Steps:

Steps:

  • Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.

AMISH NEVER FAIL PIE CRUST

I've had this recipe for a long time. It's the only crust my wife asks for whether I'm making pot pies, fruit pies or turnovers. It makes awesome homemade Hot Pockets too. You can substitute whole wheat flour for all or some of the AP flour. This is enough for a 9 inch 2 crust pie, two 9 inch single crust pies or 10-12 hot pockets. You can double the recipe if you have a really big mixing bowl for OAMC.

  • Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogeneous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage-cheese curds, and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.
  • Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Steps:

  • Place a large sieve in a large mixing bowl.
  • Into the sieve place the flour, baking powder, salt, and brown sugar.
  • Sift into bowl.
  • With a pastry blender, cut in the shortening until crumbly and no large bits or shortening remain.
  • In a measuring cup, beat the egg, add the vinegar, and enough cold water to make one cup.
  • Pour over flour mixture, a little at a time, stirring with a fork until the dough begins to stick together.
  • Add more flour, if necessary, and knead a few times right in the bowl until you have a large, smooth ball.
  • Pat firmly into the bowl and lightly mark off six equal portions.
  • With a knife, cut through each portion.
  • Pat into round balls and place in separate plastic bags.
  • Dough will keep in the refrigerator for two weeks, or in the freezer for two months.

Donna's Never Fail Pie Crust image

Steps:

  • Cream shortening and hot water with mixer.
  • Add baking powder, salt and flour, slowly as to not dispense flour over the counter.
  • When mixture will stick together, form into a ball. If it's too dry add one tablespoon of hot water at a time until moist but not sticky. If too moist do the same with flour. When the right consistency, divide in half, form ball into a disk, and roll out between two sheets of wax paper until the crust will fit a pie plate. Peal off one piece of the paper and flip over your plate, and peal off the remaining wax paper. Fill the pie shell and repeat the process for the second crust. Fold and crimp edge of crust. Slit top, add a few dabs of butter and then sprinkle sugar over the crust.
  • Preheat oven to 400 degrees, baking pie for 15 minutes. Turn down to 350 degrees and bake for an additional 45 minutes. Cool. Serve warm.

I call this "no fail" simply because I can do it! LOL All of my previous pizza dough attempts have always been failed attempts. I thought I had given up all together but my love for pizza, and big craving for it last week made me decide to give it one more try. So I looked at a lot of recipes that claimed to be easy or no-fail and carefully compared each ingredient before deciding which one to use. The final product turned out so good that I've made it 3 times since (yes within the last week!), and today I dared to make a couple minor changes to the original recipe... with great results! Hope you enjoy! Note: If you don't have a pizza stone, this recipe works fine on a pizza pan too, I've tried 2 different pans in addition to the stone and all 3 ways had very comparable results.

No Fail Pizza Dough image

Steps:

  • In a large bowl, combine the hot water, yeast, honey and 1 tablespoon of the olive oil. Let the mixture sit for 5-10 minutes.
  • In a separate bowl measure out the all purpose and whole wheat flour and give it a quick stir to combine.
  • Add 1 ½ cups of the flour, along with the salt and garlic powder, to the water and yeast mixture. Mix by hand until smooth. Continue adding the rest of the flour, about 1/4 cup at a time, working the dough after each addition, until dough is smooth. You may not need all of the flour.
  • Turn the dough out onto a lightly floured surface and knead until the dough is smooth but still slightly tacky, about 3 minutes.
  • In a large mixing bowl add remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm, draft-free place until double in size (about 1 to 1 ½ hours).
  • Pound the dough down and divide into 2 balls to make two 8" pizzas, or keep as one large ball to make a 16" pizza. Let dough sit for 5 minutes.
  • Roll dough out to desired size and let sit for 20 minutes to allow the crust to rise a little before adding toppings.
  • Add desired sauce, toppings and cheese.
  • Cook on a preheated pizza stone on lowest rack at 450 degrees for 15-20 minutes.
