- Place 20 cookies on a flat surface, solid chocolate side down. With frosting attach a chocolate-covered cherry to the top of each base cookie. Position another cookie perpendicular to each base cookie; attach with frosting. , With a dab of frosting, attach one piece of candy corn to the front of each cherry for the head. Let stand until set.

- In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and sugar together on medium speed for 2 minutes until fluffy. Add in the egg, vanilla, salt, and baking powder and continue mixing for 1 minute until combined, scraping the sides of the bowl as necessary.
- Divide the dough in half and roll out on a lightly floured counter to 1/3- inch thick. Using a 3- inch round cutter, cut out the dough. Re-roll the scraps, so all the dough is used. Using a smaller, round cutter, or the back of a large piping tip, cut out the center of each circle.

- If you're using regular butter, start by clarifying it. Melt butter in a small saucepan (don't stir). Remove saucepan from the heat and let butter sit for about 5 minutes before skimming off the foam on top. Then, pour 1/2 cup of the yellow liquid into a separate bowl, making sure to leave the remaining milk solids at the bottom of the pan.
- In the bowl of a stand mixer or in a large bowl with a hand mixer, combine flour, baking soda, and salt. Mix in corn syrup, 1/2 cup clarified butter, and vanilla just until dough comes together.
- Remove dough from bowl, form into a flat disk, and wrap with plastic wrap. I like to flatten my dough as much as I can in the plastic wrap so it makes it easier to roll. Chill in fridge for about 20 minutes.

Add the granulated sugar and beat on medium-high speed until creamed, about 2 minutes. Add the egg and vanilla extract, and beat on high speed until combined, about 1 minute. Scrape down the sides and up the bottom of the bowl and beat again as needed to combine. Add the dry ingredients to the wet ingredients and mix on low until combined. If the dough seems too soft, you can add 1 Tablespoon flour until to make it a better consistency for rolling.
- Divide the dough into 2 equal portions. Roll each portion out onto a piece of parchment paper or a lightly floured silicone baking mat (I prefer a nonstick silicone mat) to about 1/4 inch thickness. The rolled-out dough can be any shape, as long as it is evenly 1/4 inch thick.
- Stack the 2 slabs of dough, with a piece of parchment paper between them, on a baking sheet and refrigerate for at least 1-2 hours (and up to 2 days). If chilling for more than 2 hours, cover the top slab of dough with a single piece of parchment paper.
