GRANNY'S FRIED CHICKEN
This is our Granny Paul's recipe for fried chicken, and it's as simple a taste of Southern home cooking as there ever could be. Serve it with collard greens and some mashed potatoes, and before you know it you'll be whistlin' "Dixie." And you don't need to save this meal for Sunday suppers-if you're short on time, just skip the refrigeration and season the chicken right before you fry it to have yourself a down-home after-work treat.

Steps:
- Season the chicken generously with the salt and pepper. Cover the chicken and refrigerate for at least 3 hours and up to 8 hours.
- In a medium bowl, whisk together the eggs and Tabasco sauce. Place the flour in a separate bowl.
- Pour the oil 1/2 inch deep into a 12-inch cast-iron or heavy-bottomed skillet and heat over a medium flame until the oil measures 350° on a candy thermometer.
- Starting with the 4 pieces of dark meat, dredge the chicken in the egg mixture, then coat in the flour, shaking off any excess. Place the pieces in the oil and fry, turning often, for 12 to 15 minutes, or until the juices run clear. Transfer the chicken to a paper-towel-lined plate to drain. Repeat with the 4 pieces of white meat, and fry, turning often, for 10 to 12 minutes, or until the juices run clear. Transfer to a paper-towel-lined plate to drain. Serve immediately.
GRANNY'S SIMPLE WAY FRIED CHICKEN
When it comes to the title "Granny", I say it's got to be good. My Granny was an excellent cook. She made the best fried chicken without alot of nonsense ingredients. I say that it don't get no better than this!

Steps:
- Wash chicken.
- My Granny always cuts the breast halves in half.
- Salt all chicken pieces good on both sides.
- Let sit for 20 minutes on paper towels.
- Put oil in frying pan and heat to medium high.
- Shake chicken in flour.
- Carefully add chicken pieces skin side down first and brown on each side.
- Turn burner down on medium.
- Cook until done. (cooking time varies on different pieces.).
- Drain on paper towels.
FRIED GRANNYS
A staple from my childhood. AH, the good old days! I still make these for my son who loves them. Good for breakfast or for dinner with ham or pork.

- Heat butter and oil on hi until very hot.
- Add apples, cook, stirring for 2 minutes.
- Reduce heat to med, cover and cook, stirring and turning apples over occasionally for 10 minutes.
- Add sugar and cinnamon.
- Stir well.
- Cook, uncovered, until apples are browned and tender.

GRANNY'S FRIED POTATO SLICES
I like this recipe because it is fairly easy to make, is quick to cook and inexpensive to make. I got the recipe from my father's mother when she was alive many years ago and she got it off of a lady she knew during the Great Depression of the 1930's. One tip I would like to make is to always make sure when cooking this recipe to have the cooking oil not only cover the top of the slices but underneath the slices as well in the deepest frying pan you have or deep fryer that you can also use. If you or your family like french fries a lot, then I am sure you will these, they are tasty but I am afraid addictive like french fries and fattening but enjoy them anyway!

Steps:
- You have to wash the potatoes before using them and then either peel them or leave skin on, then slice them across width ways into slices.
- Mix the salt, baking, flour together in a mixing bowl, gradually add the water to it until it is the consistency of batter.
- Preheat enough cooking oil in the either deepest frying pan you have or deep fryer to properly cook the potato slices.
- Dip the potato slices into the batter you have made until coated on both sides and then place in the hot cooking oil and fry until golden brown and cooked. Then serve them.
- You can use whatever you like on them, for example, salt and vinegar, salad dressing, gravy, etc. Number of servings or amount depends on the size of family you have or how much you can eat at one time.

GRANNY'S BUTTERMILK FRIED PORK CHOPS
These are the tender, slow cooked, melt in your mouth pork chops that your southern grandma used to make. I cut the fattening factor by using "Enova" oil. This is comfort food at its best. I like to cut out the bone of my cooked pork chop then put it between two slices of plain soft white bread..mmmm.. heaven! This isn't actually my grandma's recipe--her recipes died with her, but this is pretty darned close!

Steps:
- Sprinkle both sides of pork chops lightly with seasoning salt. I like Garlic & Pepper Seasoning salt, but Lawry's is good, so is Old Bay.
- Place chops into a ziplock bag and pour in the buttermilk. Squeeze air out of the bag before you close it, and mush it around a little to make sure that all chops are coated with the buttermilk. LeT stand in the fridge for several hours.
- In a pie plate, mix together flour, 1/8 tsp black pepper, and 1/2 tsp seasoning salt. more or less to your taste.
- Heat oil in a large heavy frying pan to medium high heat. Oil should reach slightly less than 1/2 inch deep in the pan.
- Dip buttermilk coated chops in flour mixture making sure that it is completely coated. Repeat with all chops.
- When oil is hot, add chops and let cook uncovered for about 2 minutes. Turn down heat to medium low and let cook uncovered until bottoms are browned and red juices start to accumulate over the bones.
- Turn over with tongs, cover pan with a lid, then turn down heat slightly and let cook until browned on the bottoms.
- Transfer to a sheet of crinkled foil. Wrap foil loosely around chops and let rest for about 5 minutes.
