Sweet potatoes at their easiest! The potatoes slices need to be in single layer against the pan, not on top of one another. Great for a dinner party! Herbes de Provence with thyme or rosemary sprigs can be used instead of just thyme leaves. Serve warm or at room temperature with sprigs for garnish.

Steps:

Preheat oven to 450 degrees F (230 degrees C).
Combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes in a bowl until evenly coated. Arrange coated sweet potato slices in a single layer on a rimmed baking sheet or 9x13-inch baking dish.
Place baking sheet on the top rack of preheated oven; roast until sweet potatoes are tender and slightly browned, about 40 minutes.

Steps:

Wrap sweet potatoes in foil and bake on a grill above a hot fire until soft to the touch about 35 to 45 minutes.
Mix the butter, pineapple, honey, and nutmeg.
Cut a slit in each potato scooping out some of the insides and mixing with this.
Season with the salt and pepper.
Fill the potatoes with this and wrap securely in the foil.
Then heat for 15 minutes on the grill.

Steps:

Rub each potato with a little oil and salt, then wrap in a double layer of foil.
As soon as the barbecue coals are glowing red, put the potatoes directly on them. Cook for 15 mins, turn with tongs, then cook for 15 mins more. Remove one, unwrap and check it is cooked through.
Peel back the top of the foil from each potato, split open and top with a spoonful of yogurt and a few spring onion slices.

Steps:

Wash & dry yams.
Coat outside with olive oil.
"Bake" in a medium hot grill 45-60 minutes or until done.
You can also bake in a preheated 400F oven.
While the yams are cooking, melt the butter in a small dish.
Add the sugar & spices and stir until combined.
Refrigerate until firm, serve with the yams.
