each half so they sit flat. Remove yolks; set whites aside. In a small bowl, mash yolks. Add mayonnaise, relish, mustard, salt and pepper; mix well. Stuff or pipe into egg whites., Top with sprouts. Tuck the ends of a chive into each egg, forming a handle. Refrigerate until serving. Just before serving, garnish with sunflower kernels.

6 hard-boiled large eggs
1/4 cup mayonnaise
1 tablespoon sweet pickle relish
1/2 teaspoon honey mustard
Dash salt
Dash pepper
1/4 cup alfalfa sprouts
12 chives
1/4 cup candy-coated sunflower kernels

CLASSIC DEVILED EGGS

This recipe is adapted from ''U.S.A. Cookbook," a tribute to classic all-American dishes, written by Sheila Lukins, a co-author of the Silver Palate cookbooks that were popular in the 80s and 90s. There are no newfangled ingredients here - no lemongrass or curry or pesto - just eggs, mustard, mayonnaise, a dash of Tabasco and a festive sprinkle of paprika (if you're feeling fancy, garnish with chives). They are basic, but spectacular, and always a welcome addition to the picnic table.

Classic Deviled Eggs image

Steps:

  • Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes.
  • Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, Tabasco, salt, pepper and snipped chives. Stir in mayonnaise.
  • Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture and dust the top with paprika. Arrange in a spoke design on a platter; garnish with whole chives.

  • Cut peeled eggs in half lengthwise and place them on a serving platter. Remove yolks with a spoon and place them in a medium mixing bowl.
  • Mash yolks to a fine crumb with a fork. Add 1/4 cup mayo, 2 tsp pickle juice, 1/2 tsp mustard, 1/4 tsp salt, 1/8 tsp black pepper and 1/8 tsp garlic powder and mash together until creamy.
  • Spoon a generous teaspoon of the egg mixture into each egg half. Garnish the top with a generous sprinkle of paprika and big pinch of browned bacon bits.

  • Slice the hard-boiled eggs in half lengthwise. Scoop out the egg yolks and transfer them to a food processor or mixing bowl if you don’t have a processor; set the egg whites aside.
  • If using a mixing bowl, mash the egg yolks completely until they form a fine powder before adding the rest of the ingredients and mixing until smooth. If using a food processor, add all of the ingredients to the egg yolks (no need to process first), then process until smooth. If the mixture seems too thick, add a drizzle of olive oil. Taste and adjust seasonings as desired. If refrigerating at this point, keep in mind the flavors will mellow once refrigerated.
  • Use a piping bag with a large tip or a plastic bag with the corner snipped to fill the egg white cavity with the yolk mixture. Chill for 30 minutes, time permitting.
  • Sprinkle each deviled egg with crumbled bacon, chives and optional paprika or Cajun seasoning. Serve immediately.
