PUMPKIN TRES LECHES CAKE
My birthday is at the end of October and this is my absolute favorite birthday cake. It is not soupy but extremely moist and delicious. I poke the holes with a straw, my daughter uses a pencil. Both work well. Make it the day before, so it can absorb the three milks.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch rectangular baking pan.
- Combine sugar and butter in a large bowl using an electric mixer. Add eggs one at a time. Add pumpkin, sour cream, and vanilla extract to the batter while still mixing.
- Combine flour, baking soda, cinnamon, salt, nutmeg, cloves, and ginger in a bowl. Add 1/2 of the mixture to the pumpkin batter and mix until well combined. Add remaining flour mixture to the batter and mix on medium-high speed for 2 minutes more. Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 55 to 60 minutes.
- Meanwhile, combine evaporated milk, half-and-half, and sweetened condensed milk in a bowl. Set tres leches aside.
- Remove cake from the oven and let cool 15 to 20 minutes. Poke a generous amount of holes in the cake using a drinking straw, making sure to get the corners and sides as well. Pour tres leches mixture on the cake, cover with plastic wrap, and cool in the refrigerator for 1 hour to overnight.
- Before serving, add whipped topping to the cake and sprinkle cinnamon on top.

- **Note, as with all quick breads, make sure not to overmix the batter, or you will end up with a coarse, tough crumb.
- Preheat oven to 325°; lightly butter the bottom and sides of a 9 x 5 inch loaf pan.
- This recipe is easily mixed by stand mixer fitted with the whisk attachment or by hand with a whisk.
- Sift the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves into a mixing bowl; set aside.
- In another bowl, beat together the pumpkin puree, oil, sugar, and salt on medium speed until well mixed.
- Add in eggs, one at a time, mixing well after each addition until incorporated before adding the next egg.
- Scrape down the sides of the bowl with a rubber spatula.
- On low speed, add in the flour mixture and beat just until combined.
- Scrape down the sides of the bowl, then beat on medium speed for 5-10 seconds to make a smooth batter.
- The batter should have the consistency of a thick puree.
- Transfer batter into loaf pan; smooth the surface with an offset spatula.
- Sprinkle evenly with sugar.
- Bake about 1 hour, or until a cake tester or pick comes out clean.
- Let cool in the pan on a wire rack for about 20 minutes, and then invert onto the rack, turn right side up, and let cool completely.
- Serve at room temperature; will keep at room temperature if well wrapped, for 4 days; in the refrigerator for about 1 week.
PUMPKIN-HAZELNUT TEA CAKE
If pumpkins are in season, roast a small pie pumpkin and puree the flesh in a blender or food processor for this loaf cake. Otherwise, use canned pumpkin. This cake makes a nice holiday gift. Points 3.

- Preheat the oven to 350 degrees.
- Lightly coat an 8-by-4-inch loaf pan with cooking spray.
- In a large bowl, using an electric mixer on low speed, beat together the canola oil, pumpkin puree, honey, brown sugar and eggs until well blended.
- In a small bowl, whisk together the flours, flaxseed, baking powder, allspice, cinnamon, nutmeg, cloves and salt.
- Add the flour mixture to the pumpkin mixture and, using the electric mixer on medium speed, beat until well blended.
- Pour the batter into the prepared pan.
- Sprinkle the hazelnuts evenly over the top and press down gently to lodge the nuts into the batter.
- Bake until a toothpick inserted into the center of the loaf comes out clean, about 50 to 55 minutes.
- Let cool in the pan on a wire rack for 10 minutes.
- Turn the loaf out of the pan onto the rack and let cool completely.
- Cut into 12 slices to serve.

- For crust: Toast nuts in oven for 10 minutes at 350.
- Cool slightly and rub off skins.
- Place nuts in food processor and pulse until coarsely chopped.
- Add sugar and process until nuts are finely chopped, but not greasy.
- Combin nut mixture with butter.
- Pat into bottom of 9" sprinform pan and bake at 350 for 10 minutes.
- Cool before filling.
- For filling: Stir together sugar, spices, and cornstarch.
- Beat cream cheese until smooth.
- Gradually add sugar mixture, scraping sides of bowl often.
- Beat in eggs 1 at a time, beating well.
- Beat in pumpkin until just blended.
- Pour into crust-lined pan.
- Place pan of water in bottom of oven.
- Bake cake at 350 degrees for 30 minutes.
- Reduce oven to 300 and bake another 30 minutes.
- Remove cake from oven and place on cooling rack.
- Cover with a large bowl or pot so that it cools slowly.
- Cool completely before serving.
HUNGARIAN FLOURLESS HAZELNUT CAKE
This cake was traditionally a birthday cake in my friend's home. Her mother is from Hungary and only has this recipe in her head! Now it will be preserved.... Note: hazelnuts may be toasted or untoasted. The skins may be removed or left on.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour a 9-inch springform pan. Grind hazelnuts until very fine. Add baking powder and set aside.
- In a large bowl, whip the egg yolks with the sugar until pale yellow in color. Beat in the ground hazelnut mixture.
- In a separate CLEAN bowl, with a CLEAN whisk, whip the egg whites until stiff. Quickly fold 1/3 of the egg whites into the yolk mixture, then add the remaining whites and fold in until no streaks remain.

- Preheat oven to 350 degrees. Beat egg yolks and sugar until thick and sticky. Grind the nuts finely (but not too fine) and toast them lightly.
- Beat the egg whites until stiff and mix with the bread crumbs. Fold in the sugar-egg yolk mixture and the nuts.
- Butter and lightly flour a nine-inch spring-form pan. Pour batter into pan and bake for 30 minutes. The cake is done when a skewer inserted in the center comes out clean.

When the syrup hardens, decorate the cake with the nuts so that there is one hazelnut for each serving.

- Heat oven to 350°F. Grease and flour 2 (9-inch) round cake pans, or spray with baking spray with flour. Reserve 1 cup pumpkin for pumpkin cream; set aside.

Spread reserved pumpkin cream on top of cake. Sprinkle with 1/2 cup chopped hazelnuts. Refrigerate 1 hour before serving. Refrigerate any remaining cake.

- Preheat oven to 350 degrees.
- Line 42 miniature muffin cups with 1 1/2 inch bon bon papers or small baking cups.
- In a medium bowl, combine oil, egg, sugar, pumpkin and water.
- Add flour, baking soda, baking powder, salt, cinnamon, cloves and nutmeg, blend well.
- Stir in chopped pecans and dates.
- Spoon into paper baking cups, filling almost full.
- Top each with a pecan or walnut half.
- Bake 15-17 minutes or until a wooden pick inserted in centre comes out clean.
- Remove from muffin cups, cool on racks.
HAZELNUT TORTE
This is an excellent, excellent cake, although not inexpensive to make. You can make it dairy free, just don't use butter on the pans. It can also be made gluten-free, if you use rice flour. I have not given instructions for icing it, but it should be iced and generally presented quite formally; this is a special occasion cake. I like either a chocolate frosting or glaze on this. Also I have tinted and rolled out marzipan which I then cut with cookie cutters and used to decorate the iced cake. If I put a chocolate glaze on it, I like to add a thin layer of apricot jam over the cake first. "Go nuts!" (Prep time does not include icing or decorating the cake.)

- Line the bottom of 2 round 9" cake pans with parchment paper.
- Butter (or oil) and flour them, including the parchment paper on the bottoms.
- Preheat the oven to 350°F.
- Blend 1/2 of each- that's 1/2 of each- of the nuts, sugar, flour and baking powder in a food processor until the nuts are powdered and everything is well blended.
- Add 4 of the eggs and process well.
- Pour into one of the cake pans.
- Wash and dry the food processor parts.
- Repeat with the other half of the ingredients and the other cake pan.
- Bake for 30 to 35 minutes, until a toothpick comes out clean. DO NOT jiggle the pans during baking.
- Cool in the pans for 10 minutes and then remove them carefully to a rack to finish cooling.
