EASY DROP COOKIES
My mother made these all year round, she would just change the color of sugar in which they were dipped. Consider putting a small amount of powdered drink mix (e.g.. Kool-Aid crystals) in white sugar to get different colors, and a little flavor. (Don't omit the sugar or the flavor will be too strong. )

- In a mixer bowl fitted with the paddle attachment, beat butter, granulated sugar, and powdered sugar on medium-low speed for 4 minutes. Beat in egg and vanilla extract just until combined. Add flour mixture and beat just until combined. Do not overmix.
- Place ¼ cup sugar in a small bowl. Shape dough into balls, the size of 1.5 tablespoons each (I use this ice cream scoop for that), then roll them in the sugar and place on the cookie sheets, spacing them 2-inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges, but the center is still soft (you don't want to overbake them). Allow cookies to cool on baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.

- Preheat oven to 375°F. Line baking sheets with parchment paper (this helps the cookies from spreading).
- Using an hand mixer, or stand mixer fitted with the paddle attachment, beat butter and sugar for 1-2 minutes, until light and creamy. Add extracts, egg and egg yolk, and beat until combined, scraping the sides of the bowl as necessary.
- In a separate bowl, combine flour (see note), baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and beat until combined.
- Place 1/2 cup sugar in a shallow bowl or plate. Scoop dough into 1-1/2 tablespoon balls (I use a cookie scoop), and roll in the sugar. Space dough balls about two inches apart on the prepared baking sheets. Optional: For flat cookies: Use the bottom of a glass to flatten each ball of dough. If you do not flatten them they will be slightly puffy with a thicker center.
