THE BEST SALMON FISH CAKES
A fail-safe recipe for a speedy fish supper - flaked salmon flavoured with parsley, dill and some secret ingredients

Steps:
- Heat the grill.
- Place 450g floury potatoes, cut into chunks, in a pan of water, bring to the boil, cover and cook for 12-15 mins until tender. Drain and leave to steam-dry, then mash.
- Meanwhile, season 350g salmon fillet and grill for 5-6 mins until just cooked. Cool for a few mins, then break into large flakes.
- Mix the potato, 2 tsp tomato ketchup, 1 tsp English mustard, the zest of ½ lemon, 1 heaped tbsp chopped parsley, 1 heaped tbsp chopped dill and some seasoning. Lightly mix in the salmon, taking care not to break it up too much.
- Shape into 4 large fish cakes.
- Put 3 tbsp plain flour, 1 beaten egg and 100g dried breadcrumbs in 3 shallow dishes. Dip the cakes into the flour, dust off any excess, then dip in the egg, and finally coat in breadcrumbs.
- Heat 4 tbsp sunflower oil in a large pan. Fry the cakes over a medium-low heat for 3-4 mins each side until deep golden and heated through.
- Serve with salad and lemon wedges.

DELICIOUS FETA-CRUSTED SALMON
I first created this dish when my family suggested I try something other than the same tired (yet still yummy) Asian salmon dish. I whipped this up out of ingredients I had on hand. They thanked me profusely. Now I have a new dish to use. It's pretty rich in flavor, but not so high in fat (depending on what kind of ingredients you use). Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and lightly oil. Place salmon onto foil and set aside.
- Mix together feta cheese, mayonnaise, cream cheese, Dijon mustard, balsamic vinegar, salt, pepper, paprika, onion powder, and garlic powder in a bowl until smooth. Spread mixture over salmon, then sprinkle panko over top, covering completely.
- Bake in preheated oven until easily flaked with a fork, about 35 to 45 minutes.

BAKED FETA CRUSTED SALMON

- Preheat the oven to 375 degrees F.
- In a small baking dish arrange the sprigs of thyme along the bottom.
- Wash the fillets and dry them with paper towels. Rub the fish with the extra-virgin olive oil and the lemon juice, and then season with black pepper, to taste.
- Arrange the fillets in the baking dish on top of the thyme. Next, break up the feta and sprinkle on top of the salmon. Add the white wine to the dish and bake for 20 minutes. Remove the fish from the oven and serve.

- Peel the potatoes, cut into chunks and boil until tender.
- Drain and mash (without butter or milk) until smooth and leave to cool for a few minutes.
- Meanwhile, put a little of the oil in a frying pan and when it is heated, add the red pepper and salmon fillet.
- Use a fork to break the salmon into pieces, then cook the fish until it is flaky and the red pepper until it is soft, about five minutes.
- When the mash is cool, season it generously with black pepper and then sift the flour over the top.
- Use a wooden spoon to mix the flour in until it disappears.
- Whisk the egg and add it to the mixture, stirring well.
- Crumble the feta over the top and snip the chives into the bowl.
- Finally add the red pepper and salmon and stir again to mix evenly.
- Dust your hands with flour and form the mixture into patties.
- You can make 12 cookie sized patties or 6 larger cakes.
- Add the rest of the oil to the frying pan and, when very hot, lay out some of the potato cakes but be careful not to overcrowd the pan.
- Fry for three minutes to form a thin, crisp layer, then carefully turn to cook the other side.
- Keep warm in the oven while you finish cooking.
- Serve dusted with parmesan and sprinkled with a few extra chives.
- By the way, if you find forming the patties difficult, you can also just drop the potato mixture into the pan for more irregular but less messy fish cakes.
FETA-SPINACH SALMON ROAST

- Preheat the oven to 350 F degrees.
- In a bowl, combine the cream cheese and feta, mashing and stirring with a fork until well blended. Add the scallions and spinach and combine well. Spread the mixture evenly over 1 salmon fillet. (The filling will be about 3/4-inch thick.) Top with the second salmon fillet. Brush both sides with olive oil, turning over carefully with a spatula, and place on a shallow baking pan. Bake for 20 minutes; test for doneness with a toothpick. To serve, slice carefully with a sharp, serrated knife.

- Peel the potatoes and sweet potato and place in a large microwaveable bowl. Add the lemon juice and 1/4 of the chopped coriander, cover with cling film and microwave on full for 10 minutes / until cooked. (Add a little extra water if required).
- Whilst the potatoes are cooking, gently fry the onion, garlic, chilli, grated lemon zest & coriander in half the oil until the onions are translucent.
- Break up the bread and place in a food processor and blitz into breadcrumbs, adding the Paprika.
- Mash the potatoes adding the remaining olive oil and all of the butter.
- Stir the fried ingredients, remaining coriander, crumbled feta and egg into the mash. (Add salt and pepper to taste).
- Form cakes of your preferred size (If the mixture is too wet to easily form into cakes, add some of the breadcrumbs to improve consistency) and cover with breadcrumbs.
- Either fry gently for 5 minutes each side or place on a baking tray and bake on 180Cm, turning once, for 10-15 minutes (or until lightly browned).

- Thickly grate the potatoes onto a plate, then squeeze handfuls of it to remove any excess liquid. Put it in a large bowl, then add the tuna, capers, spring onion and beaten egg, and season well with ground black pepper.
- Heat half the olive oil in a large frying pan. Divide the potato mixture into 4 and spoon into the pan in mounds, gently pressing down with the back of a spoon. You may have to do this in batches. Cook for 7-10 mins, turning once, until crisp and golden.

- Heat the oil and butter together over a medium heat in a saucepan and add the shallot. Fry for a few mins, then add the flour and stir until you have a thick paste. Stir in the vermouth or sherry. Gradually add the milk, stirring all the time over a low heat until you have a smooth, very thick sauce (a similar consistency to mashed potato). Add the cayenne, nutmeg and lemon zest, season to taste, then remove from the heat. Stir in the salmon, dill and lemon juice. Spread the mixture over a plate (to speed up cooling), cover and chill for at least 1 hr.
- To make the fishcakes, put the flour, beaten egg and breadcrumbs in three separate bowls. Scoop a large spoonful of the fishcake mixture (each spoonful should weigh around 115g) and roll lightly between oiled hands to form a ball or roll, before flattening lightly. Drop into the flour to coat, followed by the egg and then the breadcrumbs.
- Heat enough oil to cover the base of a large frying pan. Shallow-fry the fishcakes over a medium-low heat in small batches for 5-6 mins on either side or until golden brown and crispy. Drain on kitchen paper.
- For the horseradish yogurt, stir the ingredients together in a bowl until smooth and season with a little salt. Serve the fishcakes with a dollop of the yogurt and a fennel salad.

- Put the potatoes into a pan and cover with boiling water. Add a pinch of salt, return to the boil and simmer for 10min or until tender but not breaking up.
- Put the fish in a large frying pan and pour over the milk with 300ml (½ pint) water. Bring to the boil, then cover and simmer gently for 3-4min. Remove from heat and leave to stand, covered, for 10min.
- Wash the spinach and put into a pan with no extra water. Cover and cook gently for 2-3min until just wilted. Drain, cool and squeeze out the excess liquid.
- Drain any liquid from the salmon, then flake into large chunks. Put in a large bowl with the potato mixture. Using your hands or a fork, gently lift the fish and potatoes together so they're just mixed.
- Pour the eggs on to a plate and dust a board with flour. Spread breadcrumbs on a baking sheet. Divide the fish mixture into eight. On the floured board, and with floured hands, shape into eight cakes, each about 2.5cm (1in) thick.
- Preheat the oven to 110°C (90°C fan) mark ¼. Heat the sunflower oil in a large frying pan. To test when it's hot enough, drop in a few dry breadcrumbs - if they sizzle and turn golden, it's ready to use.
