Melon Feta Bites image

Steps:

  • Cut the feta into 24 cubes that are a little smaller than the melon cubes.
  • To assemble the bites, set 1 piece of feta on top of each piece of honeydew, cantaloupe and watermelon and secure it with a toothpick. Place them on a serving plate and drizzle the balsamic glaze over the top. Garnish with the basil.

One 12-ounce block feta cheese
1/2 honeydew melon, seeded, peeled and cut into eight 1-inch cubes
1/2 cantaloupe, seeded, peeled and cut into eight 1-inch cubes
1/4 small seedless watermelon, peeled and cut into eight 1-inch cubes
3 tablespoons balsamic glaze

Steps:

  • Preheat oven to 450 degrees.
  • Peel onions, leaving root end intact.
  • Trim top third of each onion and save for another use.
  • Arrange onions, cut side down in an 8" square baking dish that has been sprayed with cooking spray.
  • Add chicken broth to pan and cover with foil.
  • Bake for 30 minutes, uncover and bake an additional 30 minutes.
  • Carefully turn onions over and bake for 30 more minutes until onions are soft and liquid has almost evaporated.
  • Preheat broiler.
  • Combine feta, breadcrumbs, thyme and pepper.
  • Gently pat cheese mixture evenly onto cut sides of onions.
  • Broil until cheese begins to brown - about 1 minute.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets with 2 tablespoons olive oil each.
  • Distribute zucchini, carrots, red bell peppers, potatoes, cherry tomatoes, black olives, and green onions between the 2 baking sheets. Season with garlic, oregano, thyme, salt, and pepper. Place 1 rosemary sprig and 1 bay leaf on each baking sheet.
  • Bake in the preheated oven until vegetables are lightly browned and easily pierced with a fork, 25 to 35 minutes. Remove from oven, distribute feta evenly between the 2 baking sheets, and return to oven. Bake until feta is slightly melted, 5 to 10 minutes.
