YUCCA FRIES WITH CHAMOY MAYO

At first I thought I'd use umeshiso paste to accompany this, but upon further research, I decided that chamoy would be better suited. This dish really benefits from the desiccating heat of an air fryer or convection oven.

Steps:

  • Add the yucca to an electric pressure cooker/air fryer combo and sprinkle with salt. Pour in 1 cup water. Cover with the lid and bring to high pressure, then cook for 10 minutes. Release the pressure according to the manufacturer's directions and prepare the machine as directed for air-fryer cooking.
  • Spray the yucca with cooking spray. Sprinkle liberally with salt, then top with the air fryer lid and cook at 390 degrees F until the exterior is golden and crisp, about 15 minutes.
  • Meanwhile, combine the mayonnaise, chamoy, lemon zest and black pepper to taste. This is your dipping sauce.
  • Serve the fries with the chamoy mayo.

2 yucca roots, peeled and cut into 24 fat frites
Kosher salt
Nonstick cooking spray, for the yucca
1 cup mayonnaise
1/4 cup chamoy seasoning sauce
1 lemon, zested

Fried Yucca (Cassava Root) With Green Sauce image

Steps:

  • Start making making the Green Sauce. Combine lettuce, mayonnaise, lime juice, cilantro, peppers, garlic, and salt in a blender. Blend until smooth. Put into a serving dish.
  • Next, we fry the yucca. Peel the yucca with a knife and throw away the hard skin. Cut the flesh into 1/2 inch thin strips about 4 inches long. Heat a large iron skillet or nonstick frying pan to medium high heat with about half your oil. I like grape seed oil because it gives a nice crispness to the yucca and it's healthy. Reserve the remaining oil for the 2nd half of your yucca. Organize the yucca in the frying pan into a single layer. fry half the yucca until light golden brown and then flip it over to fry on the other side. Remove when it's golden brown on both sides and place onto a paper towel to drain. Cook the 2nd batch the same way.
  • Serve the yucca on a plate, and give each person a small bowl or cup of the green sauce for them to dip their yucca into.

CRISPY YUCA FRIES

Thanks to their superior fiber content and lower glycemic index, these crispy yuca fries are often presented as a healthier alternative to fried potatoes, but you might find the roles reversed. They really are that good and do a great job of bridging the gap between regular fried potatoes and sweet potato fries. Serve with ketchup or any kind of aioli.

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the yucca and cook over medium-low heat until tender, about 15 minutes. Drain and let sit until the wedges are no longer steaming. Discard any stringy pieces.
  • Meanwhile, combine the cilantro, turmeric, cumin and 1 teaspoon salt in a medium bowl.
  • Put the oil in a large Dutch oven or heavy-bottomed pot. Heat over medium-high heat until a deep-fry thermometer inserted in the oil reaches 400 degrees F.
  • Working in batches (don't crowd the pot), fry the yucca, flipping midway, until golden brown, 5 to 6 minutes. Remove with a slotted spoon; add to the bowl with the cilantro mixture and toss. (You can also drain the fries on paper towels and sprinkle with the cilantro mixture.)
  • Sprinkle the fries with lime juice and serve.

Kosher salt
3 medium yucca (about 2 pounds), peeled and cut into 2-by-1-inch wedges
1/3 cup chopped fresh cilantro leaves
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
4 cups vegetable oil
1 lime, halved

  • Fried Yuca With Mojo. This recipe is almost the same as the one above. The primary difference is that instead of boiling the yuca, you’ll fry it. Want to save this recipe?
  • Yuca Fritters. Yuca fritters are similar to empanadas, but with a very different texture. These are fluffy with just a hint of a crunch. (Think of them as the dough on a corndog, only with a milder flavor.)

  • Yuca Waffles. Yuca waffles aren’t like the Eggos you pop in your toaster in the mornings. These are crunchy, cheesy, and savory to the max. You’ll make them with cheese, yuca flour, salt, butter, eggs, and milk.
