This is another favorite from my favorite Waxahachie restaurant, The Dove's Nest. The recipe comes from their cookbook. This salad will keep in the refrigerator for several days.

Dove's Nest Turkey, Red Grape & Bleu Cheese Salad With Honey image

Steps:

  • To make dressing, combine the oil, onion, wine vinegar, honey and Tabasco sauce in a blender container.
  • Process until smooth.
  • Season with salt and pepper.
  • To make salad, combine turkey, bleu cheese, pecans and grapes in a salad bowl and mix gently.
  • Add the dressing, tossing to coat.

Serve this turkey, grape and walnut salad for lunch. It provides protein, carbs and beneficial fats, and makes enough to serve two people over two days

Turkey salad with grapes & walnuts image

Steps:

  • Boil the potatoes for 12-15 mins until tender, then drain and leave to cool a little. Cut the potatoes into thick slices. Mix together the yogurt, mustard and lime zest. Toss the potatoes with 4 tbsp of the dressing and 3 tbsp of the onion.
  • Put the turkey in a medium bowl and toss with the oil, then cook in a non-stick frying pan over a medium heat for 10 mins, turning at least once until the turkey is cooked through.
  • When you're ready to serve, mix half the lettuce, watercress, half of the remaining onion and 1 of the peppers in a bowl. Top with half the potatoes, and slice and pile on half the turkey. Toss the avocado with a good squeeze of lime, then scatter half on top with half the grapes and half the walnuts. Spoon over half of the remaining dressing.
  • If packing this into lunchboxes, do the same with the remaining ingredients in the lunchboxes, but in reverse, so the green salad is at the top. Keep the dressing in a pot separately, to drizzle over just before eating. Will keep chilled for two days.

Blue cheese & grape salad with caramelised pecans image

Steps:

  • First, caramelise the nuts. Heat the butter and sugar in a small frying pan, then stir in the nuts. Cook over a low heat for about 5 mins until the nuts are crisp and coated in the sugary butter. Tip onto an oiled baking sheet, leave to cool slightly, then roughly chop. Whisk together the vinegar and olive oil until well blended, then stir through a little salt and pepper to taste.
  • To serve, tear the leaves off the chicory and put into a bowl with the rocket. Slice the grapes in half, remove the seeds, then add to the bowl with most of the dressing. Gently toss everything together until the leaves are coated, then arrange on 4 serving plates. Crumble over the cheese and top with a scattering of nuts. Drizzle with the remaining dressing to serve.

From The Dove's Nest Restaurant in Waxahachie, Texas. This spread makes a delicious sandwich on toasted bread. Serve it within a few hours--it doesn't keep well. But it sure is good for a few hours--if it lasts that long.

Steps:

  • Heat the olive oil in a large stockpot over medium-high heat.
  • Add the onion.
  • Saute for 3 to 5 minutes or until softened.
  • Add the garlic.
  • Cook for 1 to 2 minutes longer.
  • Do not brown.
  • Add the tomatoes, tomatillos and jalapeno.
  • Cook until the tomatillos are tender, stirring occasionally.
  • Add the chicken stock, green chilies, chicken, oregano, cumin, cilantro, beans and lime juice.
  • Cook until heated through, stirring frequently.
  • Season with salt and pepper.
  • Ladle the chili into serving bowls.
  • Serve garnished with a dollop of sour cream, shredded cheese and fried tortilla strips.
