FABULOUS OREGANO BREAD (OR PIZZA DOUGH)
This is a HUGE hit at any of our dinner parties when I make it as bread. It's absolutely fabulous as pizza dough and is the single most requested recipe in my repertoire.

Steps:
- Place all ingredients in order in your bread machine using the regular bread cycle.
- If you want pizza dough, use the"dough" setting and roll out flat on a floured surface.
- Preheat your oven to 400.
- Spray your cooking pan with Pam.
- You can also sprinkle a little cornmeal on the pan if you wish.
- Lay dough out on your pan and cover with cling film OR apply a little extra olive oil over the surface of the dough.
- Let rise for 1/2 hour.
- Bake for 15-20 minutes.
- Remove from oven, apply toppings and continue baking until toppings are done.
- If you wish to make a freeform loaf: Preheat oven to 350°F.
- Form loaf on a prepared baking sheet, cover with cling and let rise until doubled.
- Bake until golden brown and sounds hollow when thumped (about 30 minutes).
- Remove to a cooling rack and lightly coat with butter while still hot for a tender crust.
FABULOUS FOOD'S PIZZA DOUGH
I found this on FabulousFoods.com and it is The Best pizza dough I've made yet. I just love that you make it all in your food processor with practically zero mess! Perfectly textured, crispy on the outside, soft on the inside without being bread-like. It's from Cheri and was made by her in a year-long friendly competition for the best dough. I'm not very familiar with the website, but I've been trying to find the best dough for months and so far, this is it! I'm reposting it here for safe-keeping! Cheri calls for 2 3/4 cups bread flour and 1/2 cup of semolina flour, but you can also (as I did) just use 3 1/4 cups of plain old white flour. Still awesome. The dough is sticky, don't be alarmed, just slather some EVOO onto your hands and you're set! Makes 2 medium pizza doughs.

- Place very warm water, yeast and sugar in food processor and pulse once or twice to mix. While most recipes will tell you to use lukewarm water when making yeast dough, I find that by the time you take hot water, put it into a measuring cup and then into a food processor, it has cooled significantly. I always use water that is almost too hot to the touch, and have always had great luck with this dough. Let sit while you measure out the dry ingredients.
- After 2-3 minutes you will see small bubbles forming in the liquid in the food processor, which indicates that your yeast is working. Dump in the dry ingredients and turn on the food processor. The machine will go all the work, including the kneading. After about a minute the dough should form into a ball going around in your food processor. Open the machine and take a look. If you think the dough is too wet, you can add a bit a flour, but know that too wet is better than too dry, and the dough will loose some of its stickiness as it rises.
- Place about a tablespoon of olive oil in a large bowl. Take the dough out of the food processor (putting a little olive oil on your hands will keep it from sticking) and form it into a ball. Place in the bowl and turn to lightly coat with the olive oil. Cover with a clean kitchen towel and let dough rise in a warm, draft free place for about an hour or until doubled in size, before rolling out and baking. For a crust with a perfect pizzeria taste and texture, I recommend baking on a pizza stone in a very hot oven (500 - 550°F for about 10 -12 minutes.
PARMESAN OREGANO BREAD (AKA PIZZA BREAD)
The directions fill a loaf pan with balls, for a special presentation. This can also be shaped into s standard loaf or a round loaf. Posting this in response to a request. I have not yet tried it, but I will! Times are estimates.

Steps:
- Dissolve the yeast in the milk; Add salt, 1/4 cup olive oil, 1 tablespoon oregano, and 1/4 cup parmesan cheese.
- Add flour a little at a time; When dough is manageable, turn out dough onto lightly floured surface and knead until smooth.
- Place in bowl lightly oiled with olive oil; Rise for 1 hour in dark, warm place until dough has doubled.
- Knead dough for 2-4 minutes; Divide dough into 20 equal pieces, roll each piece into a ball; Butter large loaf pan and place 14 of the balls on the bottom in 2 rows, 7 in each row; Brush with olive oil; Place remaining 6 balls down the middle on top of the other 14; Brush with olive oil and sprinkle with 1 tablespoon oregano and 2 tablespoons parmesan.
- Cover and let rise for 45 minutes.
- Bake for 35-40 minutes at 400 degrees.
- The balls will produce a beautiful,"mountainous" surface on the bread- a real conversation piece!
OREGANO GARLIC SOURDOUGH BREAD

- Sift flour, salt, sugar and yeast into a bowl. Mix them. Add the olive oil and water.
- Mix it to form a ball of dough with a wooden spoon (hands may be needed).
- Flour a work surface. Knead the dough for five minutes or until smooth and stretchy.
- Grease a bowl and place the dough into it. Cover with a damp cloth and put in a warm place for an hour or until it has doubled in size.
- When dough has risen knead for a few more minutes.
- Now it is ready to be pressed down and turned into a pizza.

- in bowl stir together 1/2 cup warm water, 1tbsp.
- sugar, 1/4 cup flour and yeast.
- Let stand about 5 minutes Measure oats, 4 1/2 cups warm water, whole wheat flour, salt, 2/3 cup sugar, and 2/3 cup oil into bowl with the yeast.
- Mix and gradually add more flour until dough pulls away from sides of bowl.
- Place dough into an oiled bowl and cover with a damp cloth.
- Let rise in a warm spot for 1 hour or until double in size.
- Divide dough into 6 pieces.
- Shape loaves and place in 6 pans.
- Let rise until ready.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. OREGANO AND ONION BREAD

Steps:
- Heat oil in heavy small skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Remove from heat. Cool.
- Pour 1 1/2 cups warm water into small bowl. Stir in yeast and sugar. Let stand until foamy, about 10 minutes.
- Mix 4 cups flour and salt in large bowl. Stir in onion and any oil remaining in skillet. Add yeast mixture and oregano and mix well. Knead briefly in bowl just until dough comes together. Turn out dough onto generously floured surface. Knead until dough is smooth and elastic, adding more flour by tablespoonfuls as necessary to keep dough from sticking, about 10 minutes.
- Oil large bowl. Add dough to bowl, turning to coat. Cover bowl with kitchen towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
- Oil heavy large baking sheet. Punch down dough. Turn out onto floured work surface and knead briefly. Divide into 2 equal pieces. Shape each piece into smooth 6-inch round loaf. Place loaves on prepared baking sheet. Cover with kitchen towel. Let rise in warm draft-free area until double in volume, about 45 minutes.
- Preheat oven to 450°F. Brush each loaf with some of beaten egg. Bake 10 minutes. Reduce oven temperature to 3509°F. Bake until bread is golden brown and sounds hollow when tapped on bottom, about 35 minutes. Transfer loaves to racks and cool. (Can be prepared 1 day ahead. Wrap tightly in foil and store at room temperature.)

- Add all the ingredients to the bowl of a stand mixer. Mix with the hook attachment until the ingredients come together to form a ball. If it is too sticky, add a small amount of flour. If it is too dry, add a bit more water.
