THE BEST FOCACCIA
It's easy to make classic focaccia at home. Our version is airy and slightly chewy, with a delicate golden crust. A drizzle of salt water over the dough during the final rise gives the bread a deeper flavor.

- For the dough: Whisk together the flour, yeast and sugar in the bowl of a stand mixer. Using the dough hook on low speed, stir in the warm water and 2 tablespoons of the olive oil, mixing until the flour is completely moistened. Let stand 5 minutes.
- Add the salt and knead on medium speed for 5 minutes. (The dough will tighten up, then begin to relax. After 5 minutes it will be very wet and stick to the bottom of the mixer but not the sides.)
- Rub 2 tablespoons olive oil around the bottom and sides of a large mixing bowl (big enough to hold at least double the volume of the dough). Using a scraper or spatula, transfer the dough to the bowl, flipping once to coat completely with oil. Cover with plastic wrap and let sit until doubled in size, about 2 hours.
- Pour the remaining 1/4 cup olive oil into the bottom of an 18-by-13-inch rimmed baking sheet. Use your hands to evenly distribute the oil along the bottom and up the sides. Scrape the dough into the baking sheet, flattening it slightly with your hands. Flip the dough once and gently stretch it to fit into an even layer in the baking sheet. (The dough may not stretch to the edges at this point. If it starts to pull back, let rest 10 minutes and re-stretch, making sure to pull from the center as well as the edges to get an even thickness.) Use your fingertips to make dimples over the surface of the focaccia, pressing firmly but not so hard you make holes in the dough.
- For the brine and finish: Dissolve the kosher salt in 1/3 cup warm water. Drizzle over the surface of the focaccia, letting it pool in the dimples. Cover loosely with plastic wrap that has been lightly sprayed with nonstick cooking spray. Let sit in a warm place for 45 minutes to relax and rise again.
- Meanwhile, preheat the oven to 450 degrees F.
- Remove the plastic wrap from the dough and sprinkle with flaky sea salt. Bake, rotating the baking sheet once halfway through, until the focaccia is deep golden brown on the top and bottom, 30 to 35 minutes. Drizzle with the olive oil and let sit for 5 minutes. Use a spatula to remove the focaccia to a wire rack to cool completely.

- Preheat oven to 325 degrees F (165 degrees C). Press one package crescent roll dough into a 9-inch baking dish; cut remaining package crescent roll dough into 1-inch strips.

- Cook and peel the potatoes in a pot with water (you will need to reserve 150 ML of the water). Once the potatoes are cooled, pass them through a ricer, into a large mixing bowl.
- Meanwhile proof the yeast with some of the reserved WARM potato water (about 1/4 cup) and 11/2 tsp sugar. Let stand for 5 minutes until foamy.
- Add the flour, and mix until crumbly. Add the yeast mixture, the melted margarine and slowly add the remaining potato water. At this point you can either mix by hand or put it in your Kitchen Aid mixer with the bread hook attachment. Be careful when mixing the water, because the dough consistency must not be too dry or too wet, it should be tacky to the touch and come together into ball. Keep kneading until a smooth ball forms.
- Place the dough in a well greased bowl, and cover it with seran wrap or a towel. Place in a warm spot to rise -- I usually put it in my oven to avoid drafts. Let is rise for about one hour or until doubled in size.
- While the dough is rising assemble the filling. Mix all the ingredients together and set aside.
- Grease a 12 inch sping form pan. Se aside.
- Preheat oven to 350 degrees.
- Once the dough doubles, take it out of the bowl and gently deflate it and divide the dough in half. Place the first half in the mold covering th eentire bottom. Put the filling on top of the dough but leave 1/4 inch border so as the filling does not touch the sides. Place the second half of the dough on top of the filling.
- Put the sliced tomatoes on top of the second half of the dough, sprinkle with salt and drizzle with olive oil. Bake for about 40 minutes or until done.
HAM, CHEESE & POTATO PIE

- Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
- Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
- Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

- In a greased 10-in. quiche dish or pie plate, layer the ham, Swiss cheese, bacon, cheddar cheese, onion and green pepper. Place the remaining ingredients in blender in the order given; cover and process for 35-40 seconds. Pour over the meat, cheese and vegetables; do not stir. , Bake, uncovered at 350° for 30-35 minutes or until set and lightly browned. Let stand for 5 minutes before cutting.
