FLATHEAD FILLETS WITH A TARRAGON BUTTER

This is a very simple dish, it does not take much time to make, is really healthy and looks wonderful. When I lived in Australia I used to make this with flathead fillets, but these fish are native to Australia, so now I have moved I have had to adapt. The other night when I made these I used really small fillets of perch, so adapt the recipe for what you can get, I have also made this with small sea brim fillets, so it is versatile, just make sure they a little fillets.

Flathead Fillets With a Tarragon Butter image

Steps:

  • Peel sweet potato and cut into thick slices (about 2cm each slice). Boil steam or microwave until just tender. Heat some oil in a pan, add sweet potato slices and brown on both sides.
  • Mix flour with some salt and pepper, sprinkle fish with garlic on both sides, dip fillets into flour, shake off any excess.
  • Add fillets to a heated pan and cook until browned on both sides, remember they are small fillets so cooking time will be quick.
  • Boil, steam or microwave the asparagus and snow peas until just tender.
  • Mix tarragon with melted butter.
  • To Serve: Divide sweet potato among plates, top with vegetables, then place fish on top of them. Drizzle combined melted butter and tarragon over.

12 -16 small fish fillets, flathead if you live in OZ (I say 12-16 depending on whether you want to do 3 or 4 fillets per person, I prefer 4 so take your p)
2 tablespoons plain flour
2 -4 teaspoons garlic powder (Depending on personal taste.)
2 medium sweet potatoes (about 500g in weight.)
salt and pepper
200 g baby asparagus
200 g snow peas
80 g melted butter
1 1/2 tablespoons tarragon, coarsely chopped

FLUFFY CATHEAD BISCUITS WITH HONEY BUTTER

Cat head (or cathead) biscuits are a Southern staple whose name refers to their large size (about as big as a cat's head). The dough for this hand-rolled biscuit recipe is made by incorporating flour into the wet ingredients, instead of the reverse. The result is a fluffy (rather than flaky) biscuit, ready to be split and spread with flavorful honey butter.

Fluffy Cathead Biscuits with Honey Butter image

Steps:

  • For the biscuits:
  • Arrange rack in middle of oven; preheat to 400°F. Whisk buttermilk powder, baking powder, salt, and sugar in a large bowl until evenly distributed and no lumps remain. Add 2 cups water and whisk to combine. Add lard and butter.
  • Add 2 cups flour and mix with a fork until mixture resembles porridge. Using fork, press fats against side of bowl to cut into smaller, irregular, flattened pieces.
  • Fold in remaining 1 1/2-2 cups flour by the half cup with fork until a wet dough forms. Turn out dough onto a well-floured surface. Dust top of dough with more flour. Gently fold dough into itself until it feels like a pillow and is no longer sticky. Using a floured bench scraper or butter knife, divide dough into 12 equal pieces.
  • Working with 1 piece at a time, dip cut sides in flour and gently roll into a ball with your hands. Nestle each ball side by side in a large cast-iron skillet or on a rimmed baking sheet. Bake biscuits until lightly browned, 25-30 minutes. Brush with melted butter, if desired. Serve with honey butter.
  • For the honey butter:
  • Combine honey, butter, and salt in a medium bowl. Mash with fork until just combined but not emulsified.

For the biscuits:
1/2 cup buttermilk powder
3 tablespoons baking powder
1 1/2 teaspoons kosher salt
Pinch of sugar
6 tablespoons lard or bacon fat, cut into pieces and slightly softened
6 tablespoons unsalted butter, cut into pieces and slightly softened, plus more, melted, if desired
3 1/2-4 cups all-purpose flour, divided, plus more
For the honey butter:
1/2 cup flavorful honey (such as buckwheat)
1/4 cup unsalted butter, slightly softened
1/2 teaspoon sea salt or kosher salt

FLOUNDER WITH BROWN BUTTER, LEMON AND TARRAGON

The flatfish family is comprised of numerous popular fish, including sole, halibut and flounder. But all the various boneless fillets are relatively interchangeable and can be prepared in more or less the same way, adjusting cooking time according to size. These pan-cooked fillets are quick, simple and elegant.

Flounder With Brown Butter, Lemon and Tarragon image

Steps:

  • Put flour in a low bowl or pie plate and stir in a generous amount of salt and pepper and a pinch of cayenne.
  • Place a large cast-iron skillet over medium-high heat. Add olive oil and tilt pan to coat bottom.
  • Season the fillets lightly with salt and pepper. Dip each fillet quickly into flour mixture, shaking off excess flour.
  • Lay fillets in skillet in one layer. Cook for about 2 minutes per side, until golden. Transfer cooked fish to a warm platter.
  • Leave the heat at medium-high and add cold butter. Let butter sizzle until foamy and brown, but do not let it burn. Add lemon juice, parsley and chopped tarragon and swirl to incorporate.
  • Spoon butter sauce over fish. Garnish with a few tarragon leaves and serve immediately with lemon wedges.
