NUTTY FENNEL GRANOLA

Nutty Fennel Granola image

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • Combine the oats, coconut, nuts, cranberries, raisins, candied ginger, egg white, olive oil, honey, maple syrup, fennel seeds, salt, cinnamon, ginger and nutmeg in a large bowl. Spread out on the prepared baking sheet.
  • Bake until toasted, 40 to 45 minutes, removing the tray from the oven every 10 minutes to stir the granola for even toasting.
  • Serve with Greek yogurt, citrus slices, a drizzle of honey, fresh mint and flaky sea salt. Enjoy.

3 cups old-fashioned oats
1 1/2 cups coconut shavings, unsweetened
1 cup chopped nuts, such as pistachios, almonds, pumpkin seeds and walnuts
1/2 cup dried cranberries
1/2 cup raisins
1/4 cup candied ginger chips
1 large egg white, beaten
1/2 cup olive oil
1/4 cup honey, plus more for serving
1/4 cup maple syrup
2 tablespoons fennel seeds, crushed
1 1/2 teaspoons flaky salt, such as Maldon, plus more for serving
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spread oats and coconut flakes onto a rimmed baking sheet.
  • Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
  • Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.
  • Line the baking sheet with a silicone liner or parchment paper. Spread oat mixture evenly onto baking sheet.
  • Bake in the oven until granola is toasted, 8 to 15 minutes. Stir granola and transfer liner and granola to a wire rack to cool completely.

Honey Nut Granola image

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon. Add to dry ingredients; mix well. Spread mixture onto two ungreased baking sheets.
  • Bake in preheated oven, for 10 minutes, remove from oven and stir. Return to oven and continue baking until golden, about 10 minutes. Remove from oven and let cool completely before storing.

  • In a 9-in. square baking pan, combine honey, butter, brown sugar and cinnamon. Stir in oats and bran. Bake at 350° for 25-30 minutes, stirring occasionally, until golden brown. Stir in raisins if desired. Cool. Store in covered container.

Honey crunch granola with almonds & apricots image

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a large pan, heat the honey and oil together until bubbling, then tip in the oats, almonds and cinnamon. Stir well until the oats are well coated, then tip onto 1-2 large baking sheets, spreading the mixture out. Bake for 20-25 mins, stirring halfway, until golden.
  • Remove from the oven and, while still hot, stir in the apricots. Spread out again and press down with a spatula to cool - this will help it to clump together. Once cool, serve with yogurt or milk, and fruit, if you like. Will keep in an airtight container for 3 weeks. See 'Goes well with' for recipes using your granola.
