BLACK-EYED PEAS

This is my favourite beans recipe ever, from a supermarket recipe card of all places. It's absolutely wonderful and seems to work just as well with other types of beans ie pinto or cannellini. As I'm too lazy to soak dried beans overnight, I use canned ones instead and it's still lovely - perhaps it would be even better if I followed the recipe properly and used dried beans, but I really don't think you need to.

Black-Eyed Peas image

Steps:

  • Rinse and soak the black-eye beans in a bowl of water overnight.
  • Place the beans in a pan of water and bring to a boil over a low het for about 30 minutes. Drain the beans thoroughly and set aside.
  • Heat the oil in a pan. Add the onions and fry until golden brown. Add the ginger, garlic, chilli powder, salt, ground coriander and ground cumin and stir-fry the mixture for 3-5 minutes.
  • Add the water to the pan, cover and cook the mixture until all of the water has completely evaporated.
  • Add the boiled black-eye beans, green chillies and coriander leaves to the onions and stir to blend together. Stir-fry the bean mixture for 3-5 minutes.
  • Transfer the black-eye beans to a serving dish and sprinkle over the lemon juice. Serve hot or cold.

150 g black-eyed peas
3 tablespoons vegetable oil
2 medium onions, sliced
1 teaspoon fresh gingerroot, finely chopped
1 teaspoon fresh garlic, crushed
1 teaspoon chili powder
1 1/2 teaspoons salt
1 1/2 teaspoons ground coriander
1 1/2 teaspoons ground cumin
150 ml water
2 green chilies
fresh coriander leaves
1 tablespoon lemon juice

GARDEN FRESH BLACK-EYED PEA SALAD

Yet another Black-eyed pea salad. I like this one because it uses things I can grow in our tough climate. When the pickle worms nail the cukes in early July I just leave 'em out & the rest is still from our garden. I use fresh frozen black-eyed peas until the fresh black eyed peas come in later in the summer. Wear gloves when seeding & mincing Habanero pepper. If using dried black eyed peas be sure to soak in water to cover for 1 hour or overnight before cooking. Allow an hour for the flavors to marry before serving at room temp - better the next day! Garden Fresh Black-Eyed Pea Salad image

Steps:

  • In a medium saucepan, gently boil the peas in the 1 quart water until tender, about 30 minutes. Season with one-half teaspoons salt near the end of the cooking time. Strain and set aside to cool.
  • In a large bowl, mix together the tomato, cucumber, bell pepper, green onions, parsley, lime juice, habanero, remaining one-half teaspoons salt and one-eighth teaspoons pepper, or to taste.
  • Gradually pour in the oil while whisking the mixture together. Gently fold in the cooled black-eyed peas.
  • Cover and allow to sit for 1 hour so that the flavors can develop. Serve in the lettuce leaves.

1/2 lb black-eyed peas
1 quart water
1 teaspoon salt, divided

1 red bell pepper, seeded, diced
1 bunch green onion, chopped

1/4 cup lime juice (add to taste)
1 habanero pepper, seeded, minced
1/8 teaspoon black pepper, freshly ground
2/3 cup olive oil (I like a fruity Spanish first press in this recipe)
8 lettuce leaves

SOUTHERN BLACK-EYED PEAS

I love black-eyed peas! I'd much rather have fresh peas than dried, but I'll take them anyway I can get them. I don't remember where I found this recipe, but I really like it. The original recipe used salt pork, but I use bacon. Give me a bowl of these peas, a dash of Tabasco, a slab of hot-from-the-oven cornbread, some green onions and tomato slices then stand out of the way!

Southern Black-Eyed Peas image

Steps:

  • In a 5 quart Dutch oven, cook bacon until crisp; set aside to drain on paper towels.
  • Cook onion, celery and garlic in bacon drippings until tender; add broth, salt, pepper and peas. Bring to a boil and skim top if necessary.
  • Lower heat to simmer; crumble bacon and add to peas.
  • Adjust seasonings to taste, cover and simmer until peas are tender (30 minutes to 1 hour depending on how tender you like them).
