Chicken Alfredo 'dirtied up' a bit. Delicious, and anyone can make it. Kids love it, and it is a real treat. Serve with mozzarella garlic bread for an added bonus!

Steps:
- Bring a large pot of lightly salted water to a rolling boil. Cook the fettuccini in the boiling water until cooked through yet firm to the bite, about 8 minutes; drain.
- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes; drain on a paper towel-lined plate. Finely chop bacon and set aside.
- Melt butter in a large skillet over medium heat. Cook and stir the chicken, onion, and garlic in the butter until chicken is browned, about 5 minutes. Stir in the alfredo sauce, Parmesan cheese, Italian seasoning, and garlic salt; continue to cook and stir until the chicken is no longer pink in the center and the sauce is heated through, about 5 minutes more. Add the chopped bacon and mix to serve.

ALFREDO SAUCE
This is my son's favorite meal. I make it with shrimp for him for his birthday every year. GREAT for company because it is so easy and yet taste wonderful! I cook this in the microwave, but I'm sure you could do it on the stove too. Times are what work in my microwave. Please use your own good judgment on times to use in your microwave. (In my quest to eat healthier, I now make it with light butter, light cream and reduced fat Parmesan cheese. It still tastes wonderful, but there isn't any guilt!) PLEASE NOTE! This is an "authentic" Alfredo sauce recipe! Real Alfredo sauce *only* contains butter, cream, Parmesan cheese and pepper. It will be thin and there is no garlic in it! If you want a thicker sauce or one with garlic like modern restaurants serve, please look elsewhere! Recipe #52892 and Recipe #8596 are two good places to start.

Steps:
- Place butter in microwave safe pot and heat on high for 30 seconds or until melted.
- Add cream and warm on high for approximately 1 minute.
- Add Parmesan cheese and warm until cheese melts.
- Add salt and pepper to taste. (If serving with shrimp, you might not need much salt.).
- Pour over 4 servings of warm noodles (I use angel hair) and toss to coat. Serve immediately.
- Notes: I serve it with cubed, grilled or broiled chicken breast mixed in with the noodles or shrimp. Add a green salad and you have a complete meal. I have used margarine and canned Parmesan cheese and it worked fine.

CHICKEN ALFREDO WITH CRISPY BACON (PAULA DEEN)
A recipe that I thought sounded delicious from Paula Deen's Comfort Food Magazine. Posting for safe keeping. Update 10/17/2013: Made this for DH and myself, so I made 1/3 of the recipe, but still made 2 pieces of bacon (will even make more next time) and I added some additional heavy cream as we like it creamy. We loved the addition of the bacon, onion and garlic to the normal Chicken Alfredo, DH even went back for seconds.

Steps:
- Heat a large skillet over medium heat. Add bacon; cook until crisp. Remove bacon to paper towels to drain, reserving drippings in skillet. Crumble bacon and set aside.
- Sprinkle chicken with salt and pepper. Brown chicken in drippings; add chicken broth. Cover and cook for 15 to 20 minutes or until cooked through. Remove chicken; shred meat.
- Add onion and garlic to skillet; cook for 7 minutes over medium-high heat or until onion is tender. Add shredded chicken to skillet, and stir in cream; cook for 5 minutes or until thickened slightly. Remove from heat; add cheese and parsley, stirring until cheese melts.
- Tossed cooked fettuccini with chicken mixture. Add enough reserved cooking liquid to reach desired consistency. Sprinkle with crumbled bacon and enjoy!

- In a medium sauce pan, add butter, heavy whipping cream, and cream cheese.
- Cook over medium heat and whisk until melted.
- Add the minced garlic, garlic powder, Italian seasoning, salt, and pepper.
- Continue to whisk until smooth.
- Add the grated Parmesan cheese.
- Bring to a simmer and continue to cook for 3 to 5 minutes or until it starts to thicken.
- Toss with your favorite pasta.
NON-DAIRY ALFREDO SAUCE
I've been craving alfredo sauce lately, and this is the best non-dairy substitute I've found! Don't tell your family it contains tofu, I bet they'll never guess! The recipe is from www.veganchef.com. You can reduce the soy parmesan to make it healthier, although I wouldn't go below 1/2 cup because it does add a lot of the flavor.

- In a food processor or blender, place all of the ingredients, except the soy parmesan cheese, and blend for 2 minutes to form a smooth puree.
- Transfer the mixture to a small saucepan and cook over low heat while stirring constantly until warmed through (I turned it up to medium and it was fine).
- Remove the saucepan from the heat and stir in the soy parmesan cheese.
- Taste and adjust the seasonings, as needed.
- Use as a sauce for pasta, vegetables, or grains.

This is a pretty simple recipe. It's a pretty small batch, so you may want to double it. The recipe needs no dairy-free cheese, but feel free to add some or sprinkle on top.

- Heat oil over medium heat in a large skillet. Add minced garlic and lightly saute just until fragrant.
- Stir in the flour and stir for about one minute. This will be thick.
- Slowly pour in the milk.
- Add salt, pepper, oregano and nutmeg.Stir until creamy and thick.
- Turn off the heat and stir in nutritional yeast.
- Serve over your choice of pasta.
