SEAFOOD BOIL WITH LOBSTERS AND MUSSELS

Steps:
- Make the herb butter: Pulse the butter and herbs in a food processor until well combined. Form into a log on a sheet of parchment paper, wrap and refrigerate until firm, at least 30 minutes.
- Prepare the seafood boil: Combine the salt, coriander seeds, fennel seeds, peppercorns, bay leaves, red pepper flakes, thyme, onions, celery, tomatoes, lemons and garlic in a large deep pot; add 6 quarts water. Cover and bring to a boil; uncover and cook 10 minutes. Add the wine and potatoes and return to a simmer; cook until the potatoes are just tender, about 20 minutes. Add the corn and boil until tender, about 8 more minutes.
- Meanwhile, cut each lobster in half with a chef's knife, starting at the cross mark on the back of the head (the lobster may continue to move for a minute). Remove the green tomalley and roe, if desired.
- Remove the corn and potatoes from the pot using a slotted spoon and transfer to a platter (it's OK if you remove some of the broth ingredients, too); cover with foil to keep warm. Add the lobsters to the pot and cook until the shells turn pink, 3 to 4 minutes. Add the mussels, pushing them down into the broth. Cover and cook, stirring once or twice, until the mussels open, about 5 minutes. Transfer the lobsters and mussels to a platter. (Discard any mussels that do not open.)
- Strain the broth through a fine-mesh sieve into a small saucepan. Slice the herb butter. Pour the broth into bowls; add the vegetables, seafood and some of the herb butter.
OYSTER FRICASSEE

- Preheat oven to 400°. Drain oysters, reserving oyster liquor; set aside. In a large saucepan, heat 1/2 cup butter over medium heat. Add onions and celery; cook and stir until tender, 4-6 minutes. Stir in flour until blended; gradually whisk in cream. Bring to a boil, whisking constantly; cook until thickened, about 2 minutes., Reduce heat; add next 5 ingredients and reserved oyster liquor. Cook and stir until smooth, about 2 minutes. Remove from heat. Stir a small amount of hot liquid into egg yolks; return all to pan, stirring constantly. , Pour half the sauce into a greased 13x9-in. baking dish. Top with half the oysters; sprinkle with half the cracker crumbs. Repeat layers. Melt remaining butter; drizzle over top. , Bake, uncovered, until golden brown, 23-28 minutes. Let stand 10 minutes. Serve with lemon wedges and thyme sprigs.

- Melt the margarine in a saucepan; add the mushrooms, garlic powder, & onion powder.
- Saute 5-6 minutes.
- Whisk the milk and flour in a small bowl, whisking quickly to eliminate any lumps.
- Pour the milk mixture into the mushroom mixture; mix thoroughly, and continue cooking 3-4 minutes.
- Add the lobster, paprika, and salt & pepper to taste.
- Continue cooking 5-10 minutes until lobster is heated through.
- Spread rice or pasta onto a serving platter.
- Spoon lobster and sauce over the top.
- Garnish with parsley & then serve.

PAN-FRIED SEA TROUT, PEAS & CHORIZO FRICASSéE

- First make the dressing. Heat 1 tbsp of the olive oil in a small saucepan. Add the capers and the onion and cook for 3 mins until softened. Splash in the red wine vinegar and bubble down, then remove the pan from the heat. Add the rest of the oil and the tarragon, then leave to infuse.
- For the fricassée, heat the oil in a sauté pan, add the chorizo and fry for 2 mins until it starts to crisp and render out red oil. Throw the potatoes and paprika in the pan and cook for 5 mins, tossing occasionally, until they start to brown on the edges.
- Pour in the chicken stock, turn up the heat and boil the stock for 8-10 mins until it has nearly all evaporated and the potatoes are tender. Stir the peas into the potatoes and cook for 2 mins more until heated through, then set aside.
- Using a sharp knife, score the skin of the trout fillet at close intervals, then season generously with sea salt and black pepper.
- Heat the butter in a non-stick frying pan. When it starts to sizzle, carefully lay the fish in the pan, skin-side down. Gently fry for about 8 mins until the skin is crisp and golden and most of the flesh has changed colour with just the top still raw.
- Carefully turn the fish fillets over, then squeeze over the juice from one half of the lemon. Cook for 1 min more, basting fish with the lemony pan juices. Turn off the heat and leave the fish in the pan. You are now ready to plate up - you can serve the other lemon half on the side if you like.
- Spoon a pile of the fricassée into the centre of each plate. Place another spoonful of the mixture on top to create a small heap. Gently sit the fish fillet on top, skin-side up. Spoon the caper dressing around the outside of the plate and serve.

SQUIRREL FRICASSEE
Here's a nice recipe for a few young squirrels. Older ones seem to be a bit tougher and I usually fix them a little different.

- Wash squirrel thoroughly inside and out in warm water.
- Drain well and cut into serving pieces.
- Never wash after cutting up.
- Combine salt, pepper, and flour.
- Dredge meat in mixture and coat well.
- Heat shortening in a heavy skillet.
- Brown meat slowly on all sides to a rich brown, about 15 minutes.
- Add 1/4 cup of water, cover tightly.
- Reduce heat and simmer gently until tender, approx about 30 minutes.
- Add remaining water as needed.
- Squirrel should be very tender when done.
- Remove squirrel to a hot platter, cover and keep warm.
- Blend leftover seasoned flour into the fat remaining in skillet.
- Add milk gradually and cook until gravy boils and thickens, stirring constantly.
- Serve at once with squirrel.
- Add the minced onion for additional flavor, if desired.
