Steps:
- Preheat oven to 325°. In a 6-qt. stockpot, cook and crumble beef over medium-high heat until no longer pink, 7-9 minutes. Stir in seasoning, tomato sauce and water; bring to a boil. Reduce heat; simmer, uncovered, 15 minutes, stirring occasionally., Spread chips evenly in a greased 15x10x1-in. baking pan; sprinkle with Monterey Jack cheese. Top with beef mixture; sprinkle with cheddar cheese. Bake until bubbly, 25-30 minutes. , Cut into ten 5x3-in. portions. Top each with lettuce and onion. Add tomatoes, sour cream and olives to make eyeballs.

- Heat oven to 350°F.
- Mix meat and seasoning mix; shape into 36 (1-inch) balls. Place in 15x10x1-inch pan.
- Bake 15 to 20 min. or until done (160ºF).
- Fill each taco shell with 1 meatball; drizzle with salsa. Top with 2 meatballs dipped in sour cream. Garnish with olives to resemble eyeballs.

- In a large bowl, combine the melon balls and grapes. In a small bowl, combine the dressing ingredients. Pour over fruit and toss to coat. Cover and refrigerate until chilled.

TACO SALAD
Steps:
- Bring a large saucepan of water to a boil over high heat. Add the corn, and reduce heat to medium; simmer until the kernels are tender, 5 to 10 minutes. Transfer the corn to a plate; let cool. Slice the kernels off the cobs; place in a small bowl, and set aside (you should have about 1 1/4 cups).
- Preheat the oven to 350°F. Spread the tortilla wedges in a single layer on a rimmed baking sheet; bake until crisp, turning once, about 10 minutes. Remove from the oven; let cool, and set aside.
- Make the dressing: In a medium bowl, whisk together the yogurt, juice from 1 lime, cilantro, jalapeño, and salt. Set aside.
- In a medium nonstick skillet, brown the turkey over medium heat, stirring frequently, until no longer pink, about 7 minutes. Stir in the chili powder, cumin, and juice from remaining lime.
- Transfer the mixture to a large serving bowl. Add the lettuce, beans, tomatoes, onion, mango, and reserved corn and tortillas. Toss to combine well. Drizzle with yogurt dressing; serve immediately.

- Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
- Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

SPOOKY EYEBALL TACOS (JOHNNY #5 TACOS)
These are a sight to see. I originally made them after finding the recipe last year for Halloween and have since changed the recipe around to make them more eater-friendly. The smiles you will receive are priceless! Try to find the widest taco shells possible if you are not making your own. We call them "Johnny 5 Tacos" as they resemble the robot from the movie Short Circuit more than they seem spooky. Kids also love to help prepared these!

- MIX meat and seasoning mix. Shape half of the mixture into 24 (1-inch) balls; place in 15x10x1-inch baking pan and bake at 350 F for 15 to 20 minutes or until cooked through.
- Brown the remaining seasoned ground beef and add salsa.
- Fill each taco shell with a thin layer of ground beef, sour cream, lettuce, and tomatoes.
