Dream of Broccoli Soup image

Steps:

  • In a stock pot, cook the onions over medium heat in the butter for about 8 minutes. Add broccoli and half the stock; bring to almost a boil.
  • Using hand held immersion blender, puree the broccoli mixture until smooth.
  • Stir in the remaining broth, 1/2 cup buttermilk, 2 ounces of the goat cheese, bay leaf and nutmeg. Heat for 5 minutes but do not boil.
  • Adjust seasoning and add salt and pepper.
  • In a plastic bag combine the remaining buttermilk and cheese. Mix together. Snip the corner of the plastic bag.
  • Pipe dots on top of the soup, dragging a toothpick through the dots to form "hearts".
  • Serve warm.

Cream of Broccoli Soup with Roasted Garlic Crostini image

Steps:

  • Preheat oven to 400 degrees F.
  • Arrange bread slices on a baking sheet. Bake for 6 minutes, until toasted.
  • Meanwhile, in a large stock pot, heat olive oil over medium heat. Add onion, celery, garlic, carrot, and broccoli. Pour broth over vegetables and increase the heat to high. Bring to a boil, reduce heat to medium and simmer 5 minutes. Using an immersion blender, puree until smooth or you can use a blender. Add milk and simmer 1 minute to heat through. Puree again. Season, to taste, with salt and pepper. Using a fork, mash garlic cloves with a pinch each of salt and black pepper, making a thick paste. Spread mixture on toasted bread and serve with soup.

  • In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Steps:

  • Heat the oil in a large saucepan over medium heat. Add the onions and 1/2 teaspoon salt and cook until light brown, about 7 minutes. Add the celery, garlic and 1/4 teaspoon pepper and cook for 5 minutes. Add the potatoes, 4 cups water and 1/2 teaspoon salt, raise the heat to high and bring to a boil. Return the heat to medium, cover and cook until the potatoes are tender, about 15 minutes. Add the broccoli, cover and cook until the broccoli is bright green, about 5 minutes.
  • Transfer the soup to a blender; add the soy milk and puree until smooth, leaving the filler cap slightly open to let steam escape (or puree the soup in the pot with an immersion blender). Return the soup to the saucepan and bring to a simmer; stir in the nutritional yeast and nutmeg. Add water if needed to adjust consistency and add salt and pepper to taste.

  • Saute onion and garlic in the oil until soft, 3 to 4 minutes.

Steps:

  • Melt 2 tablespoons butter in medium sized stock pot, and sauté onion, garlic and celery until tender.
  • Add broccoli and broth; cover and simmer for 10 minutes.
  • Purée soup (I use a hand blender) or mash with potato masher.
  • Return to heat.
  • In small saucepan, over medium heat melt 3 tablespoons butter, stir in flour and add milk.
  • Stir until thick and bubbly, add to soup.
  • Add cheese; stir until melted.
  • Season with pepper and serve.

Steps:

  • Melt butter in a medium saucepan and lightly sauté onion.
  • Add flour, bouillon cubes and seasonings, stirring until smooth.
  • Remove from heat.
  • Gradually whisk in milk.
  • Bring to a boil over medium heat.
  • Boil and stir 1 minute.
  • Meanwhile, cook broccoli according to package directions.

  • In a small saucepan over low heat, melt the 6 T. butter. Add in the flour and stir until blended; do not brown. Remove from heat and set aside.
  • In a large saucepan, melt the 2 T. butter. Add onion; cook until tender. Add chopped broccoli florets, cook and stir about 6 minutes. Add the chicken broth. Steps:

  • In a large saucepan, mix and bring to boil broth and soup.
  • When it is boiling, add broccoli and bring to second boil.
  • Reduce heat.
  • Cover and simmer for about 5 minutes, or until broccoli is cooked.
  • In medium skillet, heat butter and sautee onions for about 5 minutes, or until tender.
  • Add the flour and cook for about 1 minute longer. If necessary, use whisk to remove lumps.
  • Slowly stir milk into flour mixture in skillet.
  • Cook, until thickened, stirring constantly. It will take about 5 minutes, then add salt and pepper.
  • Mix well.
  • Stir milk mixture into broccoli mixture and simmer over low heat for about 10 minutes.
  • Stir frequently.
  • Ladle into bowls and top with grated cheese.

Skillet Broccoli Spaghetti image

Steps:

  • Thinly slice the garlic and transfer to a large (12-inch) skillet with high sides. Cut the florets off the broccoli, keeping as much of the branch connected to the trunk as possible. Peel the trunk and cut the trunk and branches into 1/2-inch pieces. Transfer to the skillet. Roughly chop the florets so even the biggest pieces fit on a soup spoon. Leave the florets on the cutting board.
  • To the skillet, add the butter and anchovies, and set over medium-high. Cook, smashing the anchovies and stirring the butter, until the garlic and broccoli are softened, 2 to 3 minutes.
  • Add the spaghetti, the florets and any broccoli bits on the board, 2 teaspoons salt and the red-pepper flakes. Pour over 5 cups water. Bring to a boil over high, then cook, tossing often with tongs, until the spaghetti is al dente, 8 to 12 minutes. If the pasta is looking dry, add more water. Eat with grated Parmesan, if using.
