GARDEN MINT JELLY WITH A HINT OF GARLIC

My mint has gone crazy this year so am trying to save some for the winter months, this was a mixture of several recipes plus a few bits of my own and it is DELICIOUS, even DH who hardly ever comments asked me to make more! I put only a hint of chilli in but feel free to add more if that is to your taste. This would be great with a hot curry I think. This Jelly will be a very dark green colour, just from the mint.

Garden Mint Jelly With a Hint of Garlic image

Steps:

  • wash mint thoroughly and divide into 2.
  • take the leaves from one bunch, squeeze out the surplus water and chop finely.
  • Put vinegar and sugar into a saucepan with the second bunch of mint and stir over a low heat until the sugar has dissolved.
  • Bring to the boil for 1 minute.
  • Strain syrup through a muslin and return to the saucepan.
  • Stir in the certo, bring to the boil and boil for 2 minutes.
  • Add the chopped mint, garlic and chilli.
  • Allow to cool slightly to prevent the mint from floating.
  • Skim, pot and cover in the usual way.

MINT JELLY

Found this recipe at recipegoldmine while looking for a mint jelly that does not require apples or apple juice. Made this up and my DH who so loves mint jelly with his lamb (I don't) loves this. This is an easy recipe, and I will never have to run to the Market to buy Mint Jelly again when we have lamb. Yipee!!!

Steps:

  • Crush mint leaves (I did a rough chop). Add water. Bring to a boil.
  • Remove from heat, cover and let stand 10 minutes. Strain and measure 3 cups of mint infusion.
  • Add food coloring and lemon juice. Add Sure-Jell, dissolve and bring to a rapid boil.
  • Add sugar. Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more.
  • Pour into sterilized jelly glasses and seal. I processed in the steam canner for 10 minutes to insure a good seal.

Steps:

  • Rinse off the mint leaves, and place them into a large saucepan. Crush with a potato masher or the bottom of a jar or glass. Add water, and bring the mint to a boil. Remove from heat, cover, and let stand for 10 minutes. Strain, and measure out 1 2/3 cups of the mint.
  • Place 1 2/3 cups mint into a saucepan. Stir in the lemon juice and food coloring. Mix in the sugar, and place the pan over high heat. Bring to a boil, stirring constantly. Once the mixture is boiling, stir in the pectin. Boil the mixture for a full minute while stirring constantly. Remove from heat, and skim foam off the top using a large metal spoon. Transfer the mixture to hot sterile jars, and seal.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

  • Blend mint and the water in the jar of a blender until mint is finely chopped. Transfer to a saucepan; bring to a boil. Remove from heat; let steep 45 minutes. Strain mixture through a fine mesh sieve into bowl; reserve liquid (1 3/4 to 2 cups). Discard mint.

Steps:

  • Put mint leaves in a small bowl and cover with boiling water. Let stand for 1 hour, pressing juice from the leaves every so often. Remove leaves.
  • In a large kettle over medium heat, combine apple juice and mint extract. Bring to a boil, then add sugar. Continue to boil until mixture reaches 221 degrees on a candy thermometer or falls in sheets from a spoon, 20 to 30 minutes. Stir occasionally.
  • Remove from heat and discard mint leaves, if added. Add a few drops of green food coloring, if desired. Skim off and discard any foam. Carefully ladle jelly into hot, sterilized jars, leaving 1/4-inch head space. Wipe excess jelly from inside and outside rims, then seal.

I had to hunt to find a jelly that used enough mint to make a dent in my big healthy bush-I found this one by Aussie Jackie French, on the internet. She gave no prep or cooking times, but I found it took about 20 mins to prep, 20 mins to cook the apples and about 45 minutes to get to the jellied stage.

Steps:

  • Don't peel or core the apples. Cut into eighths.
  • Boil them with the water and lemon juice till soft. Strain off the juice. (this took about 20 mins and is included in the prep time).
  • Add 500grams of sugar for every 600mls liquid. I ended up with 1 litre of liquid so used 840g sugar. It tastes good.
  • Add the mint, chillis and sugar, stir till the sugar dissolves, boil till jellied. I began testing mine after about 20 mins, but found it took around 45 minutes I tested by dropping a small amount on a plate and popping it in the freezer for a couple of minutes. I cooked until it had a jellied consistency when I ran my finger through it.
  • Bottle and seal while hot.
  • Note: The mint can be strained out after about ten minutes cooking, but I rather like left in, as long as it is finely chopped.

Steps:

  • Combine garlic& vinegar in a 2 qt.
  • kettle.
  • Simmer mixture gently, uncovered, over medium heat for 15 minutes.
  • Remove pan from heat& pour mixture into a 1 quart glass jar.
  • Cover& let stand at room temperature for 24-36 hours.
  • Pour flavored vinegar through a wire strainer into a bowl, pressing the garlic with the back of a spoon to squeeze out liquid.
  • Discard any residue.
  • Measure the liquid& add vinegar, if needed, to make 1 cup.
  • Measure sugar into a dry bowl.
  • Combine the garlic-vinegar solution& the water in a 5 or 6 quart kettle.
  • Add pectin, stirring well.
  • Over high heat, bring mixture to boil, stirring constantly to avoid scorching.
  • Add sugar,& stir well.
  • Bring mixture to a full, rolling boil.
  • Add butter to reduce foaming.
  • Continue stirring.
  • Boil the mixture hard for exactly 2 minutes.
  • Remove pan from heat& skim off any foam.
  • Add red, yellow or orange food coloring if desired.
  • Pour jelly into prepared glasses.
  • Seal according to directions on recipe folder in pectin package.
