FLOWERPOT CAKES
Plant a delicious surprise on your guests with these springtime delights. Our chocolate cakes, baked in small pots, create the illusion of new growth. Each cake is topped with a creamy layer of chocolate frosting, a smattering of crushed cookies and candy "rocks," and a fresh sprig of mint.

- Preheat oven to 350 degrees. Brush inside of each flowerpot with oil, and line bottom with parchment paper round. Brush parchment with oil, and lightly dust with cocoa.
- Sift cocoa, flour, sugar, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with the paddle attachment. Add egg and yolk, 3/4 cup warm water, buttermilk, oil, and vanilla; mix on low speed until smooth, about 1 minute.
- Divide batter among prepared pots, filling each about two-thirds full. Transfer to a rimmed baking sheet. Bake, rotating sheet about halfway through, until a cake tester inserted into centers comes out clean, 45 to 50 minutes. Let cakes cool completely in the flowerpots on a wire rack.
- Frost cakes with an offset spatula; sprinkle with crushed cookies. Top with candies; "plant" 1 mint sprig in each cake.

- 1. 1 (8 inch) new flower pot (plug hole with wax paper) Artificial flowers Gummy worms 1 pkg. (1 1/4 lb.) Oreo cookies, crushed fine in a blender or crumbled by hand) Cream together the following and set aside: 1/2 stick butter 1 c. powdered sugar Blend until thick: vanilla or chocolate pudding 3 1/2 c. milk 1 (12 oz.) container of Cool Whip Add cream cheese mixture and Cool Whip. Layer cookies and pudding mixture in the flower pot. Top with cookies last. Cookies should look like potting soil on top. Add artificial flowers and gummy worms for decoration and attach the following card and a bow to the pot. CARD: I know I look strange, but dig right in.... The flowers are fake but the dirt is cake. I don't need water or tender loving care, Just eat my dirt 'til my pot is bare.

- If using a flowerpot with a drainage hole, reserve 1 cookie to place over hole to prevent leaking. Place remaining cookies in the bowl of a food processor. Process until mixture resembles dirt. Set aside.
- In a large bowl, combine cream cheese and butter, and stir until creamy. Set aside.
- In another large bowl, whisk together instant-pudding mixes and milk; stir until well blended. Using a rubber spatula, fold pudding mixture into cream-cheese mixture. Fold in whipped cream.
- In a flowerpot or bucket with a 5-quart capacity, alternate layers of cookie "dirt" and pudding mixture, starting and ending with cookie "dirt." Chill at least 4 hours or overnight before serving. Garnish with candy.

- Crush oreos to a fine texture, set aside. Mix the pkg of chocolate pudding with the milk, set aside.
- Soften the cream cheese and mix with the cool whip.
- Place a layer of crushed oreos in the bottom of the thoroughly washed flower pot.
- Layer the pudding mix and cream cheese -cool whip mix ending with the chocolate on top.
- Sprinkle top of pudding with remaining crumbled cookies.
- Put an artificial flower in the middle and serve.
