Steps:
- Heat oven to 375°F. Place paper baking cup in each of 36 mini muffin cups.
- Make cookie dough as directed on pouch. In small bowl, place nonpareils. Drop dough by 36 tablespoonfuls; roll in nonpareils. Place 1 in each cup.
- Bake 12 to 15 minutes or until edges are light brown. Cool 2 minutes. Gently place milk chocolate candy on center of each. Cool completely in pan, about 30 minutes. Carefully remove cups from pan.

- Heat oven to 375°F. Spray 36 mini muffin cups with cooking spray.
- In large bowl, mix cookie mix, softened butter and egg with spoon until soft dough forms. Stir in 1/4 cup candy sprinkles. Shape into 36 (1 1/4-inch) balls. Place in mini muffin cups. Press indentation in center of each with end of wooden spoon.
- Bake 8 to 10 minutes or until light golden brown. Immediately repeat indentation into center of each cookie with end of clean wooden spoon to make 1-inch opening, cleaning off end with paper towel when needed. Cool in pan 20 minutes. Loosen edges with small knife if needed. Remove to cooling rack. Cool completely, at least 30 minutes.
- In small bowl, place half of the frosting. Tint red with food color. Place large piping bag fitted with medium star tip on its side. Using large icing spatula, spoon remaining vanilla frosting so it covers half of the length of side of piping bag. Carefully spoon red tinted frosting on top. Insert tip into indentation in each cookie cup. Squeeze bag to fill opening, and pipe about 2 heaping teaspoons per cookie cup. Sprinkle with remaining 2 teaspoons sprinkles. Store loosely covered at room temperature.

FERRERO ROCHER COOKIE CUPS
These truffle-stuffed cookie cups are bursting with hazelnut flavor because the nuts are not only in the truffles themselves, but also in the dough. Make sure that the muffin tin you use is a good nonstick one, because the cookies might be hard to remove otherwise.

- Liberally spray a 24-cup nonstick miniature muffin tin with nonstick cooking spray, then sprinkle each cup with a touch of flour. Shake the muffin tin so that the flour completely coats each cup, then shake out any excess. Set aside.
- Combine the hazelnuts, sugar and salt in a food processor and pulse until the hazelnuts are finely ground. Add the flour and pulse until completely combined. Add the butter and pulse until the butter is finely chopped and the mixture begins to come together, then add the vanilla and egg and pulse until a dough forms. Use a rubber spatula to transfer the dough to a medium bowl. Cover with plastic wrap and refrigerate for 30 minutes.
- Position an oven rack in the middle of the oven and place a large baking sheet on the rack. Preheat the oven to 375 degrees F.
- Divide the dough evenly among the prepared muffin cups (about 1 scant tablespoon each), then use your fingers or the back of a small spoon to flatten the dough in each cup, coming slightly up the sides. Gently press a chocolate hazelnut truffle into the center of each piece of dough (the dough will come up the sides of the truffles but should not come up over the edges of the muffin cups).
- Slide the muffin tin onto the preheated baking sheet, and bake, rotating the baking sheet once halfway through, until the cookies are light golden brown around the edges, about 25 minutes.
- Allow the cookies to cool completely in the muffin tin set on a cooling rack.
- Use a small offset spatula or butter knife to gently coax each cookie out of its cup, then place the cookies on a cooling rack set over a baking sheet.
- Put the chocolate chips in a microwave-safe bowl and microwave in 15-second intervals, stirring after each, until the chocolate is completely melted, about 1 minute total. Transfer the melted chocolate to a pastry bag or resealable plastic bag. Snip off the corner of the bag and drizzle the chocolate back and forth over the top of the cookies. Allow the topping to cool completely before serving.

- Make the panna cotta filling:.
- Pour the water into a small bowl. Sprinkle the gelatin powder over this and set aside to bloom for 5 minutes.
- In a medium pot, add the milk and sugar. Heat over a medium heat whilst stirring until gently steaming. Turn the heat down to low and pour in the gelatin mixture, stir together until the gelatin has melted inches.
- Remove from the heat and pour in the heavy cream.
- Strain into a bowl resting in an ice bath. Let sit for 1-2 hours cool, stirring occasionally, until thick but still pourable. (If it isn't thickening, chill in the fridge for 30-60 minutes to speed it up).
- While the panna cotta filling chills, make the cookie cups:.
- Preheat the oven to 350 degrees F. Spray a non-stick 24-cup mini muffin pan with oil or cooking spray.
- In a large bowl, cream the softened butter and sugar together until smooth. Add the egg, vanilla, salt and baking powder, mix to combine.
- Add the flour and stir to get a thick dough. Fold in the chocolate chips until evenly distributed throughout the dough.
- Divide the dough between the wells in the muffin tin - you should be using about 1 level tablespoon of dough for each well.
- Use your fingertips to press the cookie dough in each well into a cup shape.
- Place in the freezer for 10-15 minutes.
- Bake for 10 minutes - the cookie dough should still be a bit soft in the centre but the edges should be starting to set. They may rise and lose some of their 'cup' shape, this is okay!
- While the cookies are still soft, use the end of a wooden spoon (or the end of a pestle from a pestle & mortar) to push a large indent back into the centre of each cup.
- Return to the oven for an additional 3 minutes.
- Let cool in the pan for a few minutes then remove from the pan using a small spatula or butter knife. Place into a wire rack to cool completely.
- Fill the cups:.
- Transfer the thickened, pourable panna cotta filling to a jug.
- Fill the cooled cookie cups with the panna cotta filling up to the brim.
- Place onto a tray or large plate and transfer to the fridge to chill for at least an hour until the panna cotta has completely set.
- Store in the fridge.

REALLY YUMMY MINIATURE CHOCOLATE CHIP COOKIE CUPS
My girlfriend got me hooked on these, they are similiar to another recipe here but I use a roll of chocolate chip cookie dough.. Very addictive :) Note the peanut butter cups are the miniature ones. If you would like you can also put hershey kisses on some of them but didn't add that in the ingredients. Also I buy the 100 mini size of the reynolds baking cups and use them for this recipe.

- Preheat oven to 350.
- Take your pillsbury chocolate chip cookie dough and cut off enough to roll into a ball and put into a miniature size 1-5/8 inch reynolds baking cups, I also have mini cupcake tins too that I put the liner inches.
- I use the tool from pampered chef to press down on the cookie dough and then you bake them for 12 minutes at 350.
- Take out and place your peanut butter cup on top or kiss.
- I place in the refrigerator for a couple of minutes and then take out to enjoy.
