CHILE-GARLIC EDAMAME
Frozen edamame are a delicious and convenient way to get more protein into your diet. For this recipe, garlic and red pepper flakes are quickly toasted in olive oil then tossed with the cooked edamame for a spicy, healthful kick.

- Cook 1 pound frozen edamame in the pods in salted boiling water until tender, 5 minutes; drain. Heat 1 tablespoon olive oil, 1/4 teaspoon red pepper flakes and 2 sliced garlic cloves in a skillet over medium heat, 1 to 2 minutes. Stir in the edamame, some lime juice and salt.

- Rinse beans and edamame. Combine in a bowl. Chop onion and peppers. Combine in a bowl with vinegar, oil and salt and pepper. Stir into bean mixture. Refrigerate until chilled. Enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil. Cook edamame in the boiling water until tender, about 3 minutes. Drain and chill in the refrigerator.
- Combine napa cabbage, bok choy, vinegar, sesame oil, and salt in a small bowl. Let sit in at room temperature until cabbage is slightly wilted, about 20 minutes.
- Stir edamame and carrots into cabbage mixture. Refrigerate until fully chilled, 1 hour.
- Top edamame salad with sesame seeds and daikon radish before serving.
