FESTIVE CRANBERRY CAKE
Each fall here in Alaska, an abundant crop of wild cranberries is ripe for cooking. This cake, a favorite in my family, makes good use of the harvest. What's more, since you can prepare it the night before your Thanksgiving celebration, the recipe is a real time-saver at a hectic time of year. -Gladys Wilson, Anchorage, Alaska

- Preheat oven to 350°. In a bowl, cream butter and sugar. Add eggs; beat well. Combine dry ingredients; add to creamed mixture alternately with buttermilk. Stir in cranberries, dates and pecans. Spread in a greased and floured 10-in. tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool in pan for 10 minutes. Meanwhile, for glaze, heat orange juice and sugar in a small saucepan until sugar dissolves. Invert cake onto a serving plate. With a toothpick, punch holes in cake. Spoon glaze over cake. Cover and refrigerate for at least 8 hours. If desired, top with sugared cranberries and rosemary.

- Cake:.
- Preheat oven to 350 degrees F. Butter or grease a Bundt cake pan well; set aside.
- In a food processor, pulse together 3 cups flour, sugar, baking powder, baking soda, and salt. Add butter and pulse until mixture resembles coarse cornmeal.
- Combine orange juice and grated rind with well beaten eggs. Pour into dry ingredients and mix until just combined.
- Dust the halved cranberries with remaining 1 tablespoon of flour. Carefully fold halved cranberries into batter. Spoon the batter into prepared Bundt pan.
- Bake in preheated oven for 40 to 50 minutes or until a cake tester inserted in center comes out clean.
- Cool bread in pan on a wire rack for 10 minutes before removing to cool.
- Glaze:.
- Add confectioner's sugar to a small mixing bowl. Add milk 1 tablespoon at a time until glaze is spreadable, but not runny. Spread generously over warm cake allow glaze to run down the sides of the bread.
- Cool bread completely before slicing and serving.
- Serve with sugared cranberries, optional.
CRANBERRY UPSIDE - DOWN CAKE
I saw the origianl recipe in a Quick Cooking magazine. It called for fresh or frozen cranberries. I perfer the dried ones, but anyone can surely change it up a bit too. I've been making this cake every Holiday season now for about 4 years. It's always a huge hit. The cranberries make it look so festive, and taste oh so good. I've had many request for this recipe and I hope you enjoy it too!!

Steps:
- Drain pineapple, reserving juice.
- Add water to juice to measure 1-1/4 cups; set aside.
- Pour butter into a greased 13 X 9 X 2 inch baking dish.
- Sprinkle brown sugar evenly over melted butter, then cranberries and walnuts.
- Top with pineapple.
- Keep all fairly even.
- In mixing bowl, combine dry cake mix, eggs, oil and reserved pineapple juice.
- Beat on medium speed for 2 minutes.
- Pour into prepared pan.
- Bake at 350 for 40-45 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before inverting onto a large serving platter.
- (Top will have an uneven appearance).
- Cool down to room temperature.
- Cover with plastic wrap until ready to serve.

- In a small bowl, combine cookie crumbs and sugar; stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 325° for 6-8 minutes or until set. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in the orange juice and zest, vanilla and cinnamon. Add eggs; beat on low speed just until combined. Pour filling over crust. , Return pan to baking sheet. Bake at 325° for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., In a large saucepan, combine the cranberries, sugar and water. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Combine cornstarch and orange juice until smooth; stir into cranberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove from the heat; cool to room temperature. Stir in pecans. Spoon over cheesecake. Refrigerate until chilled.

- Preheat the oven to 350 degrees. Lightly grease the bottom and sides of a 10-inch springform pan.
- Break the eggs into a large bowl and add the sugar. Use an electric mixer on high speed to beat the eggs and sugar together until the mixture is pale yellow and doubles in volume, about 6 to 8 minutes. When you raise the beaters out of the bowl, the mixture should leave ribbons on top of the batter.
- Add the softened butter, cut into cubes, vanilla, and almond extract to the bowl and beat for 2 more minutes, until the butter is completely incorporated and the batter is smooth.
- Using a rubber spatula, gently fold in the flour and cranberries until the dry ingredients are incorporated. The batter will be thick!
