Steps:

  • Heat a large nonstick skillet over medium. Evenly sprinkle Parmesan to cover bottom of pan. Cook until cheese is melted and light brown, about 3 minutes; let cool slightly. Using a small spatula, loosen edge and transfer to a plate. Let cool completely, then break into pieces.

Steps:

  • Preheat oven to 325 degrees. Line a large baking sheet with foil or parchment. Top with a large wire rack.
  • Brush each side of each tortilla with a little of the melted butter. Place them on the rack and bake for 20 minutes, flipping halfway through.
  • Top with the shredded cheese and chopped jalapenos.
  • Return to oven and turn up to 500 degrees. Continue to bake for 3-4 minutes, until cheese is melted and bubbling (watch so as not to burn).
  • Cut into wedges and serve immediately.

2 (8 inch) burrito-size flour tortillas

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
  • Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

These cheese crisps are very versatile....sprinkle them into a green salad, use with hors d'oeuvres, serve with cocktails, use as a garnish on macaroni and cheese, or just snack on them! Lots of different cheeses could be used, just make sure you use a hard cheese....if it's too soft it will just melt and spread to form a uniform sheet of cheese in your pan. Play around with the flavorings too...I've just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs likie rosemary or thyme can be added as well.

Steps:

  • Heat the oven to 375°.
  • Shred the block of cheese lengthwise (longer shreds work better) using a box grater with holes about 1/4-inch wide.
  • Place in a medium bowl.
  • Sprinkle with the flour; toss gently with a fork to coat the cheese.
  • Sprinkle with the red pepper, toss again.
  • Place a silicone baking mat or a sheet of parchment paper on a 16 1/2-by-11 1/2-inch sheet pan.
  • Scatter half of the cheese evenly over the mat.
  • Shake the pan gently to even the cheese out. Or, you can spread the cheese mixture into circles, any size you wish, from 3 inches to 10 inches in diameter.
  • Bake until the cheese is molten and golden brown, about 14-15 minutes.
  • Remove from the oven; cool.
  • Blot up any grease with paper towels.
  • Break the crisp into large pieces; arrange on a platter.
  • Wipe off the baking mat and repeating with the remaining cheese.

  • Beat butter and cheese until blended. In another bowl, whisk flour, salt and cayenne; gradually beat into cheese mixture. Stir in Rice Krispies. If necessary, turn onto a lightly floured surface and knead 4-6 times, forming a stiff dough., Divide dough in half; shape each into a 7-in.-long roll. Wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. If desired, top each slice with a pecan half. Bake until edges are golden brown, 14-16 minutes. Remove from pans to wire racks to cool. To Make Ahead: Dough can be made 2 days in advance.
