Falafels With Pine Nuts image

Steps:

  • Soak the fava beans in 1 1/2 cups of cold water.
  • Set aside for 48 hours, changing water once in a day.
  • If the weather is hot, change water twice daily.
  • Soak the chickpeas in 1 1/2 cups of cold water for 15 hours.
  • Drain beans.
  • Remove the skins of the fava beans by taking a handful of beans at a time and rubbing both the palms together making the beans rub against one another in order to loosen the skins.
  • Combine the fava beans, chickpeas, chopped onions and garlic in a food processor.
  • Grind till you have a fine paste.
  • Put it in a bowl.
  • Add parsley, cumin, coriander, red chili, salt, pepper, baking soda and pine nuts to the mixture.
  • Mix well and knead it nicely.
  • Keep aside for half an hour.
  • Take a spoonful of the bean paste at a time.
  • Shape into patties about 2 inches in diameter.
  • Arrange the patties in a plate.
  • Keep aside for 30 minutes.
  • Heat sufficient oil in a wok.
  • Once its hot, gently lower the patties and deep-fry them until well-browned.
  • Drain on clean paper towels before serving.
  • To prepare the tahini sauce, put the tahini paste and garlic in a blender.
  • Process for a few seconds.
  • Add lemon juice and water.
  • Process the paste well.
  • Add salt to taste.
  • To serve: Split up a khoubz and place a lettuce leaf in it.
  • Place some tomato slices or sliced onions over the lettuce leaf.
  • Spread some tahini sauce over the onions.
  • Place 2-3 falafels on it.
  • Serve hot.
  • Enjoy!

lettuce leaf, as required

1/4 cup tahini (sesame paste)
1/4 cup water
1/4 cup lemon juice

EASIEST FALAFEL

Super quick and easy - you will probably have all the ingredients in your pantry already! Serve with your favorite sauce! I served mine with spicy mayo, made by mixing 3 tablespoons mayo with 1/2 tablespoon sriracha. It would also be great with tzatziki or spicy mustard.

Steps:

  • Place garbanzo beans, 1/4 cup panko bread crumbs, onion, 1/4 cup olive oil, egg, parsley, curry powder, garlic powder, lemon juice, and black pepper in a food processor or blender. Puree until coarse crumbles form. Blend more panko crumbs into mixture if it is too moist.
  • Roll mixture into balls about the size of a golf ball; place on a plate.
  • Press into patties and coat in panko bread crumbs.
  • Heat about 1-inch olive oil in a skillet over medium heat.
  • Pan-fry patties until crispy, about 3 minutes on each side.

  • To make the raw falafel: Soak 1 cup of the sunflower seeds for 15 minutes, then drain. While soaking, mince the onion and garlic. In a food processor, blend the sunflower seeds until they form a paste, stopping and scraping the bowl often, until crumbly and paste-like. To the bowl of the food processor, add the onion, garlic, cilantro, coriander, cumin, tahini, lemon juice, kosher salt, and a few grinds of black pepper. Blend until uniformly chopped and the mixture is sticky. Then add 2 tablespoons raw sunflower seeds and pulse until the raw seeds are roughly chopped and the mixture becomes sticky and formable. Continue to add another 2 tablespoons raw seeds to come to the right consistency. If the dough is too wet, add a bit more cilantro and raw seeds; if the dough is too dry, add water 1/2 teaspoon at a time. Form the mixture into 16 balls, each about 1 inch in diameter. If time, refrigerate before serving.
  • Make the Best Lemon Tahini Sauce. Reserve extra dressing for later use; it keeps for about 1 month in a sealed container in the refrigerator (bring the dressing to room temperature before serving).
  • Shred the carrots, or peel them into ribbons. Wash the beets and carefully peel them (the red juice stains easily!). Shred the beet in a food processor (preferred) or a box grater (the messy way)
  • To serve, place the greens in shallow bowls. Top with falafel and vegetables, and drizzle with dressing.
