APPLE CROSTATA WITH CHEDDAR CRUST

Cheddar in the pie dough and fresh apples in the filling give this dessert a rustic charm.

Apple Crostata with Cheddar Crust image

Steps:

  • Make the crust: Roll out dough to a 13-inch round, about 1/8 inch thick, on a lightly floured surface. Transfer to a parchment-lined baking sheet. Refrigerate for 20 minutes.
  • Make the filling: Toss together apples, granulated sugar, flour, lemon juice, and cinnamon.
  • Preheat oven to 375 degrees. Spread filling over dough, leaving a 1 1/2-inch border. Fold edges in to form a crust; brush with egg wash, and sprinkle with sanding sugar. Refrigerate until edges are firm, about 30 minutes.
  • Bake crostata until apples are tender and crust is golden, about 1 hour 20 minutes. Let cool slightly. Brush apples with apricot preserves.

1 disk Cheddar Pie Dough
All-purpose flour, for surface
1 large egg, lightly beaten for egg wash
Coarse sanding sugar, for sprinkling
2 tart apples, such as Granny Smith or Gala, plus 2 McIntosh apples, peeled, cored, and sliced into 1/2-inch wedges
1/2 cup granulated sugar
2 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
1/4 teaspoon ground cinnamon
1/4 cup apricot preserves, warmed

Steps:

  • Heat oven to 400°F.
  • In large bowl, with a fork, toss together piecrust mix, 1/2 cup of the cheese and the apple juice; shape into a ball.
  • Roll out on a floured surface to 14-inch circle.
  • Roll pastry back onto rolling pin; unroll onto a large baking sheet.
  • In a large bowl, toss together 1/2 cup of the shredded cheddar, apples, sugar, cornstarch and nutmeg.
  • Set aside.
  • Sprinkle remaining 1/2 cup cheddar cheese onto center of crust, leaving a 3-inch border.
  • Mound apple mixture on top of cheese.
  • Fold edge of crust up and partway over filling.
  • Brush crust with egg yolk/water mixture.
  • Bake 35-40 minutes until crust is lightly browned and apples are tender.
  • Cut into wedgest and serve warm.

  • Add the flour, sugar, thyme and salt to a food processor and pulse just until combined. In a small bowl, whisk mix together the egg, vinegar and water. Add the cold butter pieces and cheddar into the food processor and pulse until small coarse crumbs remain. Sprinkle the water/egg mixture over the flour and pulse again until the dough comes together.
  • Remove the dough with your hands and wrap it in plastic wrap. This dough makes enough for 2 galette crusts, so you can either separate it into 2 sections now, or separate it after it’s refrigerated. Refrigerate the dough for 30 minutes. (The other dough can be thrown in the fridge for a few months!)
  • Add the sliced apples to a bowl. Sprinkle the apples with cornstarch, sugar, cinnamon, ground ginger and salt. Toss the apples well and let them sit for 10 minutes.
