EDAMAME WITH CITRUS SALT

Cold edamame topped with coarse salt spiked with orange, lemon, and lime zest. It's a healthy, hearty snack that's just perfect on the go.

Edamame with Citrus Salt image

Steps:

  • Make the citrus salt. Pour the salt in a medium bowl and add the lemon, orange, and lime zest. Using your fingers, mix and rub together the salt and zest, helping to distribute the oils of the peel throughout the salt.
  • Cook the edamame according to package directions. Cool.
  • To serve, sprinkle the edamame with citrus salt and stir if desired. A little salt goes a long way!
  • Store the citrus salt in a sealed container at room temperature. It should keep for several months.

Frozen shelled edamame
Citrus salt
2 teaspoons lemon zest (about 2 medium lemons)
2 teaspoons orange zest (about 1 medium orange)
1 teaspoon lime zest (about 1 medium lemon)
3/4 cup kosher salt

Steps:

  • Pulse red-pepper flakes in a spice grinder until finely ground. Mix with salt and sugar in a small bowl.
  • Bring a large pot of water to a boil. Add frozen edamame, and cook until bright green and heated through, about 4 minutes. Strain, and transfer to a large bowl. Toss with chile-salt mixture, and serve.

1/2 teaspoon crushed red-pepper flakes
1 tablespoon coarse salt
1/2 teaspoon sugar
1 pound frozen edamame in shells

Steps:

  • Boil the edamame according to package directions. Strain and place in a serving bowl. Juice 1 lemon and pour over the top of the beans. Sprinkle with salt and pepper blend. Serve garnished with lemon slices.

Steps:

  • Place edamame in a microwaveable bowl and add 1 tablespoon water. Loosely cover the bowl and microwave two-three minutes, stirring once midway through cooking, until the edamame are thawed and tender. Drain, place on small appetizer plates and sprinkle with kosher salt.

Edamame with Sesame Salt image

Steps:

  • Coarsely grind sesame seeds and salt in a spice grinder, then place in a small bowl. (Alternatively, chop sesame seeds and salt together finely.)
  • Fill a large pot fitted with a steamer insert or basket with 2 to 3 inches water. Bring water to a simmer over medium-high heat. Steam edamame, covered, until hot, 3 to 4 minutes. Transfer to a bowl, and sprinkle with sesame-salt mixture. Serve immediately.
