BAKED EGGS IN SWEET POTATO BOATS

This breakfast recipe is a great way to use up extra sweet potatoes. Take roasted sweet potatoes, make a hollow for an egg, bake and top with an herby relish.

Baked Eggs in Sweet Potato Boats image

Steps:

  • Preheat the oven to 375ºF.
  • Slice each baked sweet potato in half lengthwise and scoop out enough of each inside to make room for an egg. Brush with the oil inside and out.
  • Arrange the sweet potatoes in a baking dish and crack an egg into the hollow created in each sweet potato. Sprinkle with the salt, then transfer to the oven. Bake for 8-10 minutes, until the eggs are set to your liking.
  • Meanwhile, make a relish by combining the parsley, cilantro, capers, raisins, shallot, and lemon juice in a small bowl. Taste and add vinegar a little at a time until just tangy enough for your taste buds.
  • Serve each egg boat topped with relish.

2 whole fully baked sweet potatoes (medium or large)
2 Tbsp. extra-virgin olive oil
4 eggs
½ tsp. salt
¼ cup minced fresh parsley
¼ cup minced fresh cilantro
2 Tbsp. capers
2 Tbsp. raisins, roughly chopped
1 small shallot, minced
Juice of 1 lemon
About 1 Tbsp. red wine vinegar

Steps:

  • Heat oven to 400° F. Stir Sauce Mix, boiling water and milk with whisk in 2-quart casserole. Stir in Potatoes and remaining ingredients.
  • Bake uncovered about 35 minutes or until potatoes are tender. Let stand 5 minutes before serving (sauce will thicken as it stands).

  • Prick each potato a few times with a fork, then rub the potato skins lightly with olive oil. Place the potatoes on a baking sheet and cook for 45 minutes to 1 hour, until the potatoes are fully cooked and a knife inserted through the potato meets with no resistance. Transfer the potatoes to a rack and let cool until you can touch them without burning yourself. Slice the potatoes in half lengthwise, then scoop out the interior of each half to make a boat, leaving about 1/4 to 1/2 inch of potato attached to the skin. Place the boats on a clean baking sheet or in a casserole dish. (Save the scooped-out potato to make mashed potatoes or to reheat with butter or sour cream as a side dish.) Lightly whisk the eggs, milk and salt together in a bowl. Melt the butter in a large cast iron or nonstick skillet over medium low heat, swirling until it completely coats the bottom of the pan. Pour in the eggs and cook undisturbed for about 2 minutes, until a layer of cooked egg forms across the bottom
  • The next morning — reheat and serve:Reheat the potatoes in a 350-degree oven for about 15 minutes until warmed through. Place toppings into bowls and arrange buffet-style on a table. Let guests top their own potato boats with their favorite toppings and eat immediately!
