- Preheat oven to 350 degrees F. Grease and flour a 9 1/2 by 5 1/2-inch loaf pan.
- In a large mixing bowl, sift flour, whole-wheat flour, baking powder, and baking soda. Reserve.
- In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.
- Mix or blend until smooth. Slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean.

EXTREME BANANA NUT BREAD 'EBNB'
This is my mom's dense, excellent, and definitely unhealthy banana nut bread recipe. It's always completely gone in minutes. This is great at parties, but hazardous at home. HEALTH WARNINGS: EBNB may be habit forming. A very flexible recipe that will accommodate changes based on what you have on hand. Use any type of fat in place of the butter, such as shortening or oil. It works with either brown or white sugar too.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
- Sift the flour, salt and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Stir in the bananas, eggs, and walnuts until well blended. Pour the wet ingredients into the dry mixture, and stir just until blended. Divide the batter evenly between the two loaf pans.
- Bake for 60 to 70 minutes in the preheated oven, until a knife inserted into the crown of the loaf comes out clean. Let the loaves cool in the pans for at least 5 minutes, then turn out onto a cooling rack, and cool completely. Wrap in aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for 2 hours or more before serving.

EXTREME BANANA BREAD
Extreme Banana Bread (Not For the Faint of Heart...) I don't know which one of the Seven Deadly Sins I'd be, but there are definitely elements of greed ("I want it all!") and gluttony ("More!! More!!") in this recipe. With a basic banana bread at its base, I just kept finding elements I thought would add to and complement the flavors: walnuts, apples, brown sugar and cinnamon streusel, almond extract (my personal fave - I want to bath in it!), but it was the purchase of blueberries for a blueberry peach pie that really lit up my idea light bulb. I know what you're all saying - it's too much! That, my friends, is the reason for the warning. (See recipe title) If you, like me, like more - more flavor, more substance, more sweetness - this is the banana bread for you, extreme banana bread. If you're watching your sugar or your waistline, I'm thinking you might want to graze elsewhere. If not, prepare this and be prepared to enjoy the heck out of yourself!

- Preheat oven to 350 degrees.
- Prep loaf pan - grease with spray, shortening or butter.
- Prepare streusel topping: Blend dry ingredients together. Add almond extract, then cut in butter until mixture is soft and crumbly. Set aside.
- Prepare bread batter: In large bowl combine 1 cup of the flour, the sugar, cinnamon, baking powder, baking soda and salt. Add mashed banana, almond extract, butter or shortening and milk. Mix with spoon until well blended. Add eggs, remaining flour and oats. Beat until blended. Add apples, walnuts and blueberries and fold batter lightly to distribute. (Be careful not to break berries.).
- Pour half of batter into prepared loaf pan. Break up and crumble 2 tablespoons of streusel mixture over top, then add remaining batter to pan. Cover with remaining streusel.
- Bake in 350 degree oven for 55-65 minutes or until toothpick inserted in center comes out clean.
- Makes 1 loaf (16 servings) [Oh, who're we kidding: it makes 1 big serving...].
- The banana bread is good warm or cold, but do yourself a favor and have a slice about 10 minutes after it comes out of the oven!

MOIST & DELICIOUS BANANA NUT BREAD
I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

- Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
- *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!
GREATEST BANANA NUT BREAD EVER
This is the best banana nut bread ever. The crusty top and moist center is heavenly. I'll never make any but this. I make it and give it out at Christmas as mini loafs to all my neighbors and friends. Everyone raves about it. You have to try it.

- Preheat Oven to 325°F.
- Lightly butter and flour two 8" x 4" loaf pans, or 6 mini loaf pans. Baking time for mini's 50 minutes.
- In a large bowl, cream sugar, butter and vanilla until fluffy. Stir in eggs one at a time, beating with each addition.
- Stir in bananas and sour cream.
- In a second bowl, combine flour, soda, baking powder, cinnamon and walnuts; stir into banana mixture just until combined.
- Pour into pans. Bake about 55-60 minutes for large loaf pans or 50 minutes for 6 mini loaves.
- Ovens vary - check bread with toothpick, when it comes out clean remove from oven - cool on wire rack.

VERY MOIST BANANA NUT BREAD
This is a very easy, "no mixer" bread to make. It is very moist and a little heavy type banana bread. The really important thing to remember is using all black bananas to get my same results. I always use 5 medium sized bananas and this recipe makes 2 loaves. Also, I've never used buttermilk, but sour milk instead..a little vinegar added to regular milk. I've used this recipe since 1972 and last year made 32 loaves to give away for Christmas! It's truly a wonderful bread. I only bake it until the toothpick comes out almost clean, as we like it really moist. If you over bake it, or wait til the toothpick is completely clean, the bread will be a lot dryer. I realize some like it this way, so thats why I've given this hint. My family and friends would rather have it a little under done than over. It's so good with coffee, butter/jelly or I like mine just plain. I bake it in tin foil pans and it freezes wonderfully. I try to always have one or two in the freezer for company, or a little gift. This recipe came from a ladies club cookbook. The kind where everyone contributes recipes, they are made into a recipe book and sold to make money for charities. All the cooks are just plain "down home" country gals that produce miracles in the kitchen. It's my favorite cookbook and I've almost worn it out and it can't be replaced. I know there are many banana bread recipes here, so thanks for trying this recipe. I hope you enjoy it!

- Heat oven to 350°. Grease or spray 2 loaf pans.
- In a large bowl, mash bananas with a masher or by well washed hands.
- Dissolve soda in buttermilk-- use a larger container as it will foam up quite a bit.
- Mix all ingredients by hand and add in 1 cup chopped nuts. Bake at 350° for 1 hour, or until toothpick comes out ALMOST clean.
- Totally clean will mean a dryer loaf.
- Let cool 15 minutes after removing from oven and remove from pans.
- Or, let cool, cover with foil, slide into freezer bags and freeze.
- Great when using tin foil pans.
