This is a great light dessert. Perfect for summer but great any time. It always gets raves from my company.

Frozen Lime Mousse Pie image

Steps:

  • Mix lime juice and sugar in a saucepan.
  • Sprinkle gelatin over and let stand 1 minutes.
  • Heat, stirring for 3 minutes.
  • Whisk in condensed milk, food coloring, and lime rind.
  • Cover and refrigerate for 15 minutes or til slightly thickened.
  • Whip the cream and fold into lime mixture.
  • Pour into crust.
  • Freeze 6 hours or until firm.
  • I garnish with additional whipped cream.

Steps:

  • Put the sweetened condensed milk, strawberries, sugar and lime juice in a blender. Blend until smooth and well mixed. Transfer to a bowl. Using a rubber spatula, fold in the lime zest and thawed frozen whipped topping until thoroughly combined.
  • Scoop into 6 pretty glasses and add a vanilla wafer to each serving.

  • Combine first five ingredients; mix well. If desired, add green food coloring; fold in thawed whipped topping. , For pretzel topping, combine pretzels, butter and sugar. Steps:

  • Whisk together zest, juice, sugar, salt, and eggs in a small heavy saucepan. Add butter and cook over medium-low heat, whisking frequently, until thick enough to hold marks of whisk, about 5 minutes. Force through a fine-mesh sieve into a bowl, then quick-chill in an ice bath, stirring occasionally, about 5 minutes.
  • Beat cream until it holds stiff peaks, then fold into custard gently but thoroughly. Spoon into glasses and chill at least 2 hours and up to 12.

Steps:

  • Combine sugar and 3/4 cup water in heavy small saucepan. Scrape in seeds from vanilla bean; add bean. Bring mixture to simmer over medium heat, stirring until sugar dissolves. Simmer until syrup thickens and is reduced to 1 1/4 cups, about 8 minutes. Cool to room temperature. Discard vanilla bean. Transfer 1/2 cup syrup to small bowl. Whisk in 1 tablespoon lime juice. Cover lime-vanilla syrup and chill.
  • Mix gelatin and remaining 7 tablespoons lime juice in small bowl. Let stand until gelatin softens, about 10 minutes. Add to syrup in saucepan. Stir over low heat just until gelatin dissolves, about 5 minutes (do not boil).
  • Using electric mixer, beat eggs in large stainless steel bowl at high speed until mixture falls in heavy ribbon when beaters are lifted, about 6 minutes. Gradually beat in warm lime syrup. Place bowl over saucepan of simmering water (do not allow bottom of bowl to touch water); beat until thermometer registers 140°F for 3 minutes, about 5 minutes total. Place bowl over larger bowl of ice water; beat syrup mixture until cold, about 3 minutes.
  • Beat whipping cream in medium bowl until peaks form. Fold into syrup mixture in 2 additions. Fold in lime peel. Cover mousse and refrigerate until set, at least 6 hours and up to 1 day.
  • Using 2 large soup spoons, form mousse into 12 egg-shaped "dumplings," placing 2 on each of 6 plates. Spoon lime-vanilla syrup over mousse and serve.

Steps:

  • Put two-thirds of the lemon curd into a large bowl with the zest and cream, then beat with an electric whisk until it just holds its shape. Dribble over the rest of the lemon curd and divide between 6 small glass pots or glasses, marbling the curd through as you go. Sit the pots on a small tray, cover the whole lot with cling film and freeze for 30-40 minutes.
  • Put the biscuits in a strong plastic bag and bash with the end of a rolling pin to crumbs. When you're ready for pudding, remove the pots from the freezer (they should be ice cold but still soft and creamy), top with crumbs and serve.

Steps:

  • Prepare ice-water bath in large bowl. Juice 1 lemon; reserve juice. Juice additional lemons to yield 1 cup. Make lemon curd: Place 1 cup lemon juice, sugar, egg yolks, whole eggs, and butter in saucepan; whisk to combine. Cook over medium heat, whisking constantly until it begins to boil, about 7 minutes.
  • Strain curd through a fine-mesh strainer into a bowl set in the ice bath. Stir periodically until cool; remove from ice bath. Place plastic wrap directly on surface of curd to prevent a skin from forming; refrigerate for at least 1 hour or up to 3 days.
  • Place 1 1/2 cups chilled heavy cream in large mixing bowl; whisk until soft peaks form. Reserve 1/2 cup lemon curd for sauce; add remaining lemon curd to whipped cream. Fold gently until well combined.
  • Place an 8-inch nonstick springform pan on baking sheet. Transfer mousse to springform pan. Place in freezer on sheet until firm, at least 4 hours.
  • Drain candied lemon zest; reserve syrup. Make the lemon sauce: Whisk 1/3 cup syrup, reserved 1/2 cup lemon curd, and reserved juice of 1 lemon in a small bowl. Remove frozen mousse from freezer and let warm 4 to 5 minutes at room temperature. Meanwhile, whisk creme fraiche and remaining 2 tablespoons cream in medium bowl until soft peaks form. Remove sides of springform pan. Slice mousse and place on plates. Spoon lemon sauce around mousse; top with creme fraiche. Garnish with candied zest, and serve.
