QUICK & EASY DEEP DISH PIZZA

- Preheat oven to 425°. In a large skillet, cook beef, pepper and onion over medium heat 8-10 minutes or until beef is no longer pink, breaking beef into crumbles; drain. Stir in pizza sauce and Canadian bacon; remove from heat., Prepare dough for pizza crust according to package directions. Press dough to fit bottom and 1 in. up sides of a greased 13x9-in. baking pan., Spoon meat sauce onto crust. Sprinkle with cheese; top with pepperoni. Bake, covered, 25 minutes. Uncover; bake 5-10 minutes longer or until crust and cheese are golden brown. Freeze option: Cool meat sauce before assembling pizza. Securely cover and freeze unbaked pizza. To use, bake frozen pizza, covered with foil, in a preheated 425° oven 25 minutes. Uncover; bake 15-20 minutes longer or until golden brown and heated through.

DEEP-DISH PIZZA

- Make the dough: Combine the flour, cornmeal, salt, yeast, olive oil, melted butter, vegetable oil and warm water in the bowl of a stand mixer fitted with the dough hook. Mix on medium speed until the dough comes together and pulls away from the side of the bowl but still sticks to the bottom, about 3 minutes. Reduce the mixer speed to low and knead 5 minutes. Transfer the dough to a lightly oiled bowl and turn to coat. Tightly cover with plastic wrap and let rise in a warm place, 1 hour.
- Meanwhile, make the sauce: Heat the olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is slightly softened, about 1 minute. Add the tomato puree and 1 cup water. Stir in the oregano and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until slightly thickened, about 8 minutes.
- Preheat the oven to 425 degrees F. Generously brush two 9 1/2-inch round deep-dish pizza pans (or 9-inch cake pans) with about 3 tablespoons olive oil each. Divide the dough in half; press each half into the bottom of a pan. Let the dough rest, 15 minutes. Push the dough down and press it up the sides of the pans with your fingers. Layer the cheese on top of each crust and spread each with 1 1/2 cups sauce.
- Bake the pizzas until the crust is dark golden brown and the cheese is bubbling, 40 to 45 minutes (it will still be jiggly in the center). Sprinkle with parmesan (if using); let cool 15 minutes. Transfer to a cutting board and cut into wedges.
- You can freeze the baked pizza for up to a month. Let it cool, then tightly wrap in plastic and foil. To reheat, unwrap and bake at 325 degrees F until hot and bubbling, 50 to 60 minutes.

- In large mixing bowl, dissolve yeast in warm water.
- Add all-purpose flour and oil; beat until smooth.
- Add whole wheat flour, herbs, garlic powder and salt.
- Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
- Place in a greased bowl; turn once to grease top.
- Cover and let rise in a warm place until doubled, about 45 minutes.
- Punch dough down; roll into a 14-inch circle.
- Transfer to a well-greased 10-inch ovenproof skillet, letting dough drape over the side.
- Combine the mozzerella, Swiss and cheddar cheeses; sprinkle 1 cup over dough.

- In large skillet, saute green peppers, onions and herbs in oil until tender.

- Layer with half of the Parmesan cheese and tomatoes.
- Sprinkle with 2 cups of the reserved cheese mixture.
- Layer with the remaining vegetables, Parmesan cheese and tomatoes.
- Fold crust over filling toward center of skillet to form an edge.
- Bake at 400 degrees for 30 minutes.
- Sprinkle with pepperoni and remaining cheese mixture.
- Bake 5 minutes longer or until crust is golden brown.
- Let stand for 10 minutes before slicing.

- Combine the yeast, water and honey in a small bowl. Set aside until foamy, about 5 minutes.
- Combine the cornmeal, salt and 2 cups flour in a bowl. Add the water mixture and 1/4 cup olive oil. Using your hands, stir together to form a rough dough. Transfer the dough to a lightly floured surface and knead the dough, adding more flour as needed, until it forms a slightly tacky but smooth dough that doesn't stick to your hands or the counter, 5 to 10 minutes. Place the dough in an olive oil-coated bowl, turning to coat the dough in the oil. Cover the bowl with plastic wrap and let stand in a warm place until doubled in size, about 1 hour.
- Position an oven rack in the top third of the oven and another in the bottom third. Preheat the oven to 425 degrees F.
- Grease a 9-inch springform pan with the remaining tablespoon olive oil. Wrap the bottom of the pan in aluminum foil and set aside.
- Gently place the dough in the pan and spread it out to the edges using your fingers. Work the dough about 2 inches up the side of the pan. Shingle the provolone on the bottom of the crust and part of the way up the sides. Spoon the marinara over the cheese and smooth with the back of a spoon. Bake for 30 minutes on the lower rack. SKILLET DEEP DISH PIZZA

- Preheat the oven to 400 degrees F. Heat a skillet over medium-high heat with 2 tablespoons olive oil. Cook the sausage rounds until they turn brown on each side, 8 to 10 minutes.
- Grease the inside of a 12-inch cast-iron skillet with the butter. Place the pizza dough in the center and spread evenly towards the bottom edge and 1 1/2 inches up the sides.
- The order of topping layers is very important to achieving a crisp bottom pizza crust. Begin with the sausage. Evenly lay the sausage on the dough, followed by the mozzarella and marinara. - Preheat oven to 375 degrees.
- Brown sausage and onion in large skillet. Drain fat. Stir in pizza sauce, mushrooms, pepperoni, garlic, and parsley.
- Flour counter and roll two thirds of bread dough into 12 inch circle. Place bread in greased 9 inch springform pan, pressing dough 1 1/2 inches up sides. Sprinkle bottom of dough with 1/2 cup of mozzarella cheese. Spoon meat filling over cheese, then sprinkle on remaining cheese.
- Roll remaining dough into 10 inch circle on lightly floured surface. Cut circle into 10 to 12 wedges. Arrange wedges on top of meat mixture, slightly overlapping edges and sealing ends to bottom crust along edge of pan. Brush top with melted margarine or butter and sprinkle with parmesan cheese.
- Bake 40 minutes or until filling is hot and bread is done. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Cool on wire rack for 10 minutes. Remove sides of springform pan. Cut into wedges.

- For the pizza sauce, melt the butter in a small saucepan and add the onion, salt, red pepper flakes, and oregano, and sauté until golden brown.
- Add the garlic, sugar, and crushed tomatoes, and simmer for roughly 20 minutes or until sauce thickens.
- For the dough, combine the active dry yeast, sugar, and warm water together and let sit for one minute.
- In a large mixing bowl, combine the flour, cornmeal, and salt.

- Lay slices of mozzarella across the dough, covering the entire bottom.
- Add pieces of uncased italian sausage on top of the mozzarella and top with tomato sauce.
- Bake for 20-25 minutes or until crust starts to lightly brown and the cheese is melted.
- Garnish with parmesan, cut and serve.

- Remove skins from sausage and cook in heavy skillet, crumbling as you cook.
- Remove sausage to plate covered with paper towel to drain.
- Remove fat from skillet.

- Preheat oven to 425°F.
- Lightly coat a 12-inch heavy oven-proof pan or cast-iron skillet with nonstick cooking spray.
- Unroll 1 package of pizza dough and shape into a circle.
- Press dough into prepared skillet; shape onto bottom and halfway up sides.
- Bake 5 minutes, remove from oven.
- In a large skillet sautee onion and garlic in 2 tablespoons of oil about 5 minutes, or until tender.
- Add spinach, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
- Cook and stir until spinach is heated through.
- Remove from heat and set aside.

- Spread the ricotta mixture over the spinach layer.
- Top with the sliced tomatoes and drizzle with 1 tablespoon of olive oil.

- Unroll remaining pizza dough and form into a 12 to 13 inch circle.
- Place dough on top of layers.
- Brush with remaining olive oil.
- Bake 15 to 20 minutes or until top is golden.

CHICAGO DEEP-DISH PIZZA
Home cooks will find deep-dish pizza, with its unique buttery cornmeal crust, more forgiving than its New York counterpart. - Pour water into the bowl of a stand mixer fitted with a paddle attachment. Sprinkle in yeast and let dissolve, about 10 minutes. Add olive oil, melted butter, sugar, salt, cornmeal, and most of the flour. Knead, stopping to scrape down the sides occasionally and adding more flour as needed, until smooth and elastic.
- Transfer dough to a lightly floured work surface. Knead in extra flour if needed. Roll into a ball and place in a bowl greased with 1/2 teaspoon olive oil. Cover with a plate and let rise in a warm spot until doubled in volume, 1 to 2 hours.
- Meanwhile, let pizza sauce simmer in a pot over low heat until very thick, 60 to 90 minutes.

- Poke dough to deflate and turn out onto your work surface. Press and stretch out dough into a round shape 3 to 4 inches larger than a 12-inch cast iron skillet. Brush skillet with 1 1/2 teaspoons olive oil. Place dough in the skillet; stretch and pull to evenly distribute it over the bottom and sides.
- Lay provolone cheese over the bottom of the crust. Scatter fresh mozzarella on top. Add Italian sausage and firm mozzarella. Ladle pizza sauce generously on top. Grate Parmesan cheese on top. Fold the edges of the crust in towards the center to seal in the sides. Drizzle crust and center with 1 tablespoon olive oil.
- Bake in the center of the preheated oven until crust sounds hollow and pizza is beautifully browned, about 35 minutes. Let rest for 10 minutes before slicing.
