Involtine di Melanzane con Capelli d'Angelo image

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut off the bottoms and stems of the eggplants. Peel them using a vegetable peeler and slice them into 1/2-inch slices.
  • In a heavy bottomed pan heat some olive oil and fry the eggplant slices for about 4 to 5 minutes (if you prefer a healthier version of the dish, you can grill the eggplants). Place the cooked slices on some paper towels to drain any excess oil.
  • In a large bowl combine the butter, freshly grated Parmesan, and salt, to taste. Add the roughly shredded fresh basil leaves.
  • Place the angel hair pasta or spaghetti into a pan of boiling water, bring back to the boil and cook until al dente. Drain.
  • Add the cooked pasta into the big bowl with the butter mixture and combine.
  • Take a small portion of the pasta and place it on top of an eggplant slice. Roll the eggplant around the pasta and place it in an oven-proof dish. Repeat this process with all the eggplants slices.
  • Pour some pureed tomato sauce, or passata, over the eggplant rolls. Place slices of cacioavallo on the top. Finally cover the dish with more freshly grated Parmesan.
  • Place the dish in oven for around 20 minutes, or until sauce is bubbly.

3 eggplants
2 cups olive oil, to fry the eggplants
2 tablespoons butter
3 tablespoons freshly grated Parmesan
Pinch sea salt and freshly ground black pepper
12 fresh basil leaves, roughly shredded
1/4 pound angel hair pasta, or spaghetti
1 cup tomato sauce, or passata
1 clove garlic
2 tablespoons caciocavallo cheese

Portobello Ripiene Con Pollo image

Steps:

  • For the Base Sauce:
  • In a saute pan, add all ingredients (except the cream) and reduce over medium heat to a syrup consistency. Then add cream and set aside.
  • For the Top Sauce:
  • In a food processor or a blender, puree all ingredients until smooth. Set aside.
  • In a saute pan over medium heat, add olive oil, garlic and chopped mushrooms. Saute until they began to soften. Add sauteed mushrooms, seasoned bread crumbs and a pinch of salt and pepper to food processor. Blend until incorporated, but still granular. Set aside.
  • For assembly:
  • Preheat grill to 350 degrees F.
  • On a pie tin or small sheet pan, place 1 grilled mushroom cap stem side up. Spoon mushroom pesto on top of mushroom cap. Top pesto with a layer of sauteed spinach. Next add grilled chicken strips in a fan like pattern. Then top with fresh mozzarella and the remaining mushroom cap. Add water to pan for moisture and bake in preheated oven for 20 minutes.
  • For plating:
  • Cover the bottom of the serving plate with the Base Sauce. Using a metal spatula, carefully place the baked mushroom onto the plate. Using a squirt bottle or spoon, stripe the Top Sauce over the length of the chicken strips.
  • Garnish with spinach chiffonade, if using, and bell pepper brunoise, if using.

3 ounces red wine

1 (8-ounce) chicken breast, grilled, 3/4 done, cut into 1/2-inch strips

3 ounces fresh mozzarella
1 ounce water
Spinach, thinly sliced or chiffonade, optional
Bell pepper, brunoise or small dice, optional

Steps:

  • Make tomato sauce. Place clarified butter into a frypan and add the carrots, onion and garlic. Allow the vegetables to fry 2 minutes. Add the tomato paste and allow to cook until the tomato paste has deepened in color. Add the tomatoes, sugar and white wine. Season with salt, pepper and basil. Bring to a vigorous boil and allow to cook for 10 minutes. Strain through a fine sieve. Deglaze pan with a little white wine and add this to the strained sauce. Flatten chicken breasts and season with salt and pepper. Coat with Parmesan cheese and then paint with the egg and olive oil mixture. Place into the bread crumbs and coat both sides. Place enough olive oil into a large frypan to coat surface and add the chicken breasts. Cook 3 minutes on each side. Add the mushrooms, season with salt and pepper and add the lemon juice. Pour half the tomato sauce around the chicken and cover the breasts with the cheese slices. Cover the pan and allow the cheese to melt. When the cheese has melted scatter the finely chopped parsley over the chicken. Remove the chicken breasts to a serving dish. Add a little more tomato sauce to the pan, deglaze and then spoon the mushrooms and the sauce around the chicken.
