PINEAPPLE CREAM PIE

This is my Favorite pie. It is adapted from my mothers old recipe.The amount of milk is aprox. You just add enough to equal 3 Cups of liquid, and don't worry if it curdles a little when you add the pineapple juice.it doesn't hurt a thing. Note: This works well as a pudding as well.

Steps:

  • Mix sugar,salt,cornstarch and flour well.
  • Place reserved pineapple juice in measuring cup and add milk to equal 3 cups liquid.
  • Add to dry ingredients slowly.
  • Bring to a boil and allow to boil about 2 minutes.
  • Add some of hot liquid to egg yokes mix well and return to pot.
  • Boil another 2 minutes.
  • Remove from heat and add pineapple, vanilla and butter mix well.
  • Allow to cool about 5 minutes and pour into crust.
  • Serve as is or with whipped cream.

  • Mix sugar, pineapple and eggs in a saucepan. Let come to a boil just long enough to cook eggs. Remove from heat and stir in lemon jello. Let cool thoroughly.
  • Chill evaporated milk just until icy. With electric mixer beat chilled evaporated milk until fluffy. Fold chilled milk into cooled mixture.
  • Pour into 2 graham cracker pie crusts and let pie cool completely at least 6 hours before serving. May be frozen and kept until serving.
  • Cooking time does not include chilling time.

  • Line a 9-in. deep-dish pie plate with pastry; trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until lightly browned. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat.   • Bring milk just to a boil in a 1 1/2- to 2-quart heavy saucepan. Whisk together yolks, remaining 1/4 cup plus 2 tablespoons sugar, and a large pinch of salt in a bowl, then add hot milk in a stream, whisking. Pour custard back into saucepan and cook over moderately low heat, stirring with a wooden spoon, until custard registers 170 to 175°F on thermometer, 2 to 3 minutes. Immediately pour custard through a very fine-mesh sieve into a bowl, then stir in pineapple mixture and vanilla and cool to room temperature, stirring occasionally. Stir in cream, then chill custard, covered, until very cold, about 4 hours.

Steps:

  • In a heavy saucepan mix together the pineapple, undrained and the sugar and cornstarch.
  • Bring to a boil over medium heat.
  • Boil for 2 minutes, stirring constantly.
  • Add the butter, stir until melted.
  • Remove from heat, cool to room temperature while oven is preheating to 425°F and prepare the pie crust in a 9-inch pan.
  • Put the cooled filling into the prepared pie crust.
