Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash, face up, in a shallow baking dish. In each half place 2 tablespoons butter, 2 tablespoons brown sugar, 1 cup stuffing mix, 3/4 cup chicken broth, salt, pepper, garlic powder and onion powder. Wrap each half tightly with aluminum foil.
  • Bake in preheated oven for 60 minutes, or until squash is very tender.

  • Cut squash in half; discard seeds. Place squash cut side down in an ungreased 13-in. x 9-in. baking dish. Add 1 in. of hot water to the pan. Bake, uncovered, at 350° for 30 minutes. , Drain water from pan; turn squash cut side up. Sprinkle with salt. Combine the remaining ingredients; spoon into squash. Steps:

  • Cut squash in half and scoop out seeds and strings.
  • Lightly grease baking sheet. Place squash on sheet, cut side down and back at 350 for 40 - 50 minutes, until soft but not mushy. Remove from heat and place, cut site up, on sheet.
  • Saute onion, celery and garlic in olive oil until translucent.
  • Add all other filling ingredients and mix until blended. Use a large spoon to fill squash halves.
  • Cover squash with aluminum foil and bake at 375 for 20 - 30 minutes until all ingredients are well cooked.

Cheesy Stuffed Acorn Squash image

Steps:

  • Heat oven to 400°F.
  • Cut squash in half and remove the seeds.
  • Rub the cut flesh with salt and place flesh side down in a baking dish and bake for about 35 minutes.
  • While the squash is baking, sauté onion in butter until clear and add chopped broccoli florets, mushrooms and celery.
  • Sauté about 4 minutes.
  • Stir in walnuts and fresh basil, then sprinkle with brown sugar and soy sauce, adjust seasoning to taste. Toss to mix well.
  • Check baking squash with a fork to see if it glides through the flesh.
  • Stuff with vegetable mixture, top with equal amounts of grated cheese and return to oven for about 5 minutes.
  • NOTES : Baked acorn squash halves stuffed with sautéed broccoli, cheese and walnuts.

  • Cut each squash in half; discard seeds.
  • Place cut side down in a 3 quart rectangular baking pan.
  • Bake in preheated 350 F oven 50-55 minutes or until tender.
  • Saute beef, onion and celery in a large frypan until meat is browned; drain off any fat. Blend in flour, salt and sage. Stir in milk.
  • Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens.

Steps:

  • Preheat oven to 375 degrees.
  • Coat a baking sheet with nonstick cooking spray.
  • Prepare rice according to package directions, and set aside.
  • Arrange the squash halves, cut side down, on the prepared baking sheet.
  • Bake 40 minutes, or until tender.
  • Reduce oven temperature to 350 degrees.
  • Scoop out the squash pulp, carefully leaving a 1/4 inch shell.
  • Place pulp in a small bowl.
  • In a skillet, heat the margarine over medium heat.
  • Add the onion and cook, stirring, until tender (3 to 5 minutes).
  • Stir in the cooked rice, squash pulp, lemon juice, and sage, mixing well and breaking up the squash pulp into smaller pieces.
