FRUIT AND NUT GRANOLA BARS
Adapted from lots of other recipes, this healthy version is our favorite. Easily made in one saucepan, and makes a quick breakfast option! The butter is optional, but we like them much better with it included...

Steps:
- Preheat the oven to 350 degrees.
- Grease an 8x8 glass pan.
- Place nuts and oats on a baking sheet, and bake for about 12 minutes or until lightly toasted.
- While oats and nuts are toasting, place in a saucepan over medium heat the honey, brown sugar, butter, vanilla, cinnamon and salt.
- Stir until the mixture bubbles, and keep it boiling and stirring for about 2 minutes.
- When oats and nuts come out of the oven, turn it down to 325.
- Take the pan off the heat, and when the oats are finished, pour them right into the saucepan and mix to combine honey mixture evenly.
- Stir in the chopped dried fruit.
- Press mixture into the glass pan with the back of a spoon - it will be pretty sticky.
- Bake at 325 for 20 minutes, and let cool completely before cutting.
- Wrapped in saran wrap, these will keep for at least a couple of weeks!

- Heat oven to 160C/fan 140C/gas 3. Heat the oil, honey and maple syrup together in a pan. Mix the oats, almonds, pine nuts, puffed rice and sesame seeds in a large mixing bowl. Pour over the honey mix, stir well to coat, then tip onto a large baking tray. Bake for 15 mins until everything is golden and crisp.
- Take the tray from the oven, leave to cool, then break up any big clumps. Mix together with the dried fruit and coconut shavings. Serve with Greek yogurt and fresh raspberries. The rest of the granola can be stored in a sealed jar and enjoyed over the next 2 weeks.

MAPLE OATMEAL NUT GRANOLA BARS
Making healthy snacks from home is fast, simple, and healthier than other options like store bought. These granola bars are a great way to ensure your snack times are filled with long lasting energy and nutrient rich ingredients! Making them at home allows you to add whatever ingredients you like most (types of seeds and nuts and dried fruits). It also lets you use fresh and real ingredients and natural sweeteners like honey, maple syrup, and coconut oil! You can make a whole bunch of granola bars by packing this mixture into a sheet pan and cutting it into whatever size you like! For a treat: add some chocolate chips or drizzle it on top of them!

- On a sheet pan lined with parchment paper, toast the oats for 15 minutes on 350.
- While the oats are baking, heat the coconut oil, cinnamon, vanilla, honey, maple syrup, and brown sugar in a saucepan until it comes to a boil and stir it until it's well mixed.
- Place all the seeds and fruits, and toasted oats in a large bowl and pour the syrup mixture over it. Mix everything up until it's all evenly covered with the syrup.
- Then pack it down (firmly) to desired thickness on a sheet pan covered with parchment paper (same one you used to toast the granola). Bake on 350 for 20 minutes Remove from the oven and cut desired size bars before it cools and hardens. Then place in the refrigerator for at least an hour to allow it to set properly!
GRANOLA BARS WITH DRIED FRUIT AND SEEDS
A combination of nut butter, dried fruit, and lots of seeds makes these chewy homemade granola bars downright irresistible. For a crispier bar, toast them in the oven after baking.

- Preheat oven to 325°F. Lightly coat a 13x9" pan with nonstick spray and line with parchment paper, leaving an overhang on both long sides; spray parchment.
- Pulse 3/4 cup fruit and 1/2 cup hot water in a food processor until smooth and incorporated, 3-4 minutes. Add honey, almond butter, cinnamon, salt, and vanilla and pulse until combined, about 15 seconds. Add 1/2 cup oats and pulse until well combined, 30-45 seconds. Add pumpkin seeds, sesame seeds, sunflower seeds, coconut, and remaining 1 cup oats and 1/2 cup fruit. Pulse until just combined, about 15 seconds.
- Transfer mixture to prepared pan, pressing down until completely even. Bake granola until darkened, firm around the edges, and the center gives just slightly when pressed, about 35 minutes. Transfer pan to a wire rack and let cool in pan. Remove granola using parchment overhang, then cut into 20 bars with a serrated knife.

- Granola can be made 5 days ahead. Keep tightly wrapped at room temperature.
STARBUCKS CHEWY FRUIT AND NUT BARS
In fall 2008, Starbucks added several "healthy" breakfast items to their bakery case. My husband commented to me, "Look, they have a granola bar that looks exactly like the ones you make!" I checked their list of ingredients and then made modifications to my Recipe #236509 #236509, so that they are as close to the Starbucks version as possible. Take them to breakfast meetings at work, when you need something MORE than a donut, muffin or bagel.

- Ingredient note: look in your health food aisle for a healthy alternative to Rice Krispies. The brand I found is made by Enviro-Kidz and uses BROWN rice.
- Prepare 9x13 pan with non-stick spray (or line with parchment paper).
- In a large mixing bowl, toss all dry ingredients. Feel free to substitute your preferred nut or dried fruit.
- In a saucepan, combine brown sugar and corn syrup. Bring to a boil and allow to boil one minute. (Note: boiling the sugars is what helps the bars become firm and not sticky, so this step is important).
- After boiling, turn off heat; add vanilla and peanut butter. QUICKLY pour this hot mixture over the dry ingredients and toss to combine.
- Pour warm mixture into prepared pan. Wet your fingers and press the mixture down into the pan to compress the bars so they will slice evenly.
- When cool, use a sharp knife to cut into 18 bars (1 long lengthwise cut and 9 cuts across). Enjoy with a hot cup of Starbucks coffee for an authentic experience!
- Note: Starbucks does not list corn syrup in their ingredients, but the sweetener in their list is not readily available. I tried using Maple Syrup, but the bars were very crumbly and would not stay together in bars. Therefore, I found that Corn Syrup is the best ingredient that is readily available.

- In a large bowl, combine oats, sugar, oat flour, salt and cinnamon; mix well. Stir in apricots, cherries, coconut, pecans and sunflower kernels; set aside., In another bowl, whisk together honey, butter, corn syrup, vanilla and water. Add the honey mixture to the fruit mixture; mix until crumbly. Pat into a lightly greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown on the edges. Cool in pan for 5 minutes., While still warm, cut into bars. Remove bars to a wire rack to cook completely. Wrap bars individually in plastic wrap or store in an airtight container with parchment paper separating layers.

I had to develop something that 1. I liked and 2. didn't contain any peanuts or grape or palm products in it for allergy reasons. Most commercial bars have one or more of the above.

- Combine in Mixing bowl the oats, flour, baking soda and brown sugar.
- Cut in margarine until it looks like coarse crumbs.
- Reserving 1/4 cup of mixture for top, press remainder of mixture firmly and evenly into bottom of an ungreased 9X9 pan.
- Spread pureed fruit onto top of oatmeal mixture.
- Sprinkle reserved 1/4 cup of oatmeal mixture onto top, following it with a sprinkling of all of the nuts.
- Press mixture very lightly to make sure all of the nuts are'committed' but not so hard that the fruit all squishes to the top.
- Bake at 350 degrees fahrenheit for approximately 30 minutes or until top is golden.
- Cool in the pan.
- Cut into bars.
- Makes 20-25 bars.

- In a large bowl, combine the oats, milk powder, fruit, walnuts, wheat germ and cinnamon. , In a small saucepan over medium heat, bring brown sugar and water to a boil. Remove from the heat; stir in oil and vanilla until mixed. Pour over oat mixture and toss to coat. Pour into a 15x10x1-in. baking pan. , Bake at 275° for 35-45 minutes. Stir in raisins. FRUIT AND NUT GRANOLA BARS
I really wanted to come up with my own granola bar recipe, so I got some ideas from other recipes and came up with my own. I don't like super sweet granola bars, so these are not particularly sweet, but they can be made sweeter with more sugar, or different dried fruits! If you don't have walnuts, sunflower seeds, cranberries, or raisins, any sort of nuts or dried fruits will work. Experiment! These bars are delicious! They are a little crisp on the outside, and chewy on the inside, and just a little sweet and a little tart. They're certainly healthier (and cheaper) than most store-bought granola bars!

- Preheat oven to 350*F. Line a 9x13" baking pan with parchment paper.
- Mix dry ingredients in a large bowl (oats, flour, cereal, walnuts, sunflower seeds, and raisins). By "cereal", I mean the kind of cereal you eat cold with milk (or soy milk, etc.). Any kind will work!
- In a separate bowl, mix egg whites, eggs, and vegetable oil together. Add maple syrup and honey. If you don't have/don't want to use maple syrup and honey (or have another sweetener you want to use), just use 1/4 cup of that sweetener.
- Add bananas and boiled cranberries to the bowl of wet ingredients and mix well.
- Add wet ingredients to dry ingredients and mix thoroughly.
- Stir in brown sugar, cinnamon, and vanilla extract. Depending on how sweet you want the bars to be, you may want adjust the amount of brown sugar. 1/2 cup of brown sugar does not make the bars particularly sweet because of the boiled cranberries, so you might want to add more if you like very sweet bars.
- Put granola bar mixture into lined 9x13" pan, and press firmly. Pack this very tightly, as this will help them hold together!
- Place pan in the oven and bake for 25-35 minutes, or until golden brown.
- Remove pan from oven and let cool completely (it could take up to an hour).
- Once the pan has cooled, lift the granola bars out of the pan by grabbing the parchment paper. Place it on a cutting board/cutting surface.
- Cut the bars into whatever size you like, and enjoy!

- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a large baking sheet.
- Pour the oats into a large bowl. Add almonds, cinnamon, cocoa powder, salt, brown sugar, and dried fruit into the oats respectively, stirring each into the mixture before adding the next.
- Mix maple syrup and vanilla extract together in a small bowl. With a rubber spatula, add the maple syrup-vanilla mixture to your dry ingredients. Fold the two together until mixed and all dry ingredients are well coated.
- Bake in preheated oven for about 20 minutes, stir, and continue baking until golden brown, about 25 minutes more. Set aside to cool slightly, about 20 minutes.
- Gently fold chocolate chips into the granola mixture, allowing the chocolate to coat the granola as it melts slightly. Cool completely before storing.

- Line 2 trays with parchment. Onto one tray spread the oats and on the tray spread the nuts and seeds. Toast the oats in the oven for 20 mins and the nuts and seeds for 10 mins, both at 160 degrees C.
- Once toasted transfer the oats, nuts, and seeds to a bowl and let cool for 10 mins. To this bowl add the chopped dates, chocolate chips, chopped glazed cherries, sugar, cinnamon powder, and salt. Toss really well.
- Place a pan over medium heat and add the peanut butter. Stir constantly until the peanut butter has melted.
- In another bowl, add all the wet ingredients: Melted peanut butter, honey, unflavored oil and orange juice. Whisk this mixture and combine it in the dry ingredients bowl. Mix really well at this stage. The mixture should feel moist once the wet ingredients have been added.
