DIANA'S AWESOME OATMEAL MUFFINS
Full of the good stuff- and you get to choose what the good stuff is! This is good for people with juicers, too, because you can use your juice pulp for the pulp called for in the recipe. Credit goes to the wonderful "Diana in Wisconsin" of the Simple Living Discussion Forums. Cook time includes soak time for the oatmeal. I'm sure you could also add about 1/2 cup fruit, raisins or nuts too. These are also vegan, as long as you don't use dairy for the liquid. You can add a Tbs or two of sugar if you want a little sweetness.

Steps:
- Preheat oven to 400°F.
- Soak oatmeal in liquid until softened, about 10-15 minutes.
- Add fruit pulp and mix.
- Stir in salt, soda and baking powder.
- Add flour and stir to blend- Don't over stir!
- Bake until lightly browned and a toothpick inserted into the center of one of the muffins comes out clean, about 15 minutes.
- These freeze well.

- Grease 12 muffin cups.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 12 cup muffin pan with paper liners or coat with cooking spray.
- In a large bowl, stir together the bananas, brown sugar, egg, vanilla and oil. Combine the whole wheat flour, oats, cinnamon, ginger, baking powder and baking soda; stir into the banana mixture until blended. Spoon the batter into the prepared muffin cups.

- In a medium bowl, mash bananas. Mix eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and Greek yogurt into mixture.
- Add oats and milk, and mix. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal.
- Line muffin tins with muffin liners. Pour the mixture into each muffin cup about ¾ full. Add your preferred toppings and gently push your toppings into each muffin cup.

- Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
