OLD FASHIONED BUTTERSCOTCH PUDDING
I have tried several "Old Fashioned" butterscotch pudding recipes..and this is the best I have found...and also, by FAR, the simplest.

Steps:
- Combine sugar and cornstarch in medium saucepan.
- Stir in evaporated milk and water.
- Cook over medium heat, stirring constantly, until mixture comes just to a boil.
- Remove from heat.
- Place egg in small bowl; stir in small amount of milk mixture.
- Add to milk mixture; cook, stirring constantly, for 1 minute (be careful, mixture will bubble and might spatter on your hand so use caution).
- Remove from heat. Stir in butter and vanilla extract.
- Pour into dessert dishes.
- Refrigerate for 1 hour or until firm.
- Top with whipped cream.

RICH BUTTERSCOTCH PUDDING
With 3 egg yolks, butter and a generous amount of brown sugar, this is one of my favorite puddings, so why not SPLURGE!

- Melt the butter in a 3-quart heavy saucepan over medium heat. Add the 1/4 cup evaporated milk and brown sugar, stirring constantly; cook 2 minutes.
- Bring to a boil and cook 30 seconds.
- Remove from heat.
- Heat the whole milk in a heavy saucepan over medium heat; cook until tiny bubbles form around the edge (do not boil. Remove from the heat.
- Combine 3/4 cup evaporated milk, cornstarch, salt, and egg yolks in a medium bowl; stir well with a whisk.
- Gradually add hot milk. Stir hot milk mixture into brown sugar mixture.
- Cook over medium heat until mixture comes to a boil ,stirring constantly; cook 1 minute.
- Remove from heat; stir in vanilla.
- Spoon 1/2 cup pudding into each of 6 (6-ounce) ramekins.
- Cover the pudding with plastic wrap; chill 3 hours.

BUTTERSCOTCH PIE
Steps:
- In a saucepan melt butter and add brown sugar. Stir until the mixture bubbles up and looks slightly browner. Add milk to sugar stir to combine well. Whisk in egg yolks with flour and salt. Stir in remaining milk to mixture. When the sugar mixture becomes hot, slowly stir in the egg and flour mixture. Cook over medium heat until the pudding boils up. Turn the heat very low and stir and cook 1 or 2 minutes more. Remove from the heat and stir in the vanilla. Pour cooled butterscotch into pre-baked piecrust. Top the pie with meringue. Bake in a 350 degree preheated oven 15 to 18 minutes until lightly browned.
- For the Crumb Crust: Put the metal chopping blade in place in the food processor beaker. Add the flour, frozen butter, and salt to the beaker. Process for 8 to 10 seconds, turning on and off, until the butter is cut into the flour and the mixture forms very small, flaky granules. Add the lemon juice and eggs to the beaker and process until a ball of dough forms on top of the blades, about 15 seconds. The dough should be damp but not sticky. If it seems too soft, sprinkle with 1 to 2 tablespoons flour and process for an additional 5 to 6 seconds, until well combined. If it feels too dry, sprinkle with a few drops of water and process to blend well. Wrap the ball of dough in waxed paper, plastic wrap, or foil and chill until firm but still malleable.
- For the Meringue: Whip egg whites together with sugar until the peaks are soft. Rolling out the pastry. When the pastry is chilled and firm but still malleable, it is ready to be rolled out. Roll out on a cool surface as possible; a marble slab is ideal. Baking Shell -Blind Baking: Lay the roll out pastry dough into the pan, and line the shell with foil or waxed paper, weight it down with raw rice or beans and bake it in a preheated 425 degree oven for 14 to 16 minutes, until the bottom is set and the edges lightly browned. After the initial baking, remove the shell from the oven, remove the lining and brush the bottom with beaten egg yolk, and return to the oven for 2 minutes. This seals the bottom and prevents a soggy crust. Top the pie with the meringue and bake in a preheated 350 degree oven until the meringue is lightly brown.
PUDDING NO-BAKE OATMEAL COOKIES
My grandmother had made no-bake cookies so much, she was never seen looking at the recipe. This recipe was obtained from a local nursing home and is so easy my 9 year old makes them and the flavor is changeable to your taste. I generally make 2 batches so that we don't have to store half a can of evaporated milk. Our favorite flavors are made with chocolate fudge or butterscotch pudding.

- In 3 quart microwaveable bowl, combine the sugar, butter and evaporated milk. Cook on high power for 2 to 5 minutes, stirring occasionally until the mixture comes to a rapid boil. Allow the mixture to boil undisturbed for 20 to 30 seconds. Remove from heat and stir in the instant pudding and oatmeal. Spoon onto waxed paper lined cookie sheets. Allow to sit at least 15 minutes or until firm.

- Line an 8-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside., In a large saucepan, combine the sugar, milk, salt and remaining 2 tablespoons butter; cook and stir over medium heat until mixture comes to a boil. Boil for 5 minutes, stirring constantly. , Remove from heat; add the marshmallows, chips, nuts and maple flavoring. Stir until marshmallows and chips are melted. Spoon into prepared pan. MEMAW'S PET® MILK PUDDING
This is my mom's Memaw's Pet® Milk Pudding recipe, only done right if cooked on the stove top. I'll always remember her through her recipes more than her pictures. This recipe is great on cold nights, dressed up with cinnamon. A really great comfort food-I've seen and felt it work! I'm Southern and firmly believe in comfort foods. This pudding is great for holidays, but it is also a really special treat my mom would make on really cold nights, or when she was feeling nostalgic about her grandmother. I hope someone tries it and loves it as much as my family does! We pour a lot of heart into it, too. It always has that extra special feeling to it, because we always make it to share with each other.

- Whisk the self-rising flour, sugar, eggs, evaporated milk, and water together in a saucepan placed over medium-high heat. Whisk constantly while bringing the mixture to a boil. Reduce heat to medium-low. Whisking constantly, cook the pudding at a simmer until thickened, about 15 to 20 minutes.
- When the pudding has thickened, stir in the margarine and vanilla extract until thoroughly combined.
