GREEN GRAPES WITH FETA CHEESE & HONEY
Serve this for dessert or arrange it on a leaf of butter lettuce as a salad. I made this and served it over baby spinach leaves. I'm not a big fan of feta cheese, for me a little goes a LONG way. So I made an extra side of the dressing and poured it over the fruit, and used freshly grated parmesan cheese instead. From Eating Well magazine... NOTE: Prep time is cooking time.

Steps:
- Place feta in a small bowl.
- Drizzle with oil and honey. Add pepper and toss gently.
- Shortly before serving, halve grapes lengthwise.
- Gently toss grapes and pear slices.
- Scatter the feta over the fruit.
- Garnish with basil.

ROASTED FETA WITH HONEY
A drizzle of honey and a blast of heat transform a standard block of crumbly feta into an unexpectedly luscious, creamy spread for pita and vegetables. This, with a hunk of crusty bread and a glass of chilled white wine, is the perfect warm weather supper. If you can't get your hands on thyme honey, the regular sort will do just fine.

- Preheat the oven to 400 degrees. Select a small oven-to-table earthenware dish or a small ovenproof sauté pan lined with aluminum foil to help transfer the cheese to a plate after roasting. Place the feta in the dish and cover with the olive oil. Bake until the cheese is soft and springy to the touch but not melted, about 8 minutes.
- Preheat the broiler. Heat the honey in the microwave or over a pan of simmering water until it is fluid enough to be spread with a pastry brush and then paint the surface of the feta with it. Broil until the top of the cheese browns and just starts to bubble. Season to taste with black pepper. Serve immediately with pita wedges and, if desired, sliced heirloom tomatoes, roasted beets, nuts or pickled vegetables.
BAKED FETA WITH SUMAC & GRAPES

Steps:
- Put the red onion in a bowl and add the vinegar, sugar and a pinch of salt. Massage everything together with your fingers for 1 min - this will slightly pickle the onions. Heat oven to 200C/180C fan/gas 6.
- Scrunch up a sheet of baking parchment and use to line a gratin dish. Add the grapes, drizzle over 1 tbsp olive oil, 1 tsp sumac, most of the dill and some seasoning, then toss everything to coat. Nestle the blocks of feta in among the grapes, then scatter over the onions and any of the pickling vinegar, the remaining oil and sumac. You can now leave in the fridge for up to 24 hrs, or bake straight away.
- Bake for 30-35 mins until the feta is browning and the grapes look juicy. Scatter over the remaining dill, then serve in the middle of the table with bread for scooping up the cheese, grapes and juices.

CRUMBED FETA WITH ROASTED GRAPES AND HONEY - SPICYICECREAM

- Preheat oven to 180°C (350°F). Place grapes in an even layer on a baking tray and drizzle with olive oil. Scatter with salt, pepper and thyme leaves. Roast for 15-20 minutes until the grapes are softened and have released some juice.
- Place the egg into a flat-bottomed bowl and whisk lightly. Add the breadcrumbs and a big pinch of salt to a second bowl. Dip the feta into the egg and then transfer to the second bowl. Press gently into the bread crumbs on all sides to evenly coat.
- Heat olive oil in a fry pan over medium heat. Cook the feta for about 3 minutes each front and back and then carefully turn to cook the other sides until golden brown.
