FIRE ROASTED TOMATO SAUCE
If you have not tried fire roasted tomatoes, you are really missing out. In my opinion, the roasting brings out the sweetness of the tomatoes and it is much less acidic. This recipe makes enough for about 3/4 to 1 pound of pasta. A wonderful tasty meal in 30 minutes.

Steps:
- Saute garlic and onion lightly in olive oil.
- Remove from pan and place in blender with tomatoes; blend and set aside.
- In same pan as onion mixture was cooked, crumble and saute Italian sausage til browned.
- Add tomato mixture and 8oz can of sauce and water to pan.
- Salt and pepper to taste and add chopped basil.
- Simmer for 30 minutes; add to pasta and enjoy!
- Note: Be careful how much salt you add - the sausage is salty also.

SUNNY'S RED FIRE SAUCE
Steps:
- Preheat the oven to 400 degrees F.
- On a large baking sheet with sides, add the jalapenos, serranos, bell peppers, onions and tomatoes. Place the garlic under the cavities of the peppers to shield them from direct heat. Roast in the oven for 15 to 20 minutes.
- In a medium pot set over high heat, add the vegetables from the roasting pan, the vinegar, and enough water to just cover the vegetables. Bring to a hard boil, and boil until the liquid is reduced by half, 15 to 20 minutes.
- Remove the pepper stems from the pot. Pour the remaining vegetables and liquid from the pot to a blender, and blend until smooth. Wet a paper towel with water and squeeze out as much water as possible. Line the bottom of a fine mesh sieve with the paper towel in one layer. Place the sieve over a large bowl. Pour in the puree from the blender and let the puree slowly drip into the bowl beneath, about 30 minutes.
- Discard any remaining pulp. Add the sugar and stir. Taste the hot sauce and add salt, if needed. Refrigerate for up to 2 weeks.

" FIRE" SAUCE
I can't seem to make enough of this sauce--and I triple the recipe every time. My family uses it on eggs, hash browns, taco's and burritos (of course). So, if you like this type of thing, this is the sauce for you!

Steps:
- Combine the tomato paste and water in a saucepan.
- Whisk until smooth.
- Add the remaining ingredients to the tomato mixture.
- Heat over medium/high heat until it begins to boil.
- Continue to cook, stirring often, for 4 to 5 minutes.
- Remove from heat.
- When sauce has cooled, pour into a glass airtight container and refrigerate.
- Stores well in the refrigerator.
5 ALARM SAUCE
Steps:
- Combine the hot sauce, margarine or butter, cayenne pepper, chile flakes, horseradish, jalapenoes, habaneros, cumin, garlic, onion and black pepper in a food processor and mix on medium speed until all the ingredients are well mixed. Reserve the hot sauce to toss with chicken wings.
- Cook's Note: Be sure to wear gloves when cutting the jalapeno and habanero and do not touch your face after handling the seeds or cut up peppers to avoid irritation!
RED CHILE FIRE AND ICE SAUCE

- Add 4 cups of water to a medium pot over high heat and bring to a boil. Put the ancho chiles in a medium bowl and pour in the boiling water. Use a plate to weigh down the chiles so they remain submerged. Soak until softened, about 20 minutes. Add the chiles, garlic, 2 tablespoons of the chile soaking water, and the sour cream to a blender and blitz until smooth. Add more of the soaking water, if needed, for consistency. Season with salt and pepper, to taste. Transfer to a bowl or jar and store covered in the refrigerator.
CRACKLING PORK SHANK WITH FIRE CRACKER APPLE SAUCE
Steps:
- Mix together sugar and salt. Score skin on the pork shanks and dust generously with salt and sugar. Place in the refrigerator and let cure for 24 hours.
- Slowly melt the lard in a large saucepan to 225 degrees F. Add the pork shanks and cook for 2 1/2 hours, or until done. Carefully remove from the heat and cool.
- Preheat the oven to 450 degrees F.
- Place the pork in a baking pan and bake for 10 minutes.
- Heat the lard to 350 degrees F. Add the pork to the oil and fry until crispy.
- While pork is frying, add sauerkraut to a saucepan and heat. Add 1 cup of the pineapple mustard glaze, poppy seeds, salt, pepper, and chives and remove from the heat. In a separate pan, reheat the remaining pineapple mustard sauce.
- On 4 large plates, arrange sauerkraut and top with crispy pork. Drizzle pineapple glaze on side, and don't forget the Firecracker Applesauce
- Put all ingredients except for garnishes in a saucepan. Cover and simmer until apples are tender. Remove the cinnamon stick and bay leaf. Puree ingredients in blender or with a hand mixer.
- Strain through a fine sieve while sauce is still hot. Add diced apples. Cool applesauce. Garnish with serrano peppers and adjust seasoning with salt and pepper, to taste.
- Sweat onions in mustard oil. Do not color. When translucent, add pineapple juice.
- Make a sachet with the bay leaf, peppercorn and add to the pan. Add the mustard.
- Mix arrowroot with 2 tablespoons of water and stir to dissolve. Add arrowroot mixture to the pot and bring to a simmer. Simmer 10 minutes.
- Adjust seasoning with salt and pepper and strain.
RING OF FIRE HABANERO HOT SAUCE
A basic, mustard based hot sauce recipe using habanero peppers, that can be tailored to be extremely hot for braver souls or more mild for the sane folks out there. Goes well with anything, especially fried chicken or fish.

- Heat oil in a medium frying pan over medium heat.
- When ready, add the deseeded peppers, sauteing lightly, 2-3 minutes each side.
- Remove peppers from heat, put in blender, add remaining ingredients.
- First, set mixture to "chop" until well chopped, then switch to liquefy or similar setting until well blended. This typically should be about 2 and a half to 3 minutes.
- Empty mixture into the sauce pan, bring to a medium boil. Boil for 5 minutes.
- Remove from heat. Carefully transfer to your storage container.

- Combine the zest and the juice of the orange with all the ingredients except the seeds in a bowl and mix well.
- Toss the sesame, cumin and fennel seeds together in a saucepan with no oil and cook on high heat for a few minutes (the seeds will pop and brown).
- Toss the toasted seeds into the sauce.
- Let the firecracker sauce stand for at least two hours before serving.
