EASY CAKE MIX COFFEE CAKE (ALSO KNOWN AS BREAKFAST CAKE)
This is a quick and easy way to turn a regular cake mix into something special. We serve this with eggs and bacon on a Sunday morning!

Steps:
- Beat together first four ingredients. Then add eggs one at a time - ( but beat less than two minutes).
- Pour 1/2 batter in a 9x13 pan or Bundt pan and pour 3/4 of the filling on top. Pour remaining batter over filling. Sprinkle remaining filling on top (not too much though as the sugar can burn).
- Bake at 350°F for 55 minutes (usually not this long).
- Glaze-----Heat glaze ingredients until near boiling and glaze while cake is still warm from oven.
- NOTES---I have found that the glaze is hit or miss, some people like it some do not. I have started experimenting with different glazes and have found that a thicker glaze works better for my taste -- DH says it doesn't even need a glaze the cake is so good!

EASY APPLE- STREUSEL COFFEE CAKE!
I came up with this based on a Dump Cake I make. We loved the results and I thought I would share it.

Steps:
- Combine the streusel mixture in a med. size bowl, and with 2 knifes or your hands combine until you have nice medium-size clumps. (streusel). Set aside.
- Combine the cake ingredients in a mixing bowl and stir well with a fork until combined (I cut up the apples in the can with a knife to make smaller chunks).
- Pour into a greased 9x13 pan and bake at 350F for 15 minutes.
- Remove from oven and cover top with the streusel mixture.
- Return to bake for 30 more minutes.

This coffee cake is wonderful, the cake itself it moist and delicious while the topping is slightly crunchy and sweeter. Together, they make a delightful combination that you will surely enjoy!

- Preheat oven to 425 degrees F (220 degrees C). Grease and flour a 9 inch square pan.
- In a large bowl mix together the flour, baking powder, sugar and salt. Cut in the shortening with a pastry blender to the size of small peas.
- In a separate small bowl, beat the egg well, then stir in the milk and vanilla. Add the egg-milk mixture to the flour mixture all at once. Stir carefully until just blended.
- Pour batter into prepared pan and spread evenly. Drizzle top with melted butter.
- In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle on top of cake. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Steps:
- Dissolve coffee powder in water.
- Add to a large bowl with remaining ingredients.
- Mix at a medium speed until smooth.
- Spread into a greased and paper lined 20cm (8") round cake tin.
- Bake 200 deg celsius 45 minutes.
- Stand a few minutes before turning out.
- When cold spread with Coffee Icing.
- For the Icing: Combine melted butter with the icing sugar.
- Add honey, vanilla and combined coffee powder and water.
- Beat til thick.

- Heat oven to 375°F Spray 9 inch round cake pan with cooking spray.
- Separate dough into 8 rolls. Cut each into 4 pieces; place rounded side down in pan.
- Spoon pie filling over dough. Sprinkle with almonds.
- Bake 25 to 35 minutes or until deep golden brown. Cool in pan 3 minutes.
- Place wire rack upside down over pan; turn rack and pan over. Remove pan. Place heat proof plate upside down over coffee cake; turn over.
- Remove cover from icing, microwave on High 3 to 7 seconds. Stir icing; drizzle desired amount over warm coffee cake.
- Cut into wedges; serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl, stir together the cake mix and instant pudding mix. Add the eggs, sour cream and oil, mix until well blended. In a small bowl combine the sugar, cinnamon and walnuts.
- Pour half of the batter into the prepared pan, then place a layer of sliced apples over the batter and sprinkle with half of the cinnamon walnut mixture. Pour the remaining batter over the top and repeat with the remaining apples and cinnamon walnut mixture.
- Bake for 60 to 70 minutes in the preheated oven. Cool for 1/2 hour before removing from pan to cool completely.

- Heat oven to 350°F
- In small bowl, cut 2 tablespoons butter into 1 cup Bisquick mix, using pastry blender until crumbly. Sprinkle with 2 tablespoons water; mix until pastry cleans side of bowl. On ungreased cookie sheet, pat pastry into 11-inch circle. Set aside.
- In 3-quart saucepan, heat 3/4 cup water and 1/4 cup butter to rolling boil. Add 1 teaspoon maple flavor and 1 cup Bisquick mix all at once. Stir vigorously over low heat about 1 1/2 minutes or until mixture forms a ball; remove from heat.
- Beat in eggs, one at a time; continue beating until very smooth. Spread mixture evenly over the crust.
- Bake 45 to 50 minutes or until topping is crisp and dark golden brown; cool slightly.
- In small bowl, stir glaze ingredients until smooth and thin enough to drizzle. Drizzle over cofee cake. Sprinkle with pecans.

- Make crumble by adding all of the dry ingredients (flour, brown sugar blend, sugar, salt, and cinnamon) to a medium bowl. Whisk together until well mixed.

- Using a hand mixer, in a large bowl, mix together cake mix, eggs, yogurt (or extra egg), corn oil, applesauce (or pudding packet), cinnamon and water. Beat until just blended.
- Pour cake batter into a greased 9x12 pan. Bake at 350˚ for 18-22 minutes or until a toothpick poked through the center comes out clean.
